OLD FASHIONED, TRADITIONAL SASKATOON PIE
A scrumptious, easy and traditional Saskatoon pie recipe that my family has been baking for 4 generations.

Steps:
- Gently toss together your Saskatoons, sugar and cornstarch/crushed Tapioca, until the berries are coated.
- Place your bottom crust into the pie plate.
- Pour your berries into the pie plate.
- Add butter on top if desired.
- Cover with your crust.
- Brush your pie crust with the egg then sprinkle the sugar on top.
- Pinch the seams together and mark your pie vents as you like.
- Using the lowest rack of your oven, bake for 15 minutes at 425 degrees, then lower the temperature to 350 degrees and bake for about 50-55 minutes more.
- When your pie edges start to become too brown - and they always will- cover the edges with tinfoil or use a pie crust cover. I have one and they are amazing!
- Continue baking until you see the pie filling bubbling and your pie is beautifully browned all over the top.
- Remove from the oven and cool on a baking rack.

- Preheat oven to 400 degrees F. Place raisins into a 2 quart saucepan with the water and orange juice and cook on medium heat for 5 minutes until raisins are plump. Meanwhile, combine the sugars, cornstarch and spices in a small bowl and stir well. Gradually add this to the raisin mixture and cook and stir for about 5 minutes until mixture thickens and bubbles. Off the heat add nuts, butter and vinegar and stir to combine. Spoon mixture into the bottom piecrust, top with the second crust and crimp tightly. Cut slits in the top crust for steam to escape and brush lightly with beaten egg. Bake 25 30 minutes until golden brown and crust is completely baked. Cool on wire rack until completely cool before slicing to serve.
OLD FASHIONED CREAM PIE
Beat the heck out of the ingredients and watch baking time. One hour usually does it. I don't know where I got this recipe, but I've had it a long time. I think it's great!

- Preheat oven to 350 degrees F (175 degrees C).
- Place sugar, egg, half and half, flour, whipping cream, and butter or margarine in blender. Beat until thoroughly combined. Pour into pie shell and sprinkle with cinnamon.
- Bake in preheated oven for 60 to 70 minutes, until set in center.

OLD FASHIONED FAMILY PIE
I love pies, and I especially love meat pies with mushrooms in them ! , this one is simple to make and very tasty. Great on a cold winter night, by itself or served with chips, mashed potatoes or mushy peas.... hope you like it

Steps:
- Cook beef and onion in a large sauceppan until the meat is browned and the onion softened.
- Add the whole tin of mushrooms juice and all, stir well.
- Mix gravy powder and the flour into a smooth paste with the water.
- Add to meat and stir until its thickened (use your judgement here, if you like a little more gravy add a small bit of water).
- Grease a 20cm pie plate and cover base and sides with puff pastry.
- Spoon in meat filling and press down firmly.
- Cover in pastry, trim edge and press together with a fork to make a decorative edge.
- Pierce with a fork a couple of times or I like to cut a v in the top flipping it over to make a little triangular hole.
- Lightly brush with milk and decorate with excess pastry if desired.
- Cook in a preheated oven at 200 degrees for 25 minutes or until golden brown.
- I have also used fresh mushrooms in this, add them after you brown the meat, you may need to add a little more water if you use fresh mushies, again, use your judgement.
