This born-and-raised Virginia gal couldn't resist sharing a classic, easy side dish recipe for old fashioned Virginia Spoon Bread!

1 cup boiling water*
1 cup cornmeal
2 eggs
1 teaspoon salt
2 teaspoons baking powder
1 cup milk, plus 3 tablespoons, divided
Optional, for serving: extra butter and honey!

Steps:

  • Place a medium baking dish (about 8 inches square) in a cold oven. Preheat oven to 400 degrees F. The dish will warm up while the oven heats.
  • Meanwhile, stir cornmeal into boiling water. Add eggs one at a time, mixing well after each addition.
  • Add salt. Dissolve baking powder in 3 tablespoons of milk. Add the baking powder mixture to the remaining 1 cup of milk. Add milk and baking powder mixture to the cornmeal.
  • Butter the hot baking dish. Transfer mixture to the buttered dish. Bake at 400 degrees F for 30 minutes. Serve spoon bread warm from the oven!

Spoon bread has a long history and has a similar texture to a soufflé. It is served with a spoon, hence its name.

3/4 cup cornmeal (stone or water ground, if possible)
1 teaspoon salt
1 cup boiling water
3 tablespoons melted butter
2 large eggs
1 cup milk
2 teaspoons baking powder

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F. Grease an 8-inch-square baking dish or 1 1/2-quart casserole.
  • Combine the cornmeal and salt in a mixing bowl.
  • Gradually add the boiling water while whisking out any lumps. Add the melted butter and stir to blend. Let the mixture cool for about 5 minutes.
  • Whisk the milk into the cornmeal mixture.
  • In a small bowl, beat the eggs thoroughly.
  • Whisk the beaten eggs into the cornmeal mixture along with the baking powder. Blend well with a whisk or electric mixer.
  • Turn the batter into the prepared baking dish.
  • Bake for about 35 minutes or until set and lightly browned.
  • Serve the spoon bread hot with plenty of butter.

My Virginia aunt's old family recipe, thus the name Dominion. It's similar to cornbread in taste, but is much softer and should be served with a spoon, rather than cut. This is a comfort food for me, bringing back memories of my childhood. Delicious served with seafood!

1 cup cornmeal (I prefer yellow)
2 cups boiling water
2 1/2 teaspoons salt
1/2 teaspoon baking soda
1 1/2 teaspoons baking powder
2 whole eggs
1 cup buttermilk

Steps:

  • Preheat oven to 350°F.
  • Spray 9x9-inch baking dish with non-stick cooking spray.
  • Place cornmeal in pot.
  • Pour boiling water over cornmeal, stirring to moisten.
  • Cook cornmeal over low heat for 5 minutes stirring frequently, to form a "mush".
  • Add salt, baking powder, baking soda, eggs, and buttermilk.
  • Stir to mix well.
  • **When you add baking soda and baking powder, this mixture will foam up, so be sure to use a larger pot than you think you'll need.
  • **Immediately pour batter into prepared 1-1/2 quart casserole casserole.
  • Bake 50-60 minutes or until set in the middle and lightly browned on top.

1 cup cornmeal
1 tablespoon shortening
1 teaspoon salt
1 cup boiling water
2 cups milk
3 eggs
3 teaspoons baking powder

Steps:

  • Mix salt with cornmeal, cut in shortening.
  • Slowly pour boiling water into mixture, stirring as you pour.
  • Beat the eggs with the milk, stir into cornmeal mixture.
  • Add baking powder and blend all ingredients well.
  • Grease a casserole dish generously and pour in the mixture.
  • Bake at 350F for 30 minutes, stirring 2-3 times before the mixture congeals Serve hot from the casserole with a spoon.

1 tablespoon yeast
1/2 cup warm water
1 teaspoon sugar
3/4 cup rolled oats
1 1/2 cups boiling water
3 tablespoons butter
2 tablespoons brown sugar
1/2 cup molasses
1 teaspoon salt
1/4 cup warm water
4 1/2 cups flour

Steps:

  • Put yeast in 1/2 cup warm water to which 1 teaspoons sugar is added. leave 10 minutes.
  • Pour 1 1/2 cups boiling water over oatmeal. Add 3 tablespoons butter, 2 tablespoons brown sugar, 1/2 cup molasses and 1 teaspoons salt. Mix and leave until lukewarm.
  • Add yeast mixture. Put some flour in before yeast and 1/4 cup warm water. Add remainder of flour; mix with a spoon.
  • Spoon into cans. Let rise 1 1/2 hours or until double in bulk.
  • Bake at 350F for 50-6- minutes.

3/4 c cornmeal (stone ground or water mill)
1 tsp salt
1 c boiling water
3 Tbsp melted butter
2 large eggs
1 c milk ( i prefer canned milk but fresh milk is good too)
2 tsp baking powder

Steps:

  • 1. Preheat the oven to 350° and gather your ingredients.
  • 2. Grease an 8-inch baking dish or 1 1/2-quart casserole or a small cast iron pan.
  • 3. Mix cornmeal and salt in a mixing bowl ( add the baking powder until step 7).
  • 4. Gradually add the boiling water while whisking out the lumps. Add the melted butter and stir to blended. Let the mixture rest for about 5 minutes.
  • 5. Whisk the milk into the cornmeal mix
  • 6. In a small bowl, beat the eggs thoroughly.
  • 7. Whisk the beaten eggs into the cornmeal mixture along with baking powder. Blend well with a whisk or electric mixer. (Preferably a whisk as you dont want to over work the batter)
  • 8. Turn the batter into the prepared baking dish.
  • 9. Bake for about 35 minutes, or until set and lightly browned.
  • 10. Once out of the oven top with butter and honey while hot. Serve hot with lots of butter. Enjoy!!!!

  • Remove from heat and add balance of milk and well-beaten eggs.
  • Stir in salt, baking powder and melted butter .
