1 lb.cod fillets
1/4 cup butter, melted
2 tablespoons lemon juice
1/4 cup flour
1/2 teaspoon salt
1/8 teaspoon white pepper
paprika

Steps:

  • Preheat oven to 350 F.
  • Cut cod into serving size pieces.
  • Mix butter and lemon juice.
  • In a separate bowl mix flour, salt and white pepper.
  • Dip cod in butter/lemon then roll in flour mixture.
  • Place in unreleased 8 x 8" pan. Pour whats left of the butter mixture on top.Sprinkle with paprika.
  • Bake uncovered for 25-30 mn. or until fish flakes easily with a fork.
  • Garnish with lemon slices and fresh chopped parsley.

My Scandinavian mother always referred to cod fish as torsk and my brother and I loved it when she made her baked torsk. I like this recipe because it's easy and I can make it in the summertime without having to turn on the oven. Serve with clarified butter for dipping if you're a real butter junkie.

4 cod fish fillets
1 -2 tablespoon lemon juice (to taste)
2 tablespoons butter
salt (to taste)
paprika (to taste)

Steps:

  • Arrange fillets in a glass baking dish sprayed with cooking spray.
  • Dot with butter.
  • Sprinkle with lemon juice, salt and paprika.
  • Cover dish with plastic wrap.
  • Microwave 6 to 7 minutes or until fish flakes easily.

olive oil
1/3 lb feta cheese
1 pinch oregano
3 -4 garlic cloves
3 ripe tomatoes
1 teaspoon lemon juice
2 cod fish fillets
salt
pepper
lemon wedge

Steps:

  • Preheat oven to 350*F.
  • Grease a baking pan with some olive oil and place the fish fillets in it.
  • In a bowl chop and crush the tomatoes, lemon juice and add a pinch of oregano, 4 tablespoons olive oil, and 3-4 crushed cloves of garlic. Mix everything together well.
  • Pour some of the tomato mixture over each fillet and add some salt and pepper to taste.
  • Crumble some feta cheese over each fillet and bake in oven for 30 to 45 minutes.
  • Check the fish occasionaly to make sure it does not get overcooked and dry up.
  • Serve with lemon wedges. Squeeze them over the fish and enjoy!

1/4 cup all-purpose flour
1/2 teaspoon salt

  • If fish fillets are large, cut into serving pieces.
  • Mix butter and lemon juice.
  • In another bowl, mix flour, salt and white pepper.
  • Dip fish into butter mixture; coat fish with flour mixture.
  • Place fish in ungreased square baking dish, 8x8x2 inches.
  • Pour remaining butter mixture over fish; sprinkle with paprika.
  • Cook uncovered in 350 degree oven until fish flakes easily with fork, 25-30 minutes. Garnish with parsley sprigs and lemon slices if desired.

vegetable oil cooking spray
1 tablespoon parsley, chopped
1/2 tablespoon italian seasoning
1/4 teaspoon salt
1/4 teaspoon pepper, freshly ground
1 lemon, quartered

Steps:

  • Spray a nonstick frypan with veggies cooking spray and heat to medium.
  • Spray veggie cooking spray over both sides of the cod fillets; squeese 2 lemon sections over cod surfaces; sprinkle parsley, Italian seasoning, salt and pepper over both sides of the cod filets.
  • Place cod into medium hot frypan, cook for about 5 minutes, carefully turn and cook a further 5 minutes or until fish flakes easily with a fork.
  • Serve hot with the other 2 lemon sections for garnish.
