You can't go wrong with this Old Country Buffet copycat sweet cornbread recipe. Whether as a snack or a side, this baked dish is a great bite.

1 cup all-purpose flour
1 cup yellow cornmeal
1 cup milk
⅔ cup white sugar
⅓ cup vegetable oil
¼ cup melted unsalted butter
¼ tbsp baking powder
1 tsp salt
1 tsp baking soda
1 egg

Steps:

  • Preheat the oven to 400 degrees F. Grease an 8-inch springform cake tin of choice with cooking spray.
  • In a large mixing bowl, sift together flour, baking powder, salt, and baking soda.
  • Make a well at the center of the bowl and add the rest of the ingredients. Fold until evenly incorporated.
  • Pour batter into the greased cake tin and bake for roughly 30 minutes, or until a toothpick inserted into the center of the cornbread comes out clean.
  • Once baked, allow the cornbread to cool. Portion and serve along with any preferred vegetables or protein dishes.

1 cup flour
3/4 cup sugar
2 tablespoons unsweetened cocoa
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup brown sugar
1/4 cup cocoa
1/2 cup milk
2 tablespoons melted shortening
1 teaspoon shortening
1 teaspoon vanilla
1 3/4 cups hot water

Steps:

  • Combine flour, sugar, cocoa, baking powder, salt, milk, shortening, & vanilla.
  • Blend until smooth.
  • Pour cake mixture into ungreased 9" square pan (use 9x13 if doubled).
  • In small mixing bowl, mix brown sugar, cocoa & water. Pour over batter.
  • Bake for 40-45 minutes at 350 degrees.
