GRILLED PIMENTO CHEESE SANDWICH



Grilled Pimento Cheese Sandwich image

1 1/2 cup shredded best-quality sharp Cheddar
1/2 cup real mayonnaise, plus more for grilling
1 (4-ounce) jar chopped pimentos, drained
Pinch of cayenne pepper
Kosher salt and freshly cracked black pepper
12 slices brioche bread, lightly toasted

Steps:

  • Pulse the cheese, mayo, pimentos and cayenne in the food processor until just combined. Season with salt and pepper. Cover and chill for at least 3 hours.
  • Spread some additional mayo on 1 side of each slice of toasted bread. Arrange 6 slices, mayo-side down, on a clean work surface. Place 2 heaping tablespoons pimento cheese evenly on the 6 slices of bread and top with the remaining 6 slices of bread, mayo-side facing up.
  • In a large nonstick skillet over moderate heat, cook 3 sandwiches until the bread is golden brown and the cheese is starting to melt, about 3 minutes. Turn the sandwiches over and cook until golden brown, about 3 minutes more. Wipe the pan clean and repeat with the remaining 3 sandwiches.
  • What To Toss In: If you like your pimento really spicy, you can always add some chipotle in adobe sauce to give it a smoky flavor. This can also be used as an entertaining dip. Just arrange some baby carrots and cut up some celery sticks around the cheese. People will flock to it.

1 cup shredded monterey jack cheese
1/3 cup mayonnaise
1/2 teaspoon fresh ground black pepper
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon paprika
4 slices sourdough bread (1/2-inch thick)
1 tablespoon butter, melted

Steps:

  • Preheat panini grill to high.
  • In a bowl, combine the pimentos, Cheddar, Monterey Jack, mayonnaise, pepper, salt, garlic powder, and paprika; taste and adjust seasoning, if needed.
  • Brush one side of each bread slice with butter.
  • Place two slices on a work surface, buttered side down, and spread evenly with pimento cheese.
  • Cover with top halves, buttered side up, and press gently to pack.
  • Place sandwiches in grill, close the top plate and cook until golden brown, 3-4 minutes.
  • Serve immediately.

8 ounces cheddar cheese, grated (reduced fat is fine)
1/4 cup mayonnaise
1 (4 ounce) jar diced pimentos, drained
1 teaspoon cumin, ground
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
12 slices sandwich bread, pumpernickel
1 zucchini, med, thinly sliced

Steps:

  • Stir together cheddar, mayo, pimientos, cumin, chili powder, and cayenne in a bowl. Spread cheese mixture on six slices of bread; top with zucchini and remaining bread slices.
  • Spray panini with cooking spray. Coat skillet or grill pan with cooking spray and heat over medium heat. Place panini in pan; weight with smaller-diameter saucepan weighted with 2 cans. Cook 2 minutes. Flip, replace weight, and cook 2 minutes more.

1 tablespoon olive oil
2 ounces Italian dressing
2 slices provolone cheese
4 slices deli ham
8 slices genoa salami
8 slices deli pepperoni
4 slices tomatoes
2 pepperoncini peppers (chopped)

Steps:

  • Cut roll open.
  • Brush outside of roll with olive oil.
  • Brush both sides of inside with italian dressing.
  • Cut cheese in half, add the 4 halves to the bread.
  • Add the remaining ingredients in order listed.
  • Cut in half.
  • Grill in your panini press or George Foreman grill.
  • Enjoy.
