CHOCOLATE CHIPLESS COOKIES

Your favorite chocolate chip cookies, minus the chocolate chips. And trust me, you won't even miss the chocolate.

Number Of Ingredients 10

10 tablespoons unsalted butter ((140 grams))
¼ cup granulated sugar ((50 grams))
¾ cup packed light or dark brown sugar ((160 grams))
2 teaspoons vanilla
1 large egg
1 large egg yolk
1 ¾ cup all-purpose flour ((210 grams))
½ teaspoon baking soda
½ teaspoon salt
Coarse salt (, for sprinkling (optional))

Steps:

  • Preheat oven to 375°F. Line a sheet pan with parchment paper.
  • In a small saucepan set over medium heat, melt the butter. Continue to cook the butter until it turns golden brown, stirring frequently, about 3 minutes. Remove from heat and let cool for a few minutes.
  • Pour browned butter into a large bowl and add the sugar, brown sugar, and vanilla. Stir with a wooden spoon until combined. Add the egg and egg yolk, stirring for 30 seconds after each. Let batter rest for about 5 minutes, then stir vigorously for about 30 second. Batter should lighten in texture and color.
  • In a separate bowl, combine the flour, baking soda, and salt. Add to the cookie batter all at once and stir until no streaks of flour remain.
  • Drop dough by rounded tablespoon onto the prepared sheet pan. Bake until cookies turn golden around the edges but centers aren't completely set, about 9-11 minutes. Let cool 5 minutes on the pan, then transfer to a wire rack to cool completely.

Super easy and delicious NO ROLL Sugar Cookies with a delicious frosting. No rolling pin needed for these - just drop and bake!

1/3 cup shortening
1/3 cup butter
3/4 cup sugar
1 egg
1 tsp vanilla extract
1/4 tsp almond extract
1 tsp baking powder
1/2 tsp salt
1 1/2 cups all-purpose flour (plus 2 tbsp )
1/2 cup butter (softened)
1 tsp vanilla extract
2 tbsp milk
2 cups powdered sugar

Steps:

  • Preheat oven to 350. Line cookie sheet with parchment paper.
  • In bowl or stand mixer cream shortening, butter and sugar until fluffy. Add egg and extracts and mix well.
  • Combine baking powder, salt and flour in a separate bowl. Gradually add to the wet mixture until blended.
  • Using cooking scoop, lightly roll dough ball in hands, place on parchment paper lined baking sheet and press top of cookies half way down.
  • Bake for 10-12 minutes.
  • For frosting, beat butter until fluffy using a hand mixer. Add vanilla and milk. Blend lightly. Add powdered sugar one cup at a time.Texture should be solid but soft. Frost cookies.

Steps:

  • Preheat oven to 375 degrees F.
  • Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
  • Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
