NIF'S AVOCADO AND EGG BREAKFAST WRAP



Nif's Avocado and Egg Breakfast Wrap image

The richness of the avocado makes this dish absolutely delicious. This is the healthy kind of recipe that I like to throw together in the morning when I'm getting ready for work. Buy egg whites in the carton to make it easier and less expensive. It's great for on-the-go as well. Enjoy!

Number Of Ingredients 6

3 eggs or 1 egg and 6 egg white
2 tablespoons low-fat milk
1/4 teaspoon baking powder
salt and pepper
2 (12 inch) soft tortillas
1/2 avocado, pitted, peeled and sliced

Steps:

  • Spray nonstick frying pan and heat over low-medium heat. Meanwhile, mix eggs, milk and baking powder in a bowl and beat very well. Pour into frying pan and stir occasionally until just barely cooked. Salt and pepper to taste.
  • Scoop half the eggs on each burrito. Top with avocado. Fold a couple of inches of bottom of burrito up and then roll.

Enjoy these protein-rich egg wraps filled with mushrooms and tomatoes for a quick, filling and healthy breakfast. It provides iron, folate and fibre.

500g pack closed cup mushrooms
4 tsp rapeseed oil , plus 2 drops
320g cherry tomatoes , halved, or 8 tomatoes, cut into wedges
2 generous handfuls parsley , finely chopped
8 tbsp porridge oats (40g)
10 eggs
4 tsp English mustard powder made up with water

Steps:

  • Thickly slice half the pack of mushrooms. Heat 2 tsp rapeseed oil in a non-stick pan. Add the mushrooms, stir briefly then fry with the lid on the pan for 6-8 mins. Stir in half the tomatoes then cook 1-2 mins more with the lid off until softened.
  • Beat together the eggs really well with the parsley and oats. Heat a drop of oil in a large non-stick frying pan. Pour in a ¼ of the egg mix and fry for 1 min until almost set, flip over as if making a pancake. Tip from the pan, spread with a quarter of the mustard, spoon a ¼ the filling down the centre and roll up. Now make a second wrap using another ¼ of the egg mix and filling. 1/2 cup 2% milk

1/4 teaspoon pepper
1 medium ripe avocado, peeled and cubed
2 tablespoons butter
6 bacon strips, cooked and crumbled

Steps:

  • In a bowl, beat eggs. Add milk, salt and pepper; stir in avocado. In a skillet over medium heat, melt butter. Add egg mixture; cook and stir gently until the eggs are completely set. Sprinkle with bacon.

  • Coat a medium nonstick skillet with cooking spray; heat over medium heat. Ladle 1/3 cup batter into the center of the pan. Immediately tilt and rotate the pan to spread the batter evenly over the bottom. Cook until the underside is golden brown, 1 1/2 to 2 minutes. Using a heatproof silicone or rubber spatula, lift the edge, then quickly grab the pancake with your fingers and flip it over. Cook until the second side is golden brown, about 1 minute more. Slide onto a plate. Repeat with the remaining batter, spraying the pan as needed and stacking pancakes as you go, to make 8 pancakes total.
  • Wipe out the skillet and lightly coat it with cooking spray; heat over medium heat. Whisk the remaining egg, the remaining pinch of salt and pepper in a small bowl. Pour into the pan and cook, gently stirring, until set, 2 to 3 minutes.
  • To assemble a wrap, spread avocado over the bottom third of 1 warm pancake. Top with the egg, pico de gallo (or salsa) and pickled jalapeños to taste (if using); roll up. Save the remaining pancakes for another time.
