A very simple and fast mug cake that is better for you! The recipe is quite forgiving-- I usually eyeball the amounts instead of measuring them out.

3 tablespoons applesauce
3 tablespoons maple syrup (or sugar)
3 tablespoons flour (I use rice flour for gluten free cake)
1/2 teaspoon cinnamon
1/2 teaspoon vanilla

Steps:

Mix all ingredients in a mug.
Microwave on high for 2:22.

This is the original version of this mug cake. It bakes up super moist and makes a very large single serving enough to save half for later...but good luck with that!

Ingredients

1/4 cup flour
1/2 teaspoon cinnamon
3/4 teaspoon baking soda
1 tablespoon sugar
2 tablespoons chopped walnuts or 2 tablespoons pecans
2 tablespoons margarine, softened
1 small egg, beaten
1 teaspoon vanilla 1/3 cup applesauce

Steps:

Preheat oven to 350 degrees and lightly coat mug with cooking spray.
In a small bowl whisk dry ingredients together.
Mix in margarine, egg, and applesauce.
Pour mixture into mug.
Bake 20 to 25 minutes. (Use toothpick test to check that center done.).
