Woonsocket Dynamite a la Jim image

A "spicy" meat sauce for sandwiches or pasta

3 lbs ground beef
3 lbs green bell peppers (diced)
3 lbs yellow onions (diced)
1.5 lbs red bell peppers (diced)
28 oz diced tomatoes (canned)
28 oz tomato sauce (canned)
8 oz tomato paste (canned)
bay leaf
1/2 tsp red pepper flakes
dried oregano & basil (totaling around 1 tbsp)
salt and pepper
hoagie rolls
spaghetti noodles
macaroni noodles
a bunch of shredded cheese
tortilla chips
I don't know (tamales? The possibilities are vast)

Steps:

  • Brown the hamburger then remove from pan, leaving rendered fat.
  • Sauté the onion and bell peppers and garlic in the hamburger fat until soft
  • Add diced tomatoes, tomato sauce, bay leaf, red pepper flakes, and cooked hamburger back to the pot. Simmer for an hour, covered.
  • Add tomato paste, oregano, and basil, simmer for 2 more hours uncovered, stirring occasionally. Season to taste, then chill overnight.
  • Reheat in crock pot and serve with hoagie rolls, maybe some potato chips.

2 lbs Ground beef
1 Really large onion (rough chopped)
2-3 Green bell peppers (rough chopped)
1 Large can of crushed tomatoes
8 ounce can of tomato sauce
Salt & pepper to taste
Hot peppers: I like an assortment since each add a different layer of flavor. Remove seeds and membranes and finely chop.
Hot sauce: A few good shakes definitely contributes to the overall flavor.
Crushed red pepper flakes: A good shake or two also adds a certain "Je ne sais quoi" to the flavor

Steps:

  • Place ground beef in a large pot, break it up and saute until just pink.
  • Add chopped onions and green peppers
  • Add crushed tomatoes and tomato sauce
  • Bring to a simmer and cook on low heat for at least 1 hour.
  • Once peppers and onions begin to soften, start adding seasonings as desired, tasting as you go.
  • Cook it down until thickened enough to spoon into rolls. I usually serve with a slotted spoon to drain out extra liquid.
  • Serve with a shaker of crushed red pepper flakes on the table because even the hard core heat addicts sometimes want just a little more heat.

These are a classic Rhode Island treat. So delicious in a soft sub-roll with a little salt on top. This can also be cooked in a slow cooker.

1 onion, chopped
2 lb ground beef
4 green bell peppers, chopped
1 can(s) (14.5 ounce) diced tomatoes
1 can(s) (8 ounce) tomato sauce
1 can(s) (6 ounce) tomato paste
1 tsp crushed red pepper flakes (optional)

Steps:

  • 1. Heat the oil in a saucepan over medium-high heat; cook the onion in the hot oil until tender, about 5 minutes. Add the ground beef, bell peppers, tomatoes, tomato sauce, tomato paste, and red pepper flakes to the saucepan; stir.
  • 2. Reduce heat to medium-low; simmer until the peppers are soft and the beef is tender, 4 to 6 hours.

2-1/2 pounds ground beef
5 medium green peppers, finely chopped
4 large onions, chopped (6 cups)
1 can (28 ounces) crushed tomatoes in puree
1 can (16 ounces) tomato sauce
1 can (12 ounces) tomato paste
1 cup water
2 tablespoons sugar
2 tablespoons garlic powder
1 tablespoon Italian seasoning
1 tablespoon dried oregano
2-1/4 teaspoons salt
2 teaspoons hot pepper sauce
1-1/2 teaspoons pepper
1/2 teaspoon crushed red pepper flakes, optional
16 hoagie buns or other sandwich rolls, split

Steps:

  • In a Dutch oven, cook beef over medium-high heat 8-10 minutes or until no longer pink, breaking into crumbles; drain., Stir in all remaining ingredients except buns. Bring to a boil. Reduce heat; simmer, uncovered, 1 hour or until desired consistency and flavors are blended, stirring occasionally. Serve on buns.

Another name for these are "Torpedos". These were a staple in our family for a quick meal that serves a lot of people. They are similar to a "Sloppy Joe", but in R.I. it is called a "Dynamite". This recipe is versatile and can be scaled down or up. It freezes well and tastes best if made 1-2 days ahead.

5 lbs ground beef
5 lbs green peppers, diced
5 lbs red peppers, diced
5 lbs yellow onions, diced
5 garlic cloves, crushed
4 (28 ounce) cans tomato sauce
2 bay leaves
1/2 cup chopped fresh parsley
hot red pepper flakes, to taste
salt and black pepper, to taste
italian seasoning, to taste
20 fresh rolls (torpedo, grinder or any roll that will hold this mixture)

Steps:

  • In a very large stockpot over medium-high heat, brown the ground beef, stirring often.
  • Add the chopped green and red peppers, onions, and garlic; mix well.
  • When the vegetables begin to soften, add the tomato sauce, bay leaves, parsley, hot pepper flakes, salt, black pepper, and Italian seasoning.
  • Cover and simmer, stirring occasionally, for 2-3 hours.

NEW ENGLAND BOILED DINNER

2 1/2 to 3 pounds corned beef brisket
3 tablespoons pickling spices, 3 bay leaves and 5 black peppercorns, tied in a cheesecloth bag
2 potatoes, peeled and cut into large chunks
3 carrots, each cut into 4 pieces
1 onion, quartered
2 parsnips, cut into chunks
2 turnips, cut into chunks
1 small cabbage, cut into wedges
1 tablespoon salt
Horseradish cream:
1 cup sour cream
Up to 1 tablespoon prepared horseradish
Salt and freshly ground black pepper
Hot sauce (recommended: Tabasco)

Steps:

  • In a large pot combine the meat, the spice bag and enough cold water to cover. Bring to a boil, reduce heat and simmer 2 hours. Add vegetables and salt and return to a simmer. Continue to simmer until fork-tender, 30 minutes to 1 hour longer.
  • For the Horseradish Cream: In a small bowl combine sour cream and horseradish; season, to taste, with salt, pepper and hot sauce.
  • To finish, remove corned beef to a carving board and slice against the grain. Transfer to a large, warmed, deep platter. Drain broth and reserve for soup, if desired. Arrange vegetables around meat and serve. Pass the horseradish cream for guests to help themselves.

A Rhode Island exclusive. Kind of like a Sloppy Joe but far superior. Spicy enough to earn it's name, it's best washed down with a good beer. For you non Rhodey people, torpedo rolls are just the long sandwich rolls.

2 pounds ground beef
2 green bell peppers, seeded and diced
1 (1/4 inch x 3 inch) strip red bell pepper, seeded and diced
1 medium yellow onion, chopped
1 medium red onion, chopped
2 (6 ounce) cans tomato paste
1 ½ cups water
1 teaspoon red pepper flakes, or to taste
8 torpedo rolls, split

Steps:

  • Place the ground beef in a large skillet over medium-high heat. Add the green pepper, red pepper, yellow onion and red onion to the skillet, and cook until meat is evenly browned and vegetables are tender. Drain excess grease from the pan.
  • Transfer the mixture to a slow cooker, and stir in tomato paste, water and red pepper flakes. Cover, and cook at the Low setting for at least 4 hours. I usually let it go for 12. The longer it simmers, the spicier it gets! Spoon into torpedo rolls and serve.

2 stalks celery, chopped
1 onion, quartered
1 bay leaf
1 handful mixed fresh herbs (sage, thyme and parsley) palm full of herbes de Provence
1 garlic clove, peeled and crushed
1 teaspoon peppercorns
3 boneless smoked shoulder butt hams (about 2 pounds each), rinsed
12 large carrots, peeled and cut into 2-inch pieces
2 large turnips, peeled and quartered
12 medium russet potatoes, peeled and halved
2 parsnips, peeled and cut into 2-inch pieces
24 pearl onions, blanched, rinsed and peeled
1/4 pound fresh green beans, trimmed
2 large cabbages, trimmed and quartered

Steps:

  • Combine 3 gallons water with the celery, onion, bay leaf, herbs, garlic and peppercorns in a 4- to 5-gallon pot and heat to boiling over medium heat. Simmer for 15 minutes. Add the hams, cover and simmer for 1 hour.
  • While the hams cook, prepare the vegetables: tie up the carrots and turnips in a piece of cheesecloth. Divide the potatoes and parsnips in half and tie up each bundle in a piece of cheesecloth. Tie up the pearl onions and beans in a piece of cheesecloth. Divide the cabbage wedges into 2 pieces of cheesecloth and tie up.
  • Remove the hams to a platter and keep warm.
  • Add the carrot-and-turnip bundle to the simmering ham water; cover and simmer for 10 minutes. Add the potato and parsnip bundles; cover and simmer for 10 minutes. Add the onion and bean bundle; cover and simmer for 10 minutes. Add the cabbage bundle; cover and steam for 10 minutes.
  • Using tongs, lift each bundle out and test for doneness. Cut the vegetable bundles and arrange the vegetables in bowls. Slice the ham thickly. Spoon cooking water over the vegetables and ham. Serve with mustard, horseradish, bread and applesauce.
