Ingredients

8 cups (or more) canned low-salt chicken broth
1 onion, chopped
2 celery stalks, chopped
2 carrots, chopped
3 large garlic cloves, chopped
1 cup uncooked long-grain white rice
2 tablespoons chopped fresh thyme or 2 teaspoons dried, crumbled
2 cups diced cooked chicken
Fresh chopped parsley

Steps:

Bring first 5 ingredients to boil in heavy large pot or Dutch oven over high heat. Mix in rice and thyme. Return soup to boil. Reduce heat to medium and simmer soup uncovered until rice is tender, stirring occasionally, about 30 minutes. Add chicken and simmer until heated through, thinning with additional broth if desired. Season with salt and pepper. Transfer soup to large bowl. Garnish with parsley and serve.

Our family favorite chicken divan recipe! I've been making this yummy recipe for years. We really love the touch of lemon and curry-- it's simply divine!!! Make mine with extra cheese, please. May use chicken or leftover turkey. Serve over hot cooked rice. Recipe is originally from my father, but I've tweaked it to suit my family's tastes. I hope you enjoy!

Ingredients

2 boneless skinless chicken breasts, cooked and broken into thin strips (or leftover turkey)
1 (10 3/4 ounce) can cream of chicken soup
1/2 cup mayonnaise
2 tablespoons lemon juice
1/2-1 teaspoon curry powder, to taste (we like a mix of mild and madras curry)
1 (10 ounce) package frozen broccoli florets, cooked al dente
1/4 cup torn breadcrumbs
2 tablespoons melted butter
1/2 cup shredded cheddar cheese (or more!)
freshly cooked rice, to serve

Steps:

Preheat oven to 350 degrees F.
Butter a 1 1/2-quart baking dish.
Combine cream of chicken soup, mayonnaise, lemon juice, and curry powder in a small bowl.
Arrange broccoli in a single layer in the buttered dish, reserving a few florets for the top.
Cover with chicken strips.
Pour soup mixture evenly over chicken and broccoli.
Sprinkle with bread crumbs and melted butter, dot with a few broccoli florets, and sprinkle cheese over the top.
Bake until heated through, about 25 minutes.
Serve over rice.

This is a family favorite. My husband happens to be an excellent scratch cook and one night he just took some things we had and put them together and out this came. I'm sure this will become a family favorite for those who try it.

1 can cream of chicken soup
1 can cream of celery soup
1 can chicken and rice soup
1 1/4 cups uncooked rice
1/4 cup melted butter (I use margarine)
1/4 cup milk
1/4 cup western salad dressing
3 -4 chicken breasts (Can be frozen!)
parmesan cheese (optional)

Steps:

Mix all of the ingredients (except chicken) together.
Place 1/2 of this mixture in a 9 X 13 pan.
Add chicken breasts then cover with the remaining 1/2 of the mixture.
Sprinkle with parmesan cheese.
Bake at 350 degrees for 1 1/2 hours.
