this is a very popular recipe in Egypt enjoy it warm in the winter,and cool it for the summer days for those who are not familiar with the whole wheat grains, i'll upload a photo of the grains cooking time includes leaving the grains in the water overnight

1 cup wheat, grains
1 -1 1/2 liter water
3 cups milk, plus 1/2 cup milk (for the starch)
1 cup whipping cream
3 -4 teaspoons starch
1 -1 1/2 cup sugar
1/2 teaspoon vanilla

Steps:

  • boil the wheat grains in the water , then leave it overnight to cool down, so that the grains can absorb all the water they need to open up.
  • add the milk, whipping cream, sugar, vanilla and heat up till sugar dissolves completely, you can taste some to determine if it is sweet enough.
  • dissolve the starch in 1/2 cup of cold milk then add to the heating mixture, boil altogether.
  • pour into your serving cups and leave to cool, you can serve them as soon as they are just warm, not hot, or you can cool them in the fridge for couple of hours before serving.
  • it is great as it is, but if you like you can put some toasted almond flakes, hazelnut, shreded coconut, or simply sprinkle some cinnamon.

A traditional rich and festive dessert made throughout the Mediterranean region.

Number Of Ingredients 8

1 cup pelted wheat.
5 cups water.
5 cup of milk (divided.)
1/2 cup granulated sugar or to taste. Note1
3 Tbs cornstarch.
For flavors: Use either of vanilla extract (orange blossom water, rose water or any flavor you like for your pudding.)
For garnish:
use coconut flakes (raisins, dried cranberries, nuts, ground cinnamon or dried fruits.)

Steps:

  • Start by rinsing the wheat very well and picking any debris that might be in there. Place in a pot then cover with cold water, bring to boil then reduce heat and let it cook for about 45 minutes until the wheat is cooked.
  • Do not drain. Pour 4 and 1/2 cups of milk in then add sugar and you flavoring extract to the wheat, stir until the sugar is completely dissolved.
  • Dissolve cornstarch in the remaining half cup of cold milk then add to the pot. Keep on stirring for about 10 more minutes until it thickened.
  • Remove from heat, let it set for 5 minutes then place the mixture in the serving plates.
  • Garnish with cinnamon,nuts,raisins whatever you like. Refrigerate or keep it to cool on your kitchen counter and enjoy.
