This recipe for pork chops and roasted vegetables with a honey mustard and garlic glaze is perfect for an easy dinner tonight!

4 pork chops
2 tbsp butter
1/2 cup yellow mustard
1/3 cup honey
1 tsp salt
1 tsp garlic powder ((or 1 tbsp minced fresh garlic))
1/2 tsp ground black pepper
2 lbs potatoes, cubed
1 lb carrots ((cut into 1-inch rounds))
1 lb brussels sprouts, halved
additional salt, pepper, garlic for vegetables
1 tbsp coconut aminos ((or 1/2 tbsp soy sauce))

Steps:

  • In a skillet or roasting pan, melt butter over medium heat and sear all sides of the pork chops.
  • Pre-heat oven to 375°.
  • Mix mustard, honey, coconut aminos, salt, pepper, and garlic in a bowl until well combined.
  • Brush mixture over pork chops and place into an oven safe dish (large enough to also hold the vegetables later) or use the pan you used to sear the meat, if oven safe.
  • Add carrots an potatoes around pork chops and drizzle with sauce, keeping some for the brussels sprouts later.
  • Cover with foil or a fitted lid (best) and bake or 20 minutes.
  • Add brussels sprouts and cover with remaining sauce. Toss vegetables to coat well.
  • Cover with foil or lid and bake for an additional 35 minutes.
  • Check meat with a meat thermometer to ensure center is at least 165°.
  • Serve with a side of crusty bread or a salad.

2 tablespoons prepared yellow mustard
1 tablespoon butter
1 ½ pounds center-cut boneless pork chops - 1/2-inch thick
garlic powder, or to taste

Steps:

  • Mix honey and mustard together in a bowl until thoroughly combined.
  • Heat butter in a skillet over medium-high heat and lay pork chops into the hot butter. Sprinkle chops with half the garlic powder and cook until browned, about 3 minutes. Turn chops over, sprinkle with remaining garlic powder, and pan-fry chops for 3 more minutes.
  • Brush honey mustard sauce over chops, turn them over, and cook for 5 minutes; turn chops onto other side and brush with honey mustard sauce. Cook until chops are no longer pink inside and an instant-read meat thermometer inserted into the thickest part of a chop reads 165 degrees F (75 degrees C), about 5 more minutes.

3 medium sweet potatoes, peeled, cut into 1-inch pieces (about 4 cups)
2 tablespoons olive oil
1 1/4 teaspoons salt
1/2 teaspoon pepper
1/2 lb fresh broccoli florets (about 4 cups)
4 boneless pork chops (about 3/4 inch thick)
3 tablespoons honey
1 tablespoon whole grain Dijon mustard
2 teaspoons balsamic vinegar

Steps:

  • Heat oven to 425°F. Spray 18x13-inch rimmed sheet pan with cooking spray.
  • In large bowl, mix sweet potatoes, 1 tablespoon of the oil, 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Stir to coat. Place on pan. Bake 25 minutes.
  • In same bowl, mix broccoli, remaining 1 tablespoon oil and 1/4 teaspoon of the salt. Remove pan from oven; stir or turn potatoes, and arrange broccoli on pan with potatoes. Bake 5 minutes.
  • Meanwhile, season pork chops with remaining 1/2 teaspoon salt and remaining 1/4 teaspoon pepper.
  • In small bowl, mix honey, mustard and vinegar. Reserve 2 tablespoons of the honey glaze.
  • Remove pan from oven; add pork chops to pan. Brush pork chops with remaining honey glaze. Roast 18 to 22 minutes or until pork is no longer pink and meat thermometer inserted in center reads at least 145°F, and vegetables are browned and tender.
  • Spoon reserved 2 tablespoons honey glaze on pork chops. Serve pork chops with vegetables.

3/4 teaspoon garlic powder, divided
1/2 teaspoon salt
1/4 teaspoon pepper
4 boneless pork loin chops (6 ounces each)
1 tablespoon olive oil
1/2 cup white wine or chicken broth
1/4 cup chicken broth
2 tablespoons Dijon mustard
1 tablespoon honey
1/2 cup heavy whipping cream

Steps:

  • Combine 1/2 teaspoon garlic powder, salt and pepper; sprinkle over pork chops. In a large skillet over medium heat, brown pork chops in oil. Remove and keep warm., Remove skillet from heat and add wine, stirring to loosen browned bits from pan. Bring to a boil over medium-high heat; cook until liquid is reduced by half. Reduce heat to medium. Whisk in broth, mustard, honey and remaining garlic powder; cook and stir for 1 minute. Whisk in cream; cook and stir for 4-6 minutes or until thickened., Return pork chops and juices to the skillet. Cover and cook until a thermometer reads 145°, 3-5 minutes. 8 pork loin chops
1/3 cup honey
1 tablespoon Dijon mustard
1 teaspoon finely grated orange rind
1/4 cup dry white wine
1 tablespoon olive oil
50 g butter
2 garlic cloves, crushed
1 kg kumara, chopped coarsely
240 g carrots, chopped coarsely
6 spring onions, chopped coarsely

Steps:

  • Combine pork in a large shallow dish with honey, mustard, rind and wine.
  • Cover and refrigerate for at least 2 hours or overnight, or you could freeze it.
  • Drain chops from marinade; reserve the marinade.
  • Heat the oil in a large pan, cook the pork in batches brushing occasionally with reserved marinade, until browned both sides and cooked through.
  • Discard and remaining marinade.
  • Meanwhile, combine melted butter, garlic, kumara, carrot and onion in large baking dish.
  • Bake uncovered in a moderately hot oven for about 45 minutes or until the vegetables are tender.
  • Serve with the pork.

1 pinch rubbed sage, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix mayonnaise, mustard, honey, paprika, and lemon juice for sauce together in a bowl.
  • Mix panko bread crumbs and Parmesan cheese together on a plate. Place flour on a plate.
