DATE FILLED SUGAR COOKIES

Date Filled Sugar Cookies image

Provided by Emilie

Number Of Ingredients 14

1 cup shortening
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
3 tablespoons milk
1 tsp vanilla
3 cups sifted all-purpose flour
1/2 tsp salt
1/2 tsp baking soda
2 cups chopped dates
1/2 cup sugar
1/2 cup water
2 tablespoons lemon juice
1/4 tsp salt

Steps:

  • Preheat oven to 375°
  • Cream shortening and white and brown sugar. until fluffy. Add egg, milk, and vanilla, beating well. Sift dry ingredients together and add to creamed mixture. Mix well. Chill dough at least an hour.
  • Meanwhile, make date filling by combining chopped dates, sugar and water in a saucepan. Bring to a boil. Cover and simmer about five minutes, stirring occasionally. Add lemon juice and salt. Cool.
  • On floured surface (or pastry cloth), roll half of the dough at a time to a little less than 1/8 inch. Cut with 2 1/2 inch round cookie cutter. (Recipe recommends cutting a small hole in the center of half the cookies for the top with a thimble. My mom has always skipped this step.) Place 1 tablespoon of prepared date filling in the center of each plain cookie bottom. Top with another round cookie (with small hole if you are following original recipe). Press the edges of each filled cookie together with the tip of a fork to seal. Bake on an ungreased cookie sheet at 375° for about 10 to 12 minutes.

MUM'S DATE COOKIES AND SQUARES

Mum's Date Cookies and Squares image

These have to be my favourite baked treat. Unfortunately for me, the only time of year Mom made the squares was Christmas, but she made the cookies as a special treat for Dad a couple of times a year. I've never been able to replicate hers, but they are still really good :)

DATE FILLING
1 lb chopped dates
1 c cold water
2 Tbsp brown sugar, firmly packed
1/2 fresh orange (juice and grated rind)
1 tsp lemon juice (fresh or bottled)
DATE COOKIES
1 date filling recipe
1/2 c sugar
1/2 c butter
1/2 c lard (yes, lard!) or you can use 1 cup butter total, but they don't turn out the same)
1/2 c milk
1 tsp vanilla extract
2 1/2 c all purpose flour
2 tsp baking powder
1 tsp baking soda
2 c rolled oats
DATE SQUARES
1 date filling recipe
1 1/2 c cake and pastry flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 c butter (just chilled, not cold or soft)
1 c brown sugar, firmly packed
2 c rolled oats

Steps:

  • 1. Date Filling: Cook dates, water, orange rind and sugar in small saucepan (1 qt), over moderate heat until thick and smooth. Remove from heat, add juices mix well. Cool before spreading on cookie or oatmeal batter.
  • 2. Date Cookies: Cream butter and lard, add sugar, mix until smooth, add vanilla and mix. Sift flour, baking powder and soda. Add to mixture alternately with milk. Add rolled oats a cup at a time, mix in. It will be stiff so you may want to use your hands to mix. Roll out on a floured surface, cut with 2-3" cookie cutter, place on greased cookie sheet and bake at 325°F for 8-10 minutes or until lightly golden. Cool and spread with date filling. Sandwich with another cookie on top.
  • 3. Date Squares: Sift flour, baking powder, soda and salt. Rub in butter with tips of fingers. Add sugar and oatmeal. Mix well with fingers until all oatmeal is covered. It should be like a crumble. Spread one half of mixture crumbs into a greased, shallow pan, pat down to make it smooth. Cover with cooled date filling, spreading it evenly, then cover with the remaining crumbs. Pat to make smooth. Bake at 325°F for 30 to 35 minutes. Cut while still warm and allow to cool in the pan.

Time 1h55m

Yield 16

Number Of Ingredients 11

1 pound pitted dates
⅔ cup light brown sugar
⅔ cup orange juice
1 orange, zested
2 teaspoons vanilla extract
1 ½ cups regular rolled oats
1 cup all-purpose flour
1 cup light brown sugar
¾ teaspoon baking soda
¼ teaspoon salt
¾ cup cold unsalted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat dates, 2/3 cup brown sugar, orange juice, and orange zest in a saucepan over low heat; cook, stirring occasionally, until dates have softened, absorbed the liquid, and mixture is like a paste, about 10 minutes. Remove from heat; stir in vanilla extract.
  • Stir oats, flour, 1 cup brown sugar, baking soda, and salt together in a bowl; cut in butter with a knife or pastry blender until mixture resembles coarse crumbs.
  • Lightly press 2/3 of the crumb mixture into the bottom of a 9x9-inch pan. Spread date mixture evenly over the crumb crust; sprinkle remaining crumbs evenly over the top of date mixture.
  • Bake in the preheated oven until top is golden, about 30 minutes; cool on a wire rack for at least 1 hour before slicing into bars.
