This recipe makes a good cookie, but rather rich!

½ cup butter
⅔ cup packed brown sugar
1 egg
1 teaspoon vanilla extract
½ teaspoon maple flavored extract
½ teaspoon baking soda
¼ teaspoon salt
2 cups all-purpose flour
1 cup pecan halves

Steps:

  • In a large bowl, cream together butter and brown sugar. Beat in egg, vanilla and maple flavoring. Beat in salt and flour until a smooth dough is formed. Shape dough into a log 12 inches long, wrap in wax paper, and refrigerate overnight.
  • Preheat oven to 350 degrees F (180 degrees C). Line cookie sheet with parchment paper.
  • Slice dough into 1/4 inch slices. Place slices on cookie sheet. Top each cookie with a pecan half. Bake for 10 minutes in preheated oven, or until golden brown.

These are really yummy!! There are a lot of directions but are really easy to make. I make these for cookie exchanges around the holidays.

Number Of Ingredients 11

1 2/3 cups flour, sifted
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, room temperature
2 1/2 cups light brown sugar, firmly packed
1 large egg
1 teaspoon vanilla
1/2 cup heavy cream, more
heavy cream, if necessary
1 cup powdered sugar, sifted
1 cup pecan halves, chopped

Steps:

  • Heat oven to 350 degrees.
  • Sift flour, baking powder, and salt into a medium bowl. Set aside.
  • With an electric mixer (or Kitchenaid with paddle attatchement), cream butter and 1 1/2 cups brown sugar until light and fluffy, about 2 minutes.
  • Add egg and vanilla. Beat until fully combined.
  • Add dry ingredients, and beat on low speed until combined.
  • Drop batter by rounded teaspoons on to an ungreased baking sheet about 2 inches apart.
  • Bake until firm and barely golden, 10 to 12 minutes. Wait 5 minutes before transferring cookies to a wire rack.
  • In a small saucepan, combine remaining 1 cup brown sugar and cream.
  • Bring to a boil over a medium heat. Cook, stirring constantly, for 2 minutes.Remove from heat.
  • Add powdered sugar, and whisk until smooth.
  • (If frostening thickens too much, thin with heavy cream.).
  • Add pecan pieces.
  • Place cookies on a cooling rack over a lined baking sheet.
  • Spoon about 1/2 teas praline mixture onto each cookie.

I love to make biscuits when I crave hot bread, and this one is quite good and fast to prepare. Paula Deen says this recipe is from Famous Recipes from Mrs. Wilkes' Boarding House. I found it in The Lady & Sons Too! (Paula Deen). I threw a splash of vinegar in the milk instead of using buttermilk and used all butter instead of shortening.

2 cups self-rising flour
1/2 teaspoon baking powder
1 tablespoon vegetable shortening
2 tablespoons margarine
1/3 cup buttermilk
1/3 cup milk

Steps:

  • Preheat oven to 450.
  • Sift the flour and baking powder into a mixing bowl and make a well in the center.
  • Cut in the shortening and margarine until mixture resembles coarse cornmeal.
  • Pour the buttermilk and milk into a measuring cup and add enough water to make 3/4 cup.
  • Pour this into the dry ingredients.
  • Mix lightly and quickly with your hands to form a dough moist enough to leave the sides of the bowl.
  • Turn the dough onto a lightly floured surface.
  • Knead by turning the dough away from you, pressing down with palms of hands, and pushing the dough away.
  • Repeat 6 or 7 times.
  • Work the dough into a large ball while kneading. Keep your fingers dry by dipping them into dry flour regularly.
  • Pinch off portions of dough and place them on a well-greased baking sheet.
  • Press lightly to flatten the biscuits slightly.
  • Bake for 12 to 15 minutes, or until golden brown on top.

2 c flour
1/2 tsp soda
1/4 tsp salt
3/4 c quick oats
3/4 c dark brown sugar, firmly packed
3/4 c sugar
1 c butter, softened
2 large eggs
2 tsp vanilla extract
1 c chopped pecans
1 c semisweet chocolate chips or finely chopped semisweet chocolate

Steps:

  • 1. Preheat oven to 300 degrees.
  • 2. In a medium bowl combine flour, soda, salt and oats.
  • 3. In a large bowl blend sugars with an electric mixer at medium speed.
  • 4. Add butter and mix to form grainy paste.
  • 5. Scrape down sides of bowl, then add eggs and vanilla.
  • 6. Beat at medium speed until light and fluffy.
  • 7. Add the flour mixture, pecans and chocolate chips and blend at low speed just until combined.
  • 8. Drop dough by rounded tablespoons onto ungreased cookie sheets, 1 1/2 inches apart.
  • 9. Bake for 20-22 minutes, immediately transfer cookies to a cool, flat surface.

1 egg, beaten
1 1/2 cups sifted all purpose flour
1 t. vanilla extract
1 cup coarsely chopped pecans

Steps:

  • Mix together butter, sugar, and egg until creamy. Mix in rest of ingredients. Refrigerate till easy to handle. Start heating oven to 375. Shape dough into 1" balls; place 3" apart, on greased cookie sheet. Using bottom of tumbler covered with a damp cheesecloth, flatten balls till 1/8 thick. Bake 12 minutes or until done.
