BEEF STEW WITH DUMPLINGS



Beef Stew with Dumplings image

1/2 cup all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons extra virgin olive oil, separated
3 tablespoons unsalted butter, separated
2 1/2 pounds beef chuck cut into 2″ cubes
2 cups onion, chopped
2 tablespoons garlic, chopped
2 tablespoons tomato paste
1/2 cup red wine
3 quarts beef stock
1 quart water
2 bay leaves
2 teaspoons dried thyme
1 teaspoon paprika
1 tablespoon Worcestershire sauce
1 teaspoon granulated sugar
4 cups carrots, peeled and cut into bite-sized pieces (1 1/2 pounds)
4 cups russet potatoes, peeled and cut into bite sized pieces (1 1/2 pounds)
1/2 pound green beans, trimmed and quartered
2 10-ounce packages pearl onions, *see below for instructions
1/4 cup fresh flat leaf parsley chopped
1 cup frozen green peas, thawed
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon granulated sugar
1/2 teaspoon kosher salt
1 teaspoon dried thyme
2 tablespoons unsalted butter
3/4 cup whole milk

Steps:

  • Mix flour, salt and pepper together in a bowl. Dredge beef cubes in flour and remove, shaking off excess flour.
  • Over medium high heat, melt one tablespoon of butter and one tablespoon of oil in 6-quart heavy bottomed stock pot or Dutch oven until slightly brown and frothy. Place half of the beef in the hot fat making sure that meat pieces do not touch each other. Sear two minutes per side. Remove from pan and heat another tablespoon of butter and oil then cook the second half of the meat. Remove meat from pan when done and set aside. Total time to sear all the meat is 15 minutes.
  • Turn heat to medium and add the remaining butter and olive oil to the pan. Add in chopped onions and cook three minutes. Add chopped garlic and cook for one more minute. Add tomato paste and cook for an additional minute.
  • Add in red wine to deglaze pan, scraping up any brown bits from bottom.
  • Add browned beef cubes, stock, water, bay leaf, thyme, paprika, Worcestershire sauce and sugar. Bring to a boil then turn heat down to a simmer and cover pot with lid slightly ajar. Simmer for 2 ½ hours or until beef is tender, adjusting water as needed. If all of the liquid does not fit, set some aside and add later as the liquid in the pan evaporates. Either way, check at the two hour mark and if needed, add more liquid. We used exactly four quarts of liquid (Three quarts beef stock and one quart of water).
  • After 2 1/2 hours, add in carrots, potatoes, green beans, pearl onions and parsley and simmer for 15 minutes or until vegetables are tender.
  • While vegetables are cooking, prepare dumpling batter as follows: Sift flour, baking powder and sugar together. Add salt and thyme into the bowl and then cut in butter with a fork until pieces are rice size. Add milk and stir with spoon until mixed.
  • Add green peas to stew, adjust seasoning and turn heat to low. Remove and discard bay leaves.
  • Drop heaping tablespoons of dumpling batter into stew until all batter is used. (Do NOT just pour the dumpling batter in all at once.) Cover and cook 15 minutes without lifting the lid. Check and if they are not puffed up enough, cook for another minute or two covered. Ours took exactly 15 minutes .
  • Serve bowls of stew with dumplings on top.

Sometimes, we really get tired of potatoes and rice with our entree, and we want something different. So I created a beef gravy and dumpling recipe that really kicked our short ribs up a notch! This more than met our expectations, and it was the perfect complement to the meal. Enjoy!

3 to 4 pounds of lean short ribs
1 cup water
½ cup of marsala wine
all purpose organic flour for dredging
oil for frying
1 cup coarse chopped carrots
1 cup coarse chopped onions
1 cup coarse chopped celery
2 cloves minced garlic
½ teaspoon dry leaf thyme
½ teaspoon dry leaf basil
1 teaspoon kosher salt
½ teaspoon coarse ground black pepper
BEEF DUMPLINGS
4 cups of beef broth made with bouillon is better brand and water.
1 cup all purpose flour
2 teaspoons baking powder
2 tablespoons butter, room temperature
1 ½ teaspoon salt
½ teaspoon coarse ground black pepper
½ teaspoon garlic powder
½ teaspoon onion powder
2 tablespoons dried leaf parsley
about ¾ cup milk

Steps:

  • 1. Directions Coat the short ribs in flour and fry on all sides in oil over medium heat. Transfer to a large slow cooker. Mix all the ingredients and pour over the short ribs. Cook on low setting for 5 to 6 hours until fork tender.
  • 2. Make beef gravy and dumplings 1/2 hour before meat is done. In a small bowl, add flour, baking powder, salt, pepper, garlic and onion powder, and parsley. Mix dry ingredients well, then add butter. Mash the butter into the flour with a fork, then using your fingers distribute it evenly throughout the flour, then add milk. Stir mixture just until wet. The goal is to make a sticky, moist, spoonable dough.
  • 3. Make sure the beef broth is boiling. Dip your spoon in the hot broth, and then drop spoonfuls of the dough into the simmering broth until the bowl is empty. Turn the heat up and bring it to a boil and then immediately turn the heat to simmer (so it won't tear your dumplings) Put the lid on tight. Cook 20 minutes. NO PEEKING, PLEASE! You will lose your steam, because the heat and steam is what cooks your dumplings. Turn off the heat, set aside. Let the pan rest on the burner for about five minutes before serving. The gravy thickens as it rests.
  • 4. Spoon the gravy over servings of beef short ribs and serve with the dumplings as a side dish with a green vegetable. Enjoy!

My mom's beef stew recipe that she's perfected over 25 years. Tender chunks of beef couple with hearty vegetables in a rich gravy for a soul-warming treat. And Oh! The dumplings!

1 tablespoon extra-virgin olive oil
1 onion, coarsely chopped
2 pounds cubed beef stew meat
2 teaspoons steak seasoning (such as Montreal Steak Seasoning®), divided
2 stalks celery, each cut into 4 pieces
2 cups water, or to cover
4 (.85 ounce) packages dry brown gravy mix
4 cups water
1 small turnip, peeled and quartered
4 carrots, peeled and quartered
7 potatoes, peeled and quartered
1 ½ cups all-purpose flour
2 teaspoons baking powder
¾ teaspoon salt
3 tablespoons shortening
¾ cup milk

Steps:

  • Heat the olive oil in a large heavy pot or Dutch oven over medium-high heat until the oil is shimmering, and place the onion and beef into the hot oil. Sprinkle with 1 teaspoon of the steak seasoning, stir the meat and onions well, and sprinkle with 1 more teaspoon of seasoning. Add the celery, and cook and stir until the meat is browned, about 10 minutes.
  • Pour in 2 cups of water to just cover the meat, onion, and celery, bring to a boil, and stir and scrape the browned bits of flavor from the bottom of the pan. Cover, reduce heat, and simmer until the beef is very tender, about 2 hours. Remove the meat and celery pieces from the pan, set the meat aside, and discard the celery.
  • In a bowl, whisk together the gravy mix with 4 cups of water. Add the mixture to the juices in the pot, bring to a boil, and stir the meat back into the gravy mixture. Stir in the turnip and carrots, cover, and simmer for 20 minutes. Stir in the potatoes, cover, and simmer an additional 20 minutes.
  • To make dumplings, mix the flour, baking powder, and salt in a bowl. Cut the shortening into the flour mixture with a pastry cutter or two knives until the mixture looks crumbly. Pour in the milk, and lightly stir the mixture just until it combines to form a dough.
  • Remove 2 cups of gravy from the pot, and reserve. Drop the dumplings by heaping tablespoon onto the meat and vegetables in the pot, cover, and simmer for 20 minutes. Do not peek until the time is up. Pour the reserved gravy back over the dumplings, stir lightly, and serve.

These meatballs are one of my Dad's favorite meals. He calls them... "Those little meatballs". This dish is very versatile. You can serve it in a well of mashed potatoes like my photo, or you can serve it over rice or egg noodles. Comfort food at its best! You can also make these up ahead of time, put them in a crockpot to keep warm for the party. These are excellent as open-face style meatball sandwiches the next day. Enjoy! The Photo is my own. MEATBALLS:
1 - pound extra lean ground beef
1 - slice thick french bread, soaked in milk, squeezed dry.
1 - small onion, grated
2 - teaspoons dried parsley
1 - egg, slightly beaten
1/2 - teaspoon salt
1/4 - teaspoon black pepper
1/4 - teaspoon freshly grated nutmeg
- canola oil for frying
GRAVY:
- fresh grated zest of 1/2 lemon
1/4 - teaspoon dried thyme
2 - tablespoons drippings
2 - tablespoons flour
8 - ounces beef broth
8 - ounces milk (i use 2%)
1 - tablespoon creamed horseradish
1/4 - teaspoon kitchen bouquet browning sauce (don't skip this!)

Steps:

  • Using a large mixing bowl, add 1/4 cup of milk to it and place a slice of bread in it, soak it up, then squeeze the milk out. Discard any remaining milk. Add the egg and beat slightly with a fork. Add the ground beef and the rest of the ingredients and mix well.
  • Shape the mixture with your hands into walnut sized meat balls. (wet your hands if you need to) Heat some Canola oil in a large skillet over medium high heat. Add the meatballs and brown them all over. Remove with a slotted spoon to a paper towel lined plate to drain. Cover loosely with foil to keep them warm. Brown the meatballs in batches, don't crowd them in the pan. They should be a nice golden brown. After you have fried all the meatballs, measure out 2 tablespoons of grease, discard the rest, leaving the brown bits in the pan. Add the 2 tablespoons of grease back to the pan and make the gravy. Over medium heat, whisk the flour into the grease, let it cook one minute, then add the beef broth, milk, lemon zest, thyme, creamed horseradish and kitchen bouquet. Cook the gravy until it thickens. It will be sort of white. Add more salt if needed.
  • Place the meatballs into a shallow casserole dish. Pour the gravy over the top of the meatballs, Bake uncovered for 25 minutes in a 350 degree, pre-heated oven until bubbling and the gravy turns brown. Serve hot and spooned over mashed potatoes, buttered noodles or steamed white rice. This is delicious! Enjoy!

Cosy-up this winter with a hearty stew. This beef and Guinness casserole really packs in the flavour, and comes served with delicious bacon dumplings, cabbage and mash

2 tbsp vegetable oil
1kg boneless beef shin, cut into 3cm chunks
200g pearl onions or small shallots
4 medium carrots, chopped to the same size as the shallots
3 celery sticks, cut into bite-sized chunks
3 tbsp plain flour
500ml beef or chicken stock
500ml Guinness
1 large thyme sprig
4 star anise
buttered cabbage and mash, to serve
100g smoked bacon, finely minced
½ tbsp oil
1 tsp thyme leaves
125g self-raising flour
60g beef suet
1 egg yolk
small pack parsley, leaves picked and finely chopped

Steps:

  • First, make the dumplings. Gently fry the bacon until crisp in a large lidded casserole dish. Stir in the thyme leaves, then tip into a bowl and leave to cool slightly. Add the flour and suet to the bacon, and stir everything together. Make a well in the middle, then add the egg yolk, parsley, ½ tsp pepper and 2 tbsp very cold water, and start to mix into a dough. Keep adding water until you a have a firm but pliable dough. Divide the mixture into eight balls and chill until needed.
  • Heat oven to 160C/140C fan/gas 3. Quickly clean the casserole dish with some kitchen paper, then heat the oil. Brown the meat really well in batches, then set aside. Tip in the onions or shallots, carrots and celery, brown well, then stir in the flour. Add the meat and any juices back into the dish, give everything a good stir, then pour in the stock and Guinness. Season, then tuck in the thyme and star anise and bring everything to a simmer. Cover with a lid, then cook in the oven for about 2 hrs until the meat is tender.
  • Remove the stew from the oven and arrange the dumplings evenly on top. Put the lid back on and return to the oven for 20 mins, then cook for a final 10 mins with the lid off to brown the dumplings. Bring the dish to the table in all its glory. Spoon into bowls with cabbage and mash, to serve.

I LOVE onion gravy in beef stew, absolutely delicious! The lima beans add more protein and the biscuits are great for soaking up that wonderful gravy. And this recipe has the added bonus of making your house smell delicious!

2 1/2 lbs beef tips
1/4 cup all-purpose flour
salt & pepper
1 tablespoon olive oil
1 vidalia onion, very large (cut lengthwise and sliced very thinly)
1/2 cup beef broth
1/2 cup white wine (I use dry Vermouth for my white cooking wine)
1 tablespoon dried basil
1 (16 ounce) bag frozen lima beans (I prefer baby lima beans)
1/2 cup half-and-half
1 tablespoon cornstarch
1 (10 ounce) can refrigerated biscuits, 10 count

Steps:

  • Toss the beef tips with the flour, salt and pepper in a large Ziploc bag to coat well. Heat the olive oil in a large pot. Brown the beef in the pan. Once browned, reserve beef on a plate and cook the onions until soft. Return the beef to the pan, add the broth, white wine and basil to the pot. Turn down to a simmer, cover, and let cook for 2 hours (can cook for longer if necessary, just keep on low heat). Toward end of cooking time preheat oven to 350 degrees. Stir the lima beans into the stew. In a measuring cup mix the half-and-half with the cornstarch until the cornstarch is dissolved. Stir it into the stew. Turn heat up to medium-high and heat to almost boiling stirring regularly. Transfer stew to large 9 by 13 glass pan (I actually use a little larger corning ware pan) Open biscuits can and place individual biscuits on top of the stew. Cook in 350 degree oven for 15-20 minutes until biscuits are golden brown.
