MIMOSA SALAD (LAYERED EGG AND CHEESE SALAD)

Mimosa Salad (Layered Egg and Cheese Salad): elegant, festive, appealing to an eye and delicious in taste!

2 herring slices
1 medium Yukon potato - cooked and peeled
1/4 teaspoon distilled white vinegar
1/4 teaspoon finely grated onion
1 medium carrot - cooked and peeled
1 kosher dill pickle - grated
2 oz mozzarella cheese (2 strings)
4-5 boiled eggs - separated when boiled
11 tablespoons mayo (give or take)
ground black pepper for garnish

Steps:

  • Cook the vegetables: do not peel the vegetables. In a medium pot, place 1 medium Yukon potato and 1 medium carrot. Cover with water, bring to a boil over medium-high heat. Reduce the heat to low and cook carrot for 15-20 mins and take out with kitchen tongs or couple forks and continue cooking potato for 10 additional mins, until you can easily pierce potato with knife. Drain water and let the vegetables stand at room temperature to cool before peeling or refrigerate for faster cooling. Boil 5 eggs according to this post "Perfect Hard-Boiled Eggs" (click on link).
  • How to Make Mimosa Salad:Take 2 herring slices from the package and place on a plate lined with paper towel. Pat herring with paper towel to remove excess oil. Cube herring into 1/4" cubes. In a 5-6" diameter salad plate, spread herring in circle in the center of the plate, pressing gently down with a fork. Drizzle 1/4 tsp white distilled vinegar and 1/4 tsp finely grated onion.
  • Using a cheese grater, finely grate 1 medium potato evenly over the herring and gently press down with a fork. With a dull knife, spread 1 1/2 tbsp mayo over potatoes. Using same cheese grater, finely grate 1 medium carrot over the salad, press down with fork and cover with 1 1/2 tbsp mayo.
  • Into the sieve, grate 1 kosher dill pickle, squeeze out the juice and spread evenly over carrot. Cover with 1 1/2 tbsp mayo. Grate 2 strings of mozzarella cheese onto cheese grater and evenly spread over the salad. Gently press down with fork and cover with 3 tbsp mayo. Separate boiled egg whites from egg yolks. Grate 4-5 egg whites onto cheese grater evenly over the salad. Press down with fork and cover with 3 tbsp mayo. Using grater, top with finely grated 3-4 egg yolks along with fresh parsley and sprinkle with ground black pepper. (Be very gentle with egg yolks so you don't squeeze and mash them. You want the grated egg yolks to fall onto mimosa like snowflakes). Refrigerate until ready to serve.
  • This salad is good refrigerated for 3-4 days.

1/3 clove garlic, finely minced
2 quarts crisp lettuce salad greens
2 hard-cooked eggs, finely chopped

Steps:

  • Combine oil, vinegar, salt, pepper and garlic in a jar with tight lid. Shake vigorously. Arrange greens in salad bowl, add dressing, and toss thoroughly. Sprinkle with chopped egg.

1/4 cup Dijon mustard
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup champagne vinegar
1 medium shallot, finely chopped
1/2 cup extravirgin olive oil
2 heads butter lettuce, pale inner leaves only, torn into bite sized pieces
2 large hardboiled eggs, whites cut into 1/4inch dice and yolks pressed through a sieve

Steps:

  • In a glass bowl, whisk together the mustard, salt, pepper, vinegar, and shallot. Drizzle the olive oil over in a slow, thin stream, whisking all the time until the dressing is emulsified.
  • In a large bowl, combine the lettuce with enough dressing to coat generously. Place a mound of the salad on each of 6 chilled plates and garnish with some of the diced egg white and a dusting of the sieved yolk.

4 medium-size baking potatoes

Steps:

  • Peel potatoes and trim so that all surfaces are regular. Cut lengthwise into long, narrow, very even slices about 1/8-inch thick. Dry slices between pieces of paper toweling. Heat enough oil in a deep saucepan to fill pan half full. Heat oil to 350°F (use a deep-fat thermometer). Drop a handful of potato slices, one at a time, into the oil. Remove pan from heat and shake it to keep pieces moving constantly. When temperature reads 250°F, return pan to heat and shake it until slices begin to swell. Do not let the temperature of oil rise above 300? F Puffing will take about 8 minutes. Skim off potatoes and drain on a tray covered with paper toweling. Just before serving, heat the oil to 400°F. Drop the partially cooked slices into the hot oil. They will puff and rise to the surface. Turn constantly until browned. Drain. Sprinkle with salt. Serve hot.

1 (8-ounce) can apricot
1 (8 3/4-ounce) can pineapple tidbit

1 (17-ounce) can pitted bing cherries
commercial sour cream

Steps:

  • Grate the rind from the orange and lemon; add to brown sugar with nutmeg. Cut orange and lemon into very thin slices. Drain and combine fruits. Butter a 1-quart casserole and arrange fruits in layers, sprinkling each layer with some of the brown sugar mixture. Bake 30 minutes at 350°F. Serve warm with a spoonful of sour cream on top.
