SHANNON'S STRAWBERRY PINEAPPLE PARFAIT

This is a spin off from my Good For You parfait. It is also delicious, try them both :) If you like, this can be made into 2 smaller parfaits, just add another tablespoon of Grape Nuts to the list of ingredients and divide ingredients evenly between two parfait glasses.

1/2 cup crushed pineapple in juice, undrained
4 large strawberries or 8 medium strawberries, sliced and sweetened to taste with no calorie sweetener
1 (6 ounce) container sugar-free non-fat vanilla yogurt (I use the Wal-mart brand)
1 tablespoon Grape-nuts cereal

Steps:

  • Layer in a parfait glass pineapple then yogurt then strawberries.
  • Top with the Grape Nuts.

3 cups whole fresh strawberries
3 to 4 tablespoons sugar
12 scoops vanilla ice cream
1 can (8 ounces) crushed pineapple, drained
Whipped topping

Steps:

  • Set aside six strawberries for garnish. Slice the remaining strawberries and toss with sugar; let stand for 10 minutes. , Spoon half of the sliced berries into six parfait glasses. Top with half of the ice cream and half of the pineapple. Repeat layers. Top with whipped topping and reserved strawberries.

1 1/2 cups ground graham crackers
1/4 cup sugar
1/2 cup unsalted butter, at room temperature
4 cups fresh strawberries, chopped
8 ounces cream cheese, softened
1/2 cup granulated sugar, divided
1 tablespoon granulated sugar, divided
1/2 tablespoon vanilla or 1/2 tablespoon vanilla bean paste
1 (8 ounce) container whipped topping

Steps:

  • Crust:.
  • In a large bowl combine all 3 ingredients and mix until the dough comes together when pinched between fingers.
  • Filling:.
  • In a medium mixing bowl, combine chopped strawberries and 1 Tbsp sugar. Mix well until coated. Set aside.
  • Combine cream cheese, ½ cup sugar and vanilla in a medium mixing bowl. Beat with an electric mixer until your mixture is light and creamy. Fold in whipped topping.
  • Add 2 Tbsp graham cracker mixture to the bottom of each cup.
  • Press down on mixture with your fingers to create a crust.
  • Add the cream cheese filling, dividing evenly between the 16 servings (reserve a little to dollop on top of each cup if desired).
  • Spoon strawberries over each serving, dividing evenly.
  • Top with additional whipped topping.

I came up with this one as a spinoff to my trifle. It tastes just like cheesecake :) Try it with sugar free cherry or apple pie filling or blueberries!

1 sugar free fat free French vanilla pudding and pie filling mix (4 serving size)
2 cups ice cold skim milk
1 (8 ounce) container whipped fat free cream cheese
1 lemon, juice and zest of
non-calorie artificial sweetener
5 sheets graham crackers, broken into fourths (20 crackers)
24 medium fresh strawberries, stemmed and chopped
non-calorie artificial sweetener

Steps:

  • Mix the skim milk, cream cheese, and lemon zest and juice together until well combined (no lumps!).
  • Add pudding mix and blend well.
  • Add about 1 tbsp.
  • noncalorie sweetener and mix well, set aside.
  • Sweeten strawberries to taste with sweetener.
  • In 3 parfait glasses (Wal-mart sells some cute plastic ones) start with 1 graham cracker, broken in half.
  • Place about 2 tablespoons of strawberries in each.
  • Cover with 5 tablespoons of pudding mixture.
  • Place 2 graham crackers in each glass, and cover with 2 tablespoons of strawberries, then 5 tablespoons of pudding mixture.
  • Continue until all of the ingredients are used up.
  • Serve immediately.
  • If not serving immediately, use reduced fat Nilla wafers or thin slices of sugar free fat free angel food cake.

From the April 2006 issue of Australian House and Garden magazine. Remember this recipe calls for a total of 450g of strawberies.

1/2 cup caster sugar (100g)
1/4 cup water
6 medium egg yolks
350 g strawberries, plus
100 g extra strawberries
2 vanilla pod
300 ml double cream

Steps:

  • Heat sugar and water in a small saucepan over a low heat until sugar has completely dissolved.
  • Bring to a boil, then boil rapidly for 2 minutes.
  • Meanwhile, whisk egg yolks in a bowl with a hand-held electric mixer for 3 minutes or until pale and mousse-like.
  • Slowly add boiling syrup to yolks, whisking constantly, and continue to whisk for 5 minutes or until mixture is very thick and about 3 times its original volume.
  • Crush strawberries with a fork to a coarse puree in a bowl.
  • Slit open vanilla pods and scrape seeds into another bowl.
  • Add cream and whisk until it forms soft peaks, then gently fold into egg mixture, followed by crushed strawberries.
  • Divide mixture between 8 x ¾-cup (185ml) glass serving dishes or ramekins, cover well with plastic wrap and freeze for at least 4 hours.
  • To serve, remove parfaits from freezer and leave to soften slightly at room temperature.
  • Pile a few strawberries on top and serve.
