THREE-TONE POWER SLAW



Three-Tone Power Slaw image

3/4 cup mayonnaise
3 tablespoons apple cider vinegar
1 1/2 tablespoons stone-ground mustard
1 1/2 tablespoons Sriracha
1 tablespoon sugar
1 1/2 teaspoons celery seeds
Kosher salt and freshly ground pepper
1/2 small green cabbage, shredded
1/2 small red cabbage, shredded
2 carrots, peeled and shredded (about 1 1/2 cups)
Whisk the mayonnaise with the vinegar, mustard, Sriracha, sugar and celery seeds in a medium bowl until smooth. Season with salt and pepper.

Steps:

  • In a large bowl, combine the green cabbage, red cabbage and carrots. Pour in the dressing and mix together. Let stand 30 minutes before serving. Season with salt and pepper, if needed.

MOROCCAN CARROT SALAD

Kosher salt and freshly ground black pepper
2 pounds large carrots, peeled
3 tablespoons olive oil
1 tablespoon harissa
2 cloves garlic, smashed
Juice of 1/2 lemon
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh parsley
Toasted sesame seeds, for topping

Steps:

  • Bring a large pot of salted water to a boil. Add the carrots and boil until tender, about 15 minutes. Let cool slightly, then slice into 1/2-inch coins.
  • In a large bowl, whisk the olive oil, harissa, garlic, lemon juice, 3/4 teaspoon salt and some pepper. Toss with the carrots to coat, then toss with the cilantro and parsley. Sprinkle with the sesame seeds and serve warm or at room temp, or refrigerate until ready to serve.

BROCCOLI SALAD WITH BACON

I can never get enough of this broccoli salad. Salty bacon, crunchy sunflower kernels, and a hint of sweetness and vinegar.

1 pound bacon
1 bunch broccoli, finely chopped
½ cup sunflower seeds
½ cup diced red onion
¾ cup mayonnaise
¼ cup white sugar
2 tablespoons white vinegar

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and let cool enough to handle, 5 to 10 minutes. Crumble.
  • Combine crumbled bacon with broccoli, sunflower seeds, and red onion in a large bowl.
  • Mix mayonnaise, sugar, and vinegar together in a separate bowl. Pour over broccoli mixture and mix together. Refrigerate for at least 20 minutes before serving.

1 large head cabbage, rinsed and shredded
1 large onion, peeled and chopped
1 green bell pepper, seeded and chopped
1 small can diced pimento, undrained
1/2 cup pickled relish (sweet pepper relish)
Salt
1/2 cup very warm water
3/4 cup white vinegar
1 cup sugar

Steps:

  • Trim cabbage and rinse with cold water. Place in mixing bowl. Add onion, bell pepper. Add pimento and pickled relish, and season with salt.
  • Mix together water and vinegar. Add sugar and stir to dissolve. Add to cabbage and mix well. Pat down and marinate overnight in refrigerator.

FRIED SHRIMP WITH TARTAR SLAW



Fried Shrimp With Tartar Slaw image

1/2 cup mayonnaise
1/4 cup sweet pickle relish
Juice of 1 lemon, plus lemon wedges for serving
8 cups coleslaw mix or shredded cabbage
2 scallions, sliced
Kosher salt and freshly ground pepper
24 extra-large shrimp (about 1 1/2 pounds), peeled and deveined
1 1/2 sleeves saltines (about 60 crackers)
1 1/2 cups all-purpose flour
1 tablespoon Old Bay Seasoning
4 large eggs
Vegetable oil, for frying

Steps:

  • Make the slaw: Mix the mayonnaise, relish and lemon juice in a large bowl. Add the coleslaw mix and scallions; season with salt and pepper and toss to coat. Cover and refrigerate until ready to serve.
  • Fill a large bowl halfway with ice water and 1 tablespoon salt. Butterfly the shrimp: Make a deep cut down the back of each shrimp so it can be splayed open. Soak in the ice water, 5 to 10 minutes.
  • Meanwhile, place the saltines in a large resealable plastic bag and finely crush with a rolling pin; transfer to a bowl. Mix the flour and Old Bay Seasoning in another bowl. Lightly beat the eggs in a third bowl. Dredge the shrimp in the seasoned flour, dip in the eggs and press into the crushed crackers, splaying each one open to coat inside the incision. Transfer to a plate, cover and refrigerate until ready to fry.
  • Heat 3/4 inch vegetable oil in a large heavy-bottomed skillet over high heat until a deep-fry thermometer registers 350 degrees F. Fry the shrimp in batches, turning once, until golden, 1 to 2 minutes. Drain on paper towels and season with salt. Serve with lemon wedges and the slaw.

2 c white vinegar
2 c sugar
3 lb green cabbage, grated about 1 large head
2 medium white onions, finely chopped
1 green bell pepper, finely chopped
1 carrot, peeled and grated
1 Tbsp salt
1 Tbsp mustard seed, optional

Steps:

  • 1. Combine the water, vinegar and sugar in a saucepan and bring to a boil. Set aside to cool. When cool, pour over the remaining ingredients. Mix well and refrigerate for at least 24 hours before serving.
