GERMAN NOODLE BAKE

This is a recipe I serve each year for my holiday open house because everyone looks for it. Store-bought noodles can be substituted, but I prefer homemade noodles...and so does everyone else. -Kathleen Meineke, Cologne, New Jersey

Number Of Ingredients 12

1 cup all-purpose flour
1/2 teaspoon salt
2 large eggs, lightly beaten
2 quarts water
CHEESE SAUCE:
3 tablespoons butter
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon paprika
1-1/2 cups whole milk
8 ounces Swiss cheese, diced
2 large eggs, well beaten

Steps:

  • In a small bowl, combine flour and salt. Make a well in center; add eggs. Stir together, forming a dough. , Turn dough onto a floured surface; knead 5-6 minutes. Divide dough in half. Roll each portion into a 12x9-in. rectangle. Dust both sides of dough with flour; roll up, jelly-roll style. Cut into 1/4-in. slices. Unroll noodles on paper towels; let dry for up to 2 hours., Preheat oven to 350°. In a Dutch oven, bring water to a rapid boil. Add noodles; cook 7-9 minutes or until tender., Meanwhile, in a small saucepan, melt butter. Stir in flour, salt and paprika until smooth; gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat; stir in cheese until melted. Stir in eggs., Drain noodles; transfer to a greased 11x7-in. baking dish. Top with cheese sauce. Cover and bake 20 minutes. Uncover; bake 10-15 minutes longer or until bubbly., ,

SOUR CREAM NOODLE BAKE



Sour Cream Noodle Bake image

Number Of Ingredients 11

1 1/4 pounds ground chuck
One 15-ounce can tomato sauce
1/2 teaspoon salt
Freshly ground black pepper
8 ounces egg noodles
1/2 cup sour cream
1 1/4 cups small curd cottage cheese
Pinch red pepper flakes
1/2 cup sliced green onions (less to taste)
1 cup grated sharp Cheddar
Crusty French bread, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Brown the ground chuck in a large skillet. Drain the fat, and then add the tomato sauce, 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, and then simmer while you prepare the other ingredients.
  • Cook the egg noodles until al dente. Drain and set aside.
  • In a medium bowl, combine the sour cream and cottage cheese. Add plenty of freshly ground black pepper and a pinch of red pepper flakes. Add to the noodles and stir. Add the green onions and stir.
  • To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, and then sprinkle on half the grated Cheddar. Repeat with noodles, meat and then a final layer of cheese. Bake until all the cheese is melted, about 20 minutes.
  • Serve with crusty French bread.
  • To freeze: Assemble the Sour Cream Noodle Bake in a disposable aluminum oven-proof pan and seal the top of the container with the lid or heavy foil. Seal the edges to prevent freezer burn and place in the freezer.
  • To cook from frozen: Place directly in a 375-degree F oven and bake, covered, for 45 minutes. Remove the lid and bake until lightly brown and bubbly, about 20 minutes more.

The layers are easily frozen, thawing prior to frosting with Seafoam Frosting #143253 that makes a wonderful do-ahead dessert.

fine dry breadcrumb
1 2/3 cups cake flour
1 1/2 teaspoons baking soda
1/2 teaspoon salt
3/4 cup butter (not tub or spread product) or 3/4 cup margarine, softened (not tub or spread product)
2 1/4 cups granulated sugar
1 1/2 teaspoons vanilla
3 large eggs
3 ounces unsweetened chocolate squares, melted
1 1/2 cups water (icy cold)

Steps:

  • Preheat oven to 375°F.
  • Grease three 8" layer cake pans; dust lightly with bread crumbs.
  • Sift dry ingredients together.
  • Cream butter and sugar; add vanilla.
  • Beat in eggs, one at a time, until well blended.
  • Beat in chocolate.
  • Add water alternatively with dry ingredients.
  • Divide batter into cake pans, spread to level, then push batter up the sides a little bit leaving a slight concavity in the center.
  • Bake for 25 to 30 minutes or until cake just begins to pull away from the sides of the pan.
  • Cool 5 minutes in the pan, then invert and cool completely on cooling racks.
  • If necessary for even frosting, cut the tops level.
  • Frost layers, staking them, and sides with your favorite frosting (I like coffee flavored Seafoam Frosting).
  • With your spatula, quickly pull frosting up in peaks all over the cake.

This is an ice cream pie that my mom used to make & call Baked Alaska - the easiest 7 minute version. I entered it in our county fair & won Best of Show, a gift certificate, & more but the best part was that the judges raved about it leaving only a puddle covered with huge ribbons.

1 purchased chocolate graham wafer pie crust
1 quart peppermint ice cream
3 egg whites
3/4 cup confectioners' sugar
1 teaspoon vanilla
4 ounces chocolate chips

Steps:

  • Bake at least one day before serving so that it hardens up.
  • Pack ice cream on crust without too much pressure so crust doesn't crack.
  • Freeze.
  • Beat egg whites adding vanilla and sugar until stiff peaks form.
  • Seal ice cream with meringue.
  • Broil until light brown.
  • Watch it closely.
  • Freeze.
  • Melt cholocate chips with 1 to 2 teaspoons water and pour over top.
  • Add cherry or sprinkles.

1 pound lean ground beef
1 tablespoon butter
1 teaspoon salt
⅛ teaspoon ground black pepper
¼ teaspoon garlic salt
1 cup tomato sauce
1 cup cottage cheese, creamed
1 cup sour cream
1 cup chopped green onions
1 cup shredded sharp Cheddar cheese

Steps:

  • Cook noodles in boiling salted water. Rinse in cold water and drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Brown meat in butter; add salt, pepper, garlic salt and tomato sauce. Simmer for 5 minutes. Mix cottage cheese, sour cream, onions, meat sauce and noodles. Place in a casserole dish and sprinkle with cheddar cheese
  • Bake, uncovered, at 350 degrees F (175 degrees C) for 20 to 25 minutes.

3/4 cup shredded cheddar cheese
1 (8 ounce) package noodles, cooked and drained

Steps:

  • Brown hamburger, onions, and spices until cooked.
  • Add tomato sauce and simmer 15 minutes.
  • Mix cream cheese and sour cream.
  • In 2-quart casserole, put 1/3 noodles, 1/3 cream mix, 1/3 meat mix.
  • Repeat twice.
  • Sprinkle cheddar on top.
  • Bake at 350° for 20 minutes.

1 boneless moose or beef top sirloin steak (about 1 inch thick and 1-1/2 pounds)
1/4 cup cornstarch
1 tablespoon ground mustard
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons canola oil
1 can (14-1/2 ounces) diced tomatoes, undrained
1 medium onion, thinly sliced
1 medium carrot, diced
Hot cooked noodles, optional

Steps:

  • Preheat oven to 350°. Cut steak into serving-size pieces. Combine the cornstarch, mustard, salt and pepper; rub half over steak. Pound with a meat mallet to tenderize. Rub with remaining cornstarch mixture; pound on both sides with the mallet. , In a large skillet, brown steak in oil. Transfer to a greased 2-1/2-qt. baking dish. Top with tomatoes, onion and carrot. Bake, covered, until meat is tender, 1-1/4 to 1-1/2 hours. Serve with noodles if desired.

2 cups sugar
3 units eggs
1.5 teaspoons vanilla
2.5 cups all purpose flour
0.5 cups cocoa
1.5 teaspoons baking soda
0.5 teaspoons salt
1.5 cups water

Steps:

  • Heat oven to 375. Grease and flour three 8 or 9 inch round baking pans.
  • In large mixer bowl, beat butter and sugar until creamy. Add eggs one at a time, beating well after each addition, beat 2 minutes. Add vanilla.
  • In seperate bowl, stir together flour, cocoa, baking soda, and salt; add alternatley with water to butter mixture, beating till well blended.
  • Divide batter evenly among prepared pans. Spread batter to edges of pans and slightly up sides. Bake 25 to 30 minutes or until cake begins to pull away from sides of pans. Cool 5 minutes; remove from pans to wire cake racks. Cool completely. Frost with any ready made frosting.

Steps:

  • Brown onion in dutch oven, then add peppper and chiles. Add meat and cook until browned. Drain any fat, add Bertolli sauce and stir to mix. Toss in pasta, top with cheeses and place on low heat coals. When it bubbles, add cheeses and cover with lead or foil til cheese is melted. Serve with sourdough bread fresh veggies.
