Steps:
- Combine the BBQ sauce ingredients in a small saucepan and set over medium-high heat. Bring to a simmer and cook for 5 minutes until the sugar has dissolved. Remove from the heat and allow to cool to room temperature.
- Combine the seasonings for the chicken then dust the chicken on both sides with the spice mixture, making sure the chicken is completely covered.
- Cook the chicken on a hot grill (or a griddle pan on the stove), basting with the BBQ sauce continuously until the chicken is sticky, glossy and cooked through. Approximately 5-6 minutes per side.
- Remove the chicken from the heat and allow to rest for at least 5 minutes before slicing and serving.

Steps:
- In a mixing bowl, whisk together the lemon juice, olive oil, oregano, rosemary, chile flakes, nutmeg, salt, pepper and garlic. Place the chicken pieces in a resealable bag and pour the marinade in, coating all of the meat. Allow the chicken to marinate, refrigerated, 1 to 4 hours or up to overnight.
- Set up a grill for cooking with indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Allow the temperature to come up to 375 degrees F.
- Remove the chicken from the marinade. Place the chicken pieces skin-side up on the indirect-heat side of the grill and close the lid. Cook the chicken until almost cooked through, about 10 minutes. Move the chicken pieces over to the direct heat side of the grill and cook until nicely charred and cooked through, 2 to 3 minutes per side. Remove from the grill and allow to rest for 5 minutes before serving.
MOM'S TO DIE FOR BBQ CHICKEN
Everyone who has ever tasted this loved it!! I actually use expired buttermilk, because it just tastes better. Marinating time is not included.

- Preheat the grill to medium (or preheat the broiler with the rack placed 6 to 8 inches away from the heat). Place the chicken, naked at first, on the grill or under the broiler and cook with the grill covered for about 10 minutes on each side, until the chicken is—to your best estimation—about 2/3 cooked. Watch for smoke and flare-ups.
- Now baste the chicken with the barbecue sauce and give it another 5 minutes or so on each side, basting as necessary and checking to see that it’s caramelizing nicely, but not burning. When the outside looks the way you like it, and it’s cooked throughout, let it sit for a few minutes off the heat and serve.
