Quick tomato risotto image

Making risotto doesn't have to involve hours of stirring over the stove, as this easy tomato recipe proves

250g risotto rice
1 onion , finely chopped
50g butter
250ml vegetable stock
500ml carton passata
500g punnet cherry tomato
100g ball mozzarella , drained and cut into large chunks
grated parmesan (or vegetarian alternative) and shredded basil , to serve

Steps:

  • Tip the rice, onion and half the butter into a large microwave-proof bowl. Cover and cook in the microwave on High for 3 mins. Stir in the stock and passata, then continue to cook, uncovered, for 10 mins. Give it a good stir and mix in the tomatoes and mozzarella. Microwave on High for a further 8 mins until the rice is cooked and the tomatoes have softened.
  • Leave the risotto to relax for a few mins, then stir in the remaining butter, parmesan and basil. Season to taste and serve straight from the bowl.

Basic Microwave Risotto image

Microwave Risotto is great because of its forgiving nature; if you forget it for a half hour, nothing is lost. Also, it is a wonderful clean-out-the-fridge, use-your-imagination, I-just-bounced-five-checks recipe. It reheats well too. You can use margarine or olive oil in place of the butter, and you can use apple juice or white grape juice in place of the wine.

3 tablespoons butter
1 clove garlic, minced
1 onion, chopped
1 ½ cups vegetable broth
1 cup uncooked Arborio rice
¾ cup white wine
¼ cup grated Parmesan cheese

Steps:

  • In a 3 quart, microwave safe casserole dish combine butter, garlic and onion. Place dish in microwave and cook on high for 3 minutes.
  • Place vegetable broth in a microwave safe dish. Heat on microwave until the broth is hot but not boiling (approximately 2 minutes).
  • Stir the rice and broth into the casserole dish with the onion, butter and garlic mixture. Cover the dish tightly and cook on high for 6 minutes.
  • Stir wine into the rice. Cook on high for 10 minutes more. Most of the liquid should boil off. Stir the cheese into the rice and serve.

This is a GREAT risotto though it's not made in the traditional way. It takes about the same length of time compared with the stove top version, but the advantage is that you don't have to stay with it. I usually serve this with a piece of sirloin steak and a green salad.

2 tablespoons olive oil
1 onion, finely diced
1 1/3 cups arborio rice
1 liter chicken stock
1 (400 g) can diced tomatoes
1/2 cup grated romano cheese
2 teaspoons butter
extra romano cheese (to garnish)

Steps:

  • Place stock in a saucepan and bring to boil on stove. You can use the stock cold if you can't be bothered doing this but the risotto will take longer to cook.
  • In a large microwave casserole dish, with a lid, cook onion in the oil for 2 mins on high.
  • Add rice and cook a further 2 minutes in microwave oven.
  • Add chicken stock and tomatoes and cook, covered, on high for about 15- 20 mins until liquid is almost absorbed.
  • Allow to stand for 5 mins then fold in the romano and butter.
  • Sprinkle extra romano on top to serve.
  • Note: If you wish you can substitute the canned tomatoes for fresh, skinned tomatoes,which gives a slightly different result.

Yield Serves 3 as a first course, 6 as a side dish

Number Of Ingredients 10

2 tablespoons unsalted butter
2 tablespoons olive oil
1/2 cup minced yellow onion (about 1/4 pound)
1 tablespoon minced garlic (about 4 cloves)
1 cup Arborio rice
2 cups canned Italian tomatoes, pureed with juice
1 1/4 cups homemade or canned chicken broth
Freshly ground black pepper
1/3 cup freshly grated Parmesan cheese
coarse salt (optional)

Steps:

  • 1. Heat butter and oil in a 10-inch quiche dish or 11" x 8 1/2" x 2" dish, uncovered, at 100% for 2 minutes
  • 2. Stir in onions and garlic. Cook, uncovered, at 100% for 4 minues. Add rice and stir to coat. Cook for 4 minutes more.
  • 3. Add tomatoes and broth. Cook, uncovered, at 100% for 9 minutes. Stir well and cook for 9 minutes more, 14 mintues for a thoroughly creamy risotto.
  • 4. Remove from oven. Stir in pepper and cheese, add salt to taste, if desired, and serve hot.
  • To serve 6 as a first course, 10 as a side dish. Increase broth to 2 3/4 cups and double all other ingredients. Heat butter in a 14" x 11" x 2" dish for 2 minutes. Add onions and garlic and cook for 3 minutes. Add rice and cook for 4 minutes more. Stir in tomatoes and broth and cook for 18 minutes. Stir and cook for 18 minutes more. Remove from oven. Stir in pepper, cheese, and salt to taste.

175ml white wine
850ml hot vegetable stock
500g frozen pea and bean mix (available in Waitrose)
100g pack asparagus tips
100g soft goat's cheese , or vegetarian alternative
handful of mint leaves, roughly torn

Steps:

  • Measure the rice into a large microwaveable bowl, then pour in the wine and a third of the stock. Cover with cling film, then microwave on High for 10 mins. Stir the rice, then add another third of the stock, re-cover and microwave again for 3 mins.
  • Stir the rice again, then add the frozen veg, asparagus and the rest of the stock. Re-cover and microwave for 7 mins. Stir in the cheese and mint, then leave the risotto to stand for 2 mins before serving.

25 g butter
1 tablespoon olive oil
3 shallots, finely chopped
175 g arborio rice
1 tablespoon tomato puree
1 (400 g) can chopped tomatoes
600 ml light vegetable stock
25 g parmesan cheese or 25 g cheddar cheese, grated
3 tablespoons fresh basil, chopped

Steps:

  • Preheat the oven to 180 deg C.
  • Then melt the butter with the oil in a heavy-based pan and fry the shallot until soft (but not coloured) i.e. for about 5-10 minutes should be great.
  • Next, as you turn the heat up slightly, add the rice and stir to coat it thoroughly with the buttery juices.
  • Add the puree and the tomatoes and stir well.
  • Add a ladle of stock and allow that to bubble!
  • Then add the rest of the stock and bring up to a simmer.
  • Stir once, transfer to a warm ovenproof dish and put it (uncovered) in the middle of the oven.
  • After 10 minutes, remove it and stir once.
  • Return to the oven for 10 minutes.
  • When the risotto is ready, take it out, stir in the cheese and basil.
  • Season and leave to stand for a few minutes before serving.

25g butter
1 onion, chopped
3 garlic cloves, crushed
300g risotto rice
1 vegetable or chicken stock cube, or use 700ml fresh stock
400g can cherry tomatoes
50g parmesan or vegetarian alternative, grated
small handful of basil, leaves picked
weighing scales
measuring jug
chopping board
sharp knife
garlic crusher
can opener
grater
large ovenproof pan with a lid
wooden spoon
oven gloves

Steps:

  • Before you get started, take a look at our weighing and measuring skills guide. Heat the oven to 200C/180C fan/gas 6. Melt the butter in a large ovenproof frying pan over a medium heat and fry the onion for 3-4 mins until starting to soften. Add the garlic and cook for another minute, stirring the whole time. Tip in the rice and mix well to coat in the buttery onion mixture.
  • If you're using a stock cube, boil the kettle. Crumble the stock cube into a jug and carefully measure in 700ml hot water from the kettle, stirring to dissolve the cube. If using fresh stock, warm this in a pan over a low heat until steaming.
  • Add the cherry tomatoes and hot stock to the rice, season with salt and pepper and stir to combine.
  • Cover with a tightly fitting lid and bake for 20 mins. Carefully remove from the oven using oven gloves and stir - the rice should be just cooked, with a little bite. The risotto may still look quite runny at this stage.
  • Stir through most of the cheese, replace the lid and leave to stand for 3-4 mins. Sprinkle with the rest of the cheese and the basil to serve.
