LOGA'S MICROWAVE CHICKEN
Microwave adapted version of recipe given to me by old friend from Ceylon. Can be baked in oven too.

- In a large, round microwave safe casserole dish combine the ketchup, curry powder and cayenne powder and mix together. Add chicken pieces and turn to coat. Arrange chicken legs in a fan, with the thin part of the legs in the center of the dish. Cover and cook in the microwave on high for 12 to 15 minutes or until chicken is cooked through and juices run clear.

SLOW-COOKER BARBECUE CHICKEN THIGHS
Meet your new favorite party dish! Sweet and smoky with just the right amount of spicy kick, these barbecue chicken thighs are a crowd pleaser that'll make every host's life a little bit easier. Here's why this recipe is so good: First, thighs are the perfect cut of chicken for the slow cooker, because they contain more fat, which means they don't dry out as easily as breasts. Second, the sauce is homemade-and homemade does not equal hard in this case. If you can chop an onion, you can make this sauce, and it is so worth it! We've made sure that there's enough sauce to coat the chicken while it cooks, and some extra to add as a finishing touch, because let's be real-it's all about the sauce when barbecue's on the menu!

Steps:
- Spray round 4-quart slow cooker with cooking spray.
- In 2-quart saucepan, heat oil over medium heat. Add onion; cook 4 to 6 minutes or until softened.
- Add garlic, chili powder and pepper flakes; cook and stir 1 minute. Add ketchup, brown sugar, molasses, vinegar, Worcestershire sauce and mustard; heat to boiling. Reduce heat to low; simmer uncovered 10 to 15 minutes, stirring occasionally, until sauce thickens slightly. Remove from heat. Add 1/2 cup of the sauce to slow cooker; cover and refrigerate remaining sauce.
- Season chicken with salt; added to slow cooker. Toss chicken with sauce in slow cooker to coat. Cover; cook on Low heat setting 3 hours and 30 minutes to 4 hours or until chicken is cooked through (at least 165°F).
- Drain liquid from slow cooker; discard liquid. Pour reserved sauce over chicken; toss to coat. Increase to High heat setting. Cover; cook 15 to 20 minutes or until hot.

- To make the BBQ Sauce.
- In a medium microwave safe bowl add everything except the chicken.
- Cook, covered on 100% power 8-10 minutes, until vegetables are tender, stirring twice:cover and set aside.
- Cooking the chicken.
- In a 12x8-inch microwave-safe baking dish, place chicken in a single layer with the thicker pieces on the ends.
- Cook covered, on 100% power for 10 minutes, rearranging once.
- Discard drippings.
- Spoon BBQ sauce over the chicken pieces.
- Cook on 100% power 6-8 minutes, until chicken juices run clear, rearranging once.

OVEN-BAKED BBQ CHICKEN THIGHS
So delicious, you'd never know that you didn't grill these! The recipe is from the Yellow Bliss Road website. I decreased the salt and added a little cayenne for fun. Sticky, delicious goodness! This will be on your summer go-to rotation.

- 1. Preheat your oven to 400 degrees Line a large rimmed baking sheet with nonstick foil or parchment paper and spray with nonstick cooking spray.
- 2. In a small bowl, combine paprika, salt, garlic powder, onion powder and black pepper.
- 3. Pat chicken dry with paper towels and rub in the seasoning blend, then arrange chicken skin side up on the prepared baking sheet. Pour about ¾ of a cup of bbq sauce into a small bowl and brush the chicken lightly with the sauce on both sides, finishing with the chicken skin side up. Set the remaining bbq sauce aside to use later (do not leave the brush in the sauce).
- 4. Bake in the 400 degree oven for 20 minutes. Remove chicken from the oven and, using a clean brush, baste with the reserved sauce. Bake for 20 minutes more. Chicken should register 165 degrees F on a meat thermometer.
- 5. Switch to the broiler and broil for 2-3 minutes or until the sauce caramelizes.
- 6. Remove from the oven and let the chicken rest for 5-10 minutes before serving.

BRAISED AND BARBECUED CHICKEN THIGHS
This recipe was in my Southern Living 2003 Annual cookbook. I am posting it for a request for thighs. This is melt in your mouth good. I am amazed at how well it turned out. Delicious!!!

Steps:
- Heat oil in a skillet over medium heat, add chicken and saute for 6 minutes, turning once.
- Combine juices in a large bowl.
- Stir together cornstach and 1 TBSP juice mixture in another bowl and set aside.
- Stir soy sauce and next 6 ingredients into remaining juice mixture, pour over the chicken.
- Bring to a boil, cover, reduce heat to low and simmer 35 minutes, turning chicken after 20 minutes.
- Uncover chicken and stir in cornstarch mixture.
- Cook, stirring occasionally, 5 minutes or util sauce is thickened.
- Serve on a bed of rice topped with the green onions.

- Preheat grill to medium-high heat.
- Whisk together ketchup, vinegar, brown sugar, molasses, Worcestershire sauce, mustard, garlic powder, onion powder, pepper and water. Reserve 1/3 cup and set aside.
- Combine ketchup mixture and chicken in a gallon-size slider bag or large bowl; refrigerate and marinate for at least 1 hour to overnight, turning the bag occasionally. Drain the chicken from the marinade; discard marinade.
- Make drainage holes in a sheet of Reynolds Wrap® Non-Stick Foil with a grilling fork. Place foil sheet on grill grate with non-stick (dull) side facing up. Immediately place chicken on foil.
- Add chicken to grill and cook, flipping once and basting with reserved 1/3 cup marinade until cooked through, about 10 to 12 minutes on each side.
- Serve immediately, garnished with parsley, if desired.

- In a mixing bowl, combine BBq sauce, worcestershire, vinegar, soy sauce, brown sugar, mustard, salt, and pepper. Blend well.
- Lay chicken in 1 layer in a well greased baking dish.
- Pour sauce evenly over top of chicken.
- Bake at 350 degrees for 40 minutes.
- Turn over and bake an additional 35 minutes.
