Fast & tasty method to make a dish of (almost) pie filling, fresh fruit desert ...also may sprinkle cinnamon or add a few drops of extract before microwaving (as you prefer)

Ingredients

1 peach
1 tablespoon butter
3 teaspoons Splenda sugar substitute

Steps:

slice peach thinly.
chop up butter and sprinkle over fruit.
sprinkle splenda over the top.
cover microwavable dish with plastic wrap and microwave 1 min on high.
immediatelly pull wrap off with a fork, taking care to avoid burning on steam, allow to cool and eat.

I found this recipe for Microwave cooking. Haven't made it yet but it also looks suitable for passover. The recipe also suggests canned peaches if fresh are not available.

Ingredients

4 peaches, halved and stoned
6 macaroons, chopped
1/4 cup almond meal
1/4 cup sugar
30 g butter, melted
1 tablespoon brown sugar

Steps:

Place peaches in microwave safe dish.
Combine all other ingredients together and spoon into peach cavity.
Cover with paper towel or plastic wrap and cook on HIGH for 2 minutes.
Serve with mascarpone cheese or cream or ice cream.
So easy!

In a small microwavable bowl, combine peaches, 2 tbsp. brown sugar, and ½ tsp. cinnamon. Heat in microwave on high for 1 ½ minutes or until peaches are completely defrosted. Stir mixture.
Place butter into a microwavable ramekin. Heat on high for 30 seconds or until butter is completely melted. Evenly pour peach mixture over butter. Set aside.
In a small mixing bowl mix flour, milk, ½ tsp. cinnamon, granulated sugar, extract, baking powder, and salt. Spread flour mixture on top of peach mixture.
Heat in microwave for 1 minute or until dough is done. Do not overcook. Remove from microwave and immediately sprinkle 1 tbsp. brown sugar on top of cobbler.
