Baked Apricots image

Baked Apricots dessert is the perfect summer dessert. Serve it with ice cream and cover in its own syrup that is a mix of apricots, cinnamon, butter and vanilla. Just Perfection!!!

Number Of Ingredients 7

6 apricots
2 tbsps butter
3 tbsps raw cane sugar (you can use brown sugar, regular sugar or sugar substitutes to your choice. )
1 tbsp vanilla extract
1 tsp cinnamon
6 scoops vanilla ice cream (1 big scoop per person or as desired)
6 cinnamon sticks (optional) (for garnish)

Steps:

  • Make sure butter is room temperature.
  • Wash and dry the apricots. Cut them in half and remove the seed.
  • Place apricots in a baking tray of your choice.
  • Turn oven on at 375 degrees. I used a toaster oven because the baking tray I was using is not too big.
  • In a bowl mix sugar, vanilla and butter. Add cinnamon too. I used a spoon and mixed for about 30 seconds to a minute. I mixed until it became a homogeneous, thick buttery mix. Scoop with a spoon and place the buttery mix in the middle of each apricot half. Fill it up and use the left overs to slather a bit on the sides too.
  • Bake for about 12 minutes.
  • Let the baked apricots cool down for about 10 minutes.
  • Serve 2 halves per person. Add Ice Cream on top and pour few tbsps of the syrup on top. Add a cinnamon stick on the side of the plate as garnish. Serve fast because ice cream will start melting since the apricots are still warm. Enjoy:)

Baked Stuffed Apricots image

A cookie-crumb filling turns these apricots into a delectable dessert.

4 ripe apricots, cut in half lengthwise, pits removed
8 amaretti cookies (3 to 4 ounces; plain biscotti can be substituted)
1 tablespoon unsalted butter, at room temperature
1 tablespoon brandy
1 large egg yolk
1/2 cup heavy cream, whipped to soft peaks (optional)

Steps:

  • Heat oven to 375 degrees. Place apricot halves in baking dish, cut-side up. Place cookies on a clean surface. Using a rolling pin, crush the cookies into fine crumbs, and transfer to a small bowl. Add butter, brandy, and egg yolk, and, using a wooden spoon, mix to combine.
  • Place about 1 tablespoon of the cookie mixture into the cavity of each apricot half. Bake until the apricots are tender, 25 to 35 minutes, depending on the ripeness and size of apricots. Serve with a dollop of whipped cream on the side.

This is a super quick and delicious dish to put together. I listed it as a side because we eat it with veggies and a meat, but it could be used as a desert. Either way it is very good.

1 15 ounce can apricots
1 sleeve ritz crackers, crushed
1/4 cup brown sugar
1 stick butter (i use smart balance), melted or cut in pats

Steps:

  • 1. Preheat oven to 350 degrees. Spray 8 inch square pyrex dish, (or one of approximate size). Pour apricots with juice in dish, sprinkle brown sugar over, top with 1/2 the butter, sprinkle crushed Ritz crackers over mixture, covering well. Top with rest of the butter. Bake until mixture is bubbly and crackers are slightly browned, approximately 20-25 minutes.

  • Sprinkle with sugar, dot with butter & bake until tender, about 15 minutes, or until the apricots are caramelized with the sugar but still retain their shape.
  • Serve hot with creme fraiche or vanilla ice cream.

I had not thought about apricots for a long time, but we had an apricot dish when a group that I belong to ate at the Woodford Reserves for our Christmas celebration. Their apricots did have bourbon and were delicious and a little different than the usual casseroles. I thought I would be able to see their recipe on line, but could not find it. I did find a couple sites that talked about this southern dish. They compared the apricots and ham to cranberries and turkey. I tried it out for a brunch that I was having and found them to be very good. Even my DH who turned up his nose, but thought that he should try them really did like them.

3 (15 ounce) cans apricots
3/4 cup brown sugar
3/4 cup butter
50 Ritz crackers or 50 town house crackers
spinkle cinnamon

Steps:

  • Spray casserole dish with PAM.
  • Lay apricots pit side up in pan.
  • Sprinkle brown sugar over the top and them sprinkle some cinnamon.
  • Crush crackers and put on top.
  • Melt 1 to 1 1/2 sticks butter and pour over crackers.
  • Bake at 325 for 40 minutes.

My family first sampled baked fruit years ago while dining out. They liked it so much I decided to create my own version. The result was this attractive and tasty dish.

1 can (16 ounces) apricot halves, drained
1 can (16 ounces) pear halves, drained
2 cans (15 ounces each) plums, drained and halved
1 can (29 ounces) peach halves, drained
1 can (8 ounces) pineapple slices, undrained
1/3 cup packed brown sugar
1 tablespoon butter
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Steps:

  • In a greased 13-in. x 9-in. baking pan, starting at the 9-in. end, arrange rows of fruit in the following order: half of the apricots, pears and plums, all of the peaches, then remaining apricots, pears and plums. , Drain pineapple, reserving 1/2 cup of juice. Lay pineapple over fruit in pan. In a saucepan, combine the pineapple juice, brown sugar, butter, cinnamon and cloves. Cook and stir until sugar is dissolved and butter is melted. Pour over fruit. , Bake, uncovered, at 350° for 20-25 minutes or until heated through.

4 Rome apples
1/2 cup diced dried apricots
1/2 teaspoon ground ginger
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees. Mix 1/4 cup sugar and 1/3 cup water in an 8-inch square baking dish. Peel tops of apples; core with melon baller (leave the bottom intact).
  • In a bowl, toss dried apricots with remaining 1/4 cup sugar, ground ginger, and cinnamon.
