¾ cup Italian seasoned bread crumbs
¼ cup grated Parmesan cheese
¼ teaspoon seasoned salt
1 (9 inch) zucchini, peeled
¼ cup margarine or butter, melted

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper or aluminum foil lightly greased with cooking spray.
  • Cut the peeled zucchini in half lengthwise and remove the seeds. Slice the zucchini ito 1/2 x 1/2 x 4 inch pieces.
  • Combine the bread crumbs, cheese, and seasoned salt in a pie plate. Dip the zucchini fries into the melted margarine, then press into bread crumbs. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded zucchini onto the prepared baking sheet.
  • Bake the zucchini in the preheated oven until the fries are golden and tender, about 15 minutes.

3 medium 7-inch zucchini (cut into 1/2 inch x 3 1/2-inch "sticks" (about 1 1/4 pounds))
1/2 cup Panko breadcrumbs
1/3 cup white whole wheat flour (or all-purpose flour)
1/4 cup finely grated Parmesan cheese
1/2 teaspoon kosher salt
1/4 teaspoon onion powder
1/4 teaspoon ground black pepper
2 large egg whites
Nonstick cooking spray (olive oil or canola oil flavored)
1/2 cup non-fat plain Greek yogurt
2 tablespoons chopped fresh basil (or 1/2 teaspoon dried basil)
1 clove minced garlic (about 1 teaspoon)
1/4 teaspoon Worcestershire sauce
1/8 teaspoon kosher salt
1/8 ground black pepper

Steps:

  • Make the fries: Position racks in the center of your oven and preheat the oven to 425 degrees F. Coat a large, rimmed baking sheet with nonstick spray.
  • Spread the sliced zucchini onto paper towels or a damp kitchen towel. Lightly pat dry. Let rest on the towels while you prepare the coating.
  • In wide, shallow dish (a pie dish works well) combine the Panko, flour, Parmesan, salt, onion powder, and pepper. In a separate bowl that is large enough to coat the zucchini, briskly whisk the egg whites until lightly foamy.
  • Working five or six zucchini fries at a time, place the zucchini in the bowl with the egg whites, tossing to coat them evenly. Shake off any excess egg white, then add them to the bowl with the Panko. Coat them with the Panko, pressing it on lightly so that it adheres. Arrange the zucchini on the baking sheet. Line up the sticks so that they are near each other and all fit, but make sure they do not touch. Repeat with remaining zucchini.
  • Lightly but thoroughly coat the exposed sides of the zucchini with the cooking spray. Bake for 10 minutes, then remove from the oven and lightly coat with baking spray once more. Return to the oven, rotating the pan 180 degrees, then continue baking for 10 additional minutes, until the crumbles are crisp and golden and the insides are tender.
  • While the zucchini bakes, prepare the dipping sauce. In a small mixing bowl, whisk together all of the ingredients: the Greek yogurt, basil, garlic, Worcestershire, salt, and paper. Taste and adjust the seasoning as desired. Serve the fries immediately, with the sauce for dipping.

cooking spray
1 Tbsp dried oregano
1 Tbsp ground cumin
salt & pepper to taste
1 c chili sauce or mild taco sauce

Steps:

  • 1. Preheat oven to 500° F.
  • 2. Put zucchini sticks in single layer on a nonstick cookie sheet. Spray zucchini with cooking spray.
  • 3. Combine oregano and cumin and sprinkle over the zucchini fries; add salt & pepper to taste.
  • 4. Place in 500° F oven and cook 15 to 18 minutes. Top with chili sauce or taco sauce. Serve hot.

ZUCCHINI OVEN " FRIES"

These are really good and have the added bonus of very little fat! We eat these often during the summer, sometimes in place of oven "fries" made with potatoes. You can add some cayenne pepper for a kick if you want. Give them a try and tell me what you think! EDIT!: Given some reviewers advice, I tried them again. 45 minutes was way too long for us, we just ended up with a crispy shell and no zucchini left. But 30 minutes was very good, keeping the taste of the zucchini, with one turn. The problem with the "flouriness" not cooking away, I've found that if you spray them VERY well with cooking spray it resolves this problem for me. I'm editing the recipe to reflect this.

5 zucchini
1 egg white
2/3 cup flour
1 tablespoon cornstarch
1/2 teaspoon salt

  • Preheat oven to 400°F.
  • Lightly coat baking sheet with cooking spray.
  • Trim zucchini and cut in half lengthwise, then slice into 1/4 inch wide sticks resembling french fries.
  • Beat egg white with electric mixer until soft peaks form.
