1 cup picante sauce
1/4 cup mayonnaise
1/2 teaspoon salt
2 cups shredded lettuce
2 ripe avocados, diced
1 cup chicken, diced
1/4 cup red onion, diced
1/4 cup ripe olives, sliced
3/4 cup cheese, shredded
1 medium tomatoes, diced
6 pita bread, cut in half

Steps:

  • Combine 1/2 picante, mayo and salt, mix well.
  • Toss with lettuce, avocado, tomato, chicken, olives, and onion.
  • Spoon into pita pockets, top with grated cheese and drizzle with remaining picante sauce.
  • To warm pita bread, wrap in foil ans bake 10 min at 350.

2 (6 1/2 ounce) cans tuna in water, flaked and drained
1/2 cup sweet red pepper, diced
2 tablespoons chopped fresh coriander
1 tablespoon honey
1 tablespoon lime juice
1 tablespoon low-fat mayonnaise
1/2 teaspoon pepper
4 -5 drops hot pepper sauce (e.g. Tobasco)
1/4 teaspoon ground cumin
1/4 teaspoon salt
2 6-inch pitas, cut in half
1 cup English cucumber, thinly sliced (with peel)
2 cups alfalfa sprouts (not packed)

Steps:

  • Combine all ingredients EXCEPT pitas, cucumber and sprouts in a bowl.
  • Mix well.
  • Open pita pockets.
  • Line with cucumber slices and alfalfa sprouts.
  • Fill with tuna mixture.
  • Serve.

This is a Turkish sandwich based on a recipe from Carole Handslip's book, Step-by-Step 50 Great Sandwiches. When I make my own pita bread to go with them, I give this 5 stars! Serve with a minted yogurt sauce, such as recipe #36126, #36126.

1 slice bread
1/2 lb ground lamb
1 garlic clove, crushed
1 small onion, finely chopped
1 teaspoon ground cumin
1 tablespoon of fresh mint, chopped
salt and pepper
1 tablespoon pine nuts
1/4 cup flour (for coating)
1/2 cup oil
4 pita breads
1 onion, cut into thin rings
2 tomatoes, sliced (or cut into wedges)

Steps:

  • Preheat the oven to 425 degrees F.
  • Soak the bread in water for 5 minutes, then squeeze dry and add to the next 7 ingredients. Mix until thoroughly blended and malleable. Shape into small balls the size of a walnut, using dampened hands so that the mixture does not stick. Lightly coat in flour.
  • Shallow-fry for about 6 minutes, turning frequently, until golden brown.
  • Warm the pita bread in the oven for a few minutes until puffed up, then cut a thin strip off one side of each pita to make a pocket.
  • Fill pita with onion rings, tomato wedges, and a few Kofte.

1 (4 ounce) package crumbled feta cheese with dried basil and tomato
1 dash black pepper
1 2/3 cups diced cucumbers
1 1/3 cups seeded chopped tomatoes (romas have few seeds to start with)
1/4 cup chopped olive
3 tablespoons chopped red onions
3 tablespoons hummus
12 small pita pockets, halves
1/4 cup chopped fresh basil
3/4 cup gyros meat (optional)
1 1/2 cups fresh salad greens (not iceberg lettuce)
2 tablespoons olive oil

  • Combine first four ingredients until well mixed.
  • stir in cucumbers, tomatoes, olives, and onion.
  • brush pita pockets and toast until warm in toaster oven.

1 medium cucumber, peeled, seeded and finely chopped
1 large tomatoes, seeded and coarsely chopped
1 small sweet onion, coarsely chopped
1/4 cup olive oil
3 tablespoons white wine vinegar
1/2 teaspoon dried oregano, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
1 egg, beaten
3/4 cup soft breadcrumbs
1/4-1/2 cup milk
2 tablespoons finely chopped onions
1 teaspoon ground allspice (optional)
12 ounces extra lean ground beef
8 ounces ground pork
4 pita bread rounds, halved

Steps:

  • In a small bowl, combine cucumber, tomato, onion, olive oil, vinegar, oregano, salt and pepper. Cover and marinate in refrigerator a few hours or overnight.
  • In a small bowl combine egg, bread crumbs, milk, the 2 tbsp onion, allspice and pepper to taste. Add beef and pork and mix well. Shape into 24 meatballs.
  • Place meatballs in a baking dish in a single layer. Bake at 375F for 25 minutes or till done. Drain well on paper toweling.
  • To assemble sandwiches, place 3 meatballs into each pita bread half. Top with some of the cucumber and tomato mixture and a little of the marinating liquid.

1 medium tomato, finely chopped
1 small onion, finely chopped
1/2 jalapeno pepper, finely chopped
1 tablespoon minced fresh cilantro
2 tablespoons canola oil, divided
1 large sweet pepper, halved and seeded
1 large onion, cut crosswise into 1/2-inch slices
6 boneless skinless chicken breast halves (4 ounces each)
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

Looking for something different, delicious, and a little exotic? Its not everyday you hear people say "Last night I had a Moroccan style sandwich". This recipe is a combo of the usual suspects such as chicken, plums, pita bread, hummus, and some popular spices. An interesting but surprising combo that I know you will love if you give it a chance! This recipe really doesn't require measurments. (No one uses measurements when making a sandwich.) You can put out all of the ingredients buffet style and people can make them up how they like. As far as the veggies (and plums) go, you can either choose to serve them fresh OR cooked by sauteing in olive oil.

1 (12 ounce) package pita bread
1 (8 ounce) container hummus
1 1/2 lbs chicken tenders
1 green bell pepper, sliced thin
1 small vidalia onion, sliced thin
4 plums, pitted and sliced thin
1 pinch turmeric

1 pinch paprika
1 pinch coriander
salt and pepper
olive oil
chopped fresh parsley

Steps:

  • Rinse and pat dry the chicken tenders. Cut each tender into 3 pieces. Season with salt pepper and other spices. Cook the chicken however you like (oven, stove-top, or grill) until no longer pink. Set aside.
