- In a large nonstick skillet, cook the green pepper, onion, salad dressing and Italian seasoning for 5 minutes or until vegetables are tender. Stir in tomatoes; add fillets. Bring to a boil. , Reduce heat; cover and simmer for 10 minutes or until fish flakes easily with a fork. Serve with a slotted spoon.

- In a skillet, saute onion and garlic in oil until tender. Stir in tomatoes, wine, olives, parsley and salt. Bring to a boil. Cook, uncovered, for 5 minutes. , Add fillets. Reduce heat; cover and simmer for 12-15 minutes or until fish flakes easily with a fork. Remove fish to serving plates; keep warm. Simmer sauce, uncovered, for about 4 minutes or until it reaches desired thickness.

- Drizzle 1 tablespoon of oil into the pan, then sprinkle about 3 tablespoonfuls of fresh breadcrumbs (preferably a rustic loaf) over the oil.
- Roughly chop the fresh tomatoes, if using. Put the tomatoes in a bowl and add the oregano, ½ teaspoon of salt, a tablespoon of olive oil and mix together.
- Place pieces of fish on the breadcrumbs in the pan, sprinkle with ½ tsp salt and black pepper, then top with the tomato mixture.
