2 c fresh cranberries
1/2 c sugar
1/2 c walnuts or pecans
2 eggs, well beaten
1 c sugar
1 c flour
2/3 c melted butter

Steps:

  • 1. Spread cranberries in well-greased 10-inch pan; sprinkle with sugar and walnuts.
  • 2. Add eggs; continue to beat until light.
  • 3. Add sugar, flour and butter.
  • 4. Pour batter over cranberry mixture.
  • 5. Bake for 1 hour at 325 degrees or until golden brown.

½ cup coconut oil
½ cup cocoa powder
3 tablespoons honey
½ teaspoon vanilla extract

Steps:

  • Gently melt coconut oil in a saucepan over medium-low heat. Stir cocoa powder, honey, and vanilla extract into melted oil until well blended. Pour mixture into a candy mold or pliable tray. Refrigerate until chilled, about 1 hour.

  • Grease well a 10" pie plate. Spread the cranberries over the bottom of the pie plate and then sprinkle the 1/2 cup sugar and the chopped nuts over the cranberries.
  • Beat the eggs well. Add the sugar and continue beating until thoroughly mixed. Add the flour to the eggs and mix well. Then add the melted butter and the melted shortening and beat well again.
  • Pour the batter over top of the cranberries. Bake in a slow oven 325ºF - 350ºF for about an hour or until the crust is golden brown.
