IMPOSSIBLE BLENDER PIE



Impossible Blender Pie image

This is my grandma's favorite pie, she requests that I make it often. It is a custard type pie. During baking, the flour sinks to the bottom to make a crust! What could be easier? :)

4 eggs
1 cup sugar
1/4 cup butter, softened
1/2 cup flour
1/4 teaspoon salt
1/2 teaspoon baking powder
2 cups milk
1 cup shredded coconut
1 teaspoon vanilla
1/8 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F.
  • Put all ingredients in a blender.
  • Blend until all ingredients are well blended.
  • Pour mixture into a 10-inch, slightly greased, pie pan.
  • Bake for 1 hour.
  • May be eaten warm, but refrigerate any leftovers.

This is the easiest pie ever to make.

4 eggs
½ cup all-purpose flour
2 cups milk
¾ cup white sugar
1 cup sweetened flaked coconut
1 teaspoon vanilla extract
¼ teaspoon ground cinnamon, for dusting

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch pie pan.
  • Place the eggs, flour, milk, sugar, coconut, and vanilla extract into a blender. Blend on high speed until the coconut has been finely chopped. Pour this mixture into the prepared pie pan; sprinkle with cinnamon.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, about 45 minutes. Cool on a wire rack to room temperature; refrigerate until cold before serving.

3 eggs
1 1/2 cups sugar
3 tablespoons cocoa
5 ounces evaporated milk (1 small can)
1/4 cup butter
1 teaspoon vanilla

Steps:

  • Mix eggs, sugar,milk, and cocoa in blender for 1 minute.
  • Add 1/2 stick melted butter, pinch of salt, and 1 teaspoons vanilla.
  • Blend;pour into unbaked pie shell.
  • Bake at 350 degrees for 40-45 minutes.

  • For the crust, combine all the ingredients together in a small bowl and stir until the graham cracker crumbs are evenly moistened; the mixture will look like wet sand.
  • Press the mixture evenly into the bottom and all the way up the sides of a 9-inch pie plate. Bake for 8 minutes until just lightly golden.
  • For the filling, in a medium bowl with a handheld electric mixer (or in the bowl of a stand mixer fitted with the whisk attachment), beat the sweetened condensed milk, egg yolks, lemon juice and salt together for 2-3 minutes, scraping down the sides of the bowl as needed. Lightly tap the bottom of the bowl 2-3 times on the counter to pop any little air bubbles.

  • Preheat the oven to 325 degrees F making sure one of the racks is in the middle of the oven. Break the graham crackers into pieces and add them to a blender, food processor or ziploc bag and crush (or roll the bag with a rolling pin) until the crackers are finely ground. Mix in the sugar and butter (if using a ziploc bag, transfer the cracker crumbs to a bowl before adding ingredients).
  • Press the crumb mixture into the bottom and up the sides of a 9-inch pie plate. Bake the crust for 12-14 minutes, until it is just beginning to brown. Cool the crust completely on wire rack.
  • Measure out 3 tablespoons of the sweetened condensed milk and set aside in a small container (it will be used later). Whisk the remaining condensed milk with the egg yolks until smooth. Slowly whisk in the lemon juice. Pour the filling into the cooled crust and bake the pie until the edges are just set but the center still jiggles when the pie plate is lightly moved, about 15 minutes.
