Steps:
- As you peel and slice the apples, toss them with the lemon juice in a bowl.
- In a medium saucepan over medium heat, melt the butter, then add the apples with lemon juice. "Fry" the apples for several minutes in the butter, stirring frequently, for 5 - 10 minutes or until they begin to get tender.
- Stir in the remaining ingredients. Cook for about 5 - 10 minutes longer. Store in a covered glass jar or airtight container in the fridge. Serve warm over French toast, pancakes, cake, ice cream ... anything that goes well with apples ... or just eat them with a spoon.
BOURBON CANDY APPLES
Bourbon adds a rich flavor to these hand dipped caramel apples.

- Insert wooden sticks 3/4 of the way into the stem end of each apple. Place apples on a cookie sheet covered with lightly greased aluminum foil.
- Combine sugar, corn syrup and water in a large saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer until thermometer registers 290 degrees F (143 degrees C). Remove from the heat and stir in the bourbon if desired.
- Keep the saucepan over low heat to keep the caramel liquid for dipping the apples. Working quickly, carefully dip apples in the caramel. Place apples on the greased aluminum foil until coating has cooled and hardened.

BOURBON FRIED APPLES
This is a slightly healthier spin on traditional fried apples. The skin is left on, and the reduced butter and sugar are offset with flavor-boosting bourbon, raisins, cinnamon, and lemon juice. I use Cameos for this recipe, as they are naturally sweet and hold their shape well, but if you're using a tarter variety, you may wish to increase the brown sugar and omit the lemon juice. Golden rum can substitute for the bourbon.

- Combine water, butter, and Bourbon in a large skillet over medium heat; stir until butter melts. Add apples, raisins, brown sugar, and cinnamon; stir to coat. Bring to a boil, reduce heat to low, and simmer, stirring frequently, until apples have softened and liquid has reduced to a syrup, about 10 minutes. Stir lemon juice into apples and serve warm.

BOURBON-BUTTERSCOTCH BAKED APPLES
Baked apples are an overlooked dessert, in my opinion. These are served with a delicious sauce made with the liquid from the pan the apples were baking in. The apples and sauce may be made ahead and gently reheated before serving. From an October 1884 Bon Appetit from an article featuring Indian Summer Menus.Dark rum,cognac or scotch may be substituted for the bourbon.

Steps:
- Preheat oven to 375 degrees.
- Remove 1/2 -inch strip of peel around top of each apple, using vegetable peeler.
- Arrange apples upright in shallow flameproof baking dish just large enough to accomodate apples.
- Top apples with butter;sprinkle with brown sugar, then drizzle with bourbon.
- Bake until apples are puffed and tender, basting occasionally with pan juices, 30 to 50 minutes, depending on type of apple.
- Transfer apples to platter and keep warm.
- Stir cream into baking pan and bring to a boil over high heat.
- Reduce heat to medium-high and cook, stirring frequently, until sauce is reduced by half and coats spoon, 7 to 10 minutes.
- Remove from heat and stir in vanilla.
- Spoon sauce onto serving plates.
- Set apples in center and serve immediately.

- Preheat oven to 350°F. Peel skin off top third of each apple. Using small melon baller, scoop out stem and core, leaving bottom intact. Stand apples in 11x7x2-inch baking dish. Place 2 tablespoons toffee bits around apples in dish. Divide remaining bits among cavities of apples. Add 1/2 tablespoon bourbon and 1/2 tablespoon butter to cavity of each apple. Whisk cider, molasses, sugar and ginger in bowl; spoon over and around apples.
- Bake apples until tender, basting often with pan juices, about 1 hour 20 minutes. Transfer apples to bowls. Pour juices from dish into small saucepan. Boil juices until thick enough to coat spoon, about 6 minutes. Spoon sauce over apples. Serve apples warm with vanilla ice cream.

- Preheat oven to 400 degrees F. Core the apples – but not all the way – using an apple corer or a paring knife. You want to cut about 2/3 of the way down to remove the seeds if you don’t have an apple corer. Carefully cut a circle around the stem and cut about an inch downward. From there, use the same knife or a spoon, remove the core and the seeds.
- In a bowl, combine oats, brown sugar, flour, salt and cinnamon. Add softened butter and vanilla, and mix thoroughly with a fork and your hands until it becomes clumped together. If desired, you can also add nuts here! Stuff the mixture equally inside each apple. Sprinkle with additional cinnamon if desired.
- Place apples in a large baking dish. Pour apple cider and bourbon in the bottom of the pan, then bake for about 45 minutes. This will depend on the exact size of your apples (if using small/medium apples, start by baking for 30 minutes), but it is easy to keep an eye on them because a few times during the cooking process (every 10 minutes or so), you want to spoon the cider/bourbon mixture overtop of each apple. Once the skin looks all wrinkly and slightly darker in color, remove from the oven. Serve immediately with ice cream on top.
