Fried Pork Chops with Apples image

These fried pork chops with apples are cooked in an apple-dijon sauce until tender and flavorful!

4 boneless loin chops (about 1" thick)
½ teaspoon garlic powder
kosher salt & pepper to taste
1 tablespoon olive oil
2 tablespoons butter
½ red onion (sliced)
2 large tart apples (sliced)
⅔ cup apple cider (or as needed, not apple cider vinegar)
2 teaspoons grainy mustard
⅛ teaspoon cinnamon
2 sprigs fresh thyme

Steps:

  • Season pork chops with garlic powder, salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Brown pork chops about 5 minutes on each side or until browned (be sure not to overcook the pork). Remove from the pan, and set on a plate.
  • Add butter and onions to the skillet. Cook 2-3 minutes or until onions start to soften. Add apples and continue to cook until they begin to soften, about 5 minutes.
  • Whisk apple cider, mustard, and cinnamon, and add to the skillet with thyme. Simmer 2-3 minutes.
  • Add the pork chops, along with any juices on the plate, back into the skillet.
  • Push the pork chops down into the apples. Simmer an additional 2-3 minutes or until the sauce has cooked down slightly and the pork reaches 145°F with a meat thermometer.

4 tablespoons olive oil
2 teaspoons coarse salt, plus more for seasoning
1 teaspoon freshly ground black pepper, plus more for seasoning
4 boneless center-cut pork chops (1 1/4 pounds), cut 3/4 inch thick
1 large onion, cut into 1/2-inch dice
4 green apples (such as Granny Smith), peeled, cored, and cut into 1/2-inch dice
1/2 cup cider vinegar
1/2 cup golden raisins
1 teaspoon ground ginger
1/4 teaspoon dry mustard
Pinch of cayenne pepper

Steps:

  • Preheat oven to 400 degrees. Heat 2 tablespoons olive oil in an ovenproof skillet over medium heat. Sprinkle salt and pepper on both sides of pork chops; add to skillet. Saute until golden brown, about 2 minutes; flip. Cook 2 minutes more; place pan in oven. Roast until meat is cooked through and registers 155 degrees on an instant-read thermometer, about 5 minutes. Transfer to a platter.
  • Meanwhile, in a large saucepan, heat remaining 2 tablespoons olive oil over medium heat; add onion. Saute over medium heat until translucent and beginning to brown, about 6 minutes. Add apples; saute 4 minutes more. Add vinegar, raisins, ginger, mustard, and cayenne. Stir well to combine; cover. Continue cooking, stirring occasionally, until apples are very tender but hold their shape, about 3 minutes. Season with salt and pepper, and serve over pork chops.

4 cups chopped peeled apples (3 to 4 apples)
1/2 cup golden raisins
1/2 cup honey
3 tablespoons cider vinegar
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground mustard
1/2 teaspoon curry powder
1 tablespoon canola oil
4 boneless pork loin chops (3/4 inch thick and 6 ounces each)

Steps:

  • For chutney, in a large saucepan, combine the first eight ingredients; bring to a boil. Reduce heat; simmer, uncovered, 10-15 minutes or until apples are tender, stirring occasionally., Meanwhile, in a large skillet, heat oil over medium-high heat. Add pork chops; cook 4-5 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving. Serve with chutney.

4 Golden Delicious apples, chopped
2 teaspoons lemon juice
2 ounces golden raisins, a handful
1-inch piece fresh ginger root
3 tablespoons light brown sugar
2 cups all natural apple juice or cider, plus a splash for pan sauce
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
2 tablespoons vegetable oil or olive oil, 2 turns of the pan
4 (1-inch) thick center cut boneless pork loin chops, 6 to 8 ounces each
Salt and pepper
2 tablespoons butter

Steps:

  • Combine first 8 ingredients in a medium pot placed over medium high heat and cook until a chunky sauce forms, 10 to 12 minutes, stirring occasionally. If sauce begins to spatter as it bubbles, reduce heat back a little, but it should be allowed to reduce and form quickly. Once apples are soft and sauce forms, remove it from the heat.
  • Heat a large nonstick skillet over medium high heat. Add oil to the pan. Season chops on 1 side with salt and pepper. Using a pair of tongs, add chops to hot skillet seasoned side down. Season the opposite side of the chops with salt and pepper. Brown and caramelize the chops 2 minutes on each side, then reduce heat to medium and cook another 5 to 6 minutes, turning occasionally, until juices run clear. Remove chops from heat and let them rest a couple of minutes for juice to redistribute. Deglaze the pan with a splash of apple juice and 2 tablespoons of butter. Pour pan sauce over chops. Remove ginger from the sauce and top chops with generous portions of warm golden apple sauce.

Pork Chops with Apples is a simple dinner recipe perfect for any time of year! The apples are caramelized in butter with brown sugar, cinnamon, and honey. The pork chops are pan-seared to a beautiful golden-brown crust and are tender, juicy, and moist.

1 green apple (Granny Smith)
1 red apple (Gala)
2 tablespoons brown sugar
½ teaspoon cinnamon
2 tablespoons butter (divided)
1 tablespoon olive oil
3 tablespoons honey
1.5 lb pork loin chops (boneless (4 pork chops))
1 tablespoon olive oil
½ teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
2 tablespoons olive oil
fresh thyme

Steps:

  • Pat dry pork chops with paper towels.
  • Brush pork chops with 1 tablespoon of olive oil and season with salt and freshly ground black pepper, and Italian seasoning.
  • Allow the pork chops to rest while you prepare the apples as follows below. This brings pork chops closer to room temperature which will help them sear better.
  • I used 2 apples (1 red Gala apple and 1 green Granny Smith apple, for presentation purposes). Core the apples and slice each one length-wise.
  • Place sliced apples into a large bowl, add brown sugar, cinnamon, and mix. Let apples sit for about 10 minutes to release juices.
  • In a large pan (I used a large stainless steel skillet), heat 1 tablespoon of butter and 1 tablespoon of olive oil on high heat. Add sliced apples (without juice at the bottom of the pan) and cook on high heat for about 3 minutes on one side, checking periodically. After 3 or 5 minutes, flip sliced apples to the other side, reduce heat to medium and cook the apples for another 3 or 5 minutes. Remove from heat.
  • Cook the apples in a single layer, without overcrowding to get a slightly "roasted" appearance. That means you might have to cook apples in 2 batches. Use the remaining 1 tablespoon of butter for the second batch.
  • Depending on how hot your stove gets, it might take you less or more time to cook apples, the key is to brown them or even get a slightly "burned" effect. But don't overdo it, remove the cooked apples from the skillet once the apples have this "roasted" appearance.
  • Right after you remove the pan with roasted sliced apples from the heat, immediately add honey to the hot skillet - it will make apples sizzle and will caramelize them beautifully, off the heat.
  • For best searing results, use a cast-iron skillet. Heat a large skillet over medium-high heat for about 3 minutes to heat it through.
  • Add 2 tablespoons of olive oil - the oil should shimmer. Add the pork chops, and cook them on one side for 5 minutes, without moving.
  • Reduce the heat to medium, flip the pork chops over to the other side, and cook them on medium heat for about 5 minutes. Cook longer (depending on the thickness of your pork chops) until the pork chops are cooked through.
  • Spoon the cooked apples, together with the sauce from cooking the apples, over the pork chops. Top with fresh thyme.

Growing up, my Mom always served applesauce with her pork chops. Some of her chops were dry as a bone so they NEEDED the applesauce. These chops aren't dry at all. The mustard and the cooking method help to retain full flavour and moisture.

4 cups tart apples (peeled, cored and chopped)
2 tablespoons brown sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon
1 teaspoon fresh lemon juice
3/4 cup breadcrumbs (if using seasoned, omit spices)
1/2 teaspoon oregano
1/4 teaspoon sage
1/4 teaspoon pepper
3 -6 tablespoons Dijon mustard
4 boneless pork chops, 1/2 inch thick
vegetable oil (for frying)

Steps:

  • You will want the apples to be uniform in size. And you don't want the pieces too big or they will take too long to cook. Roughly 1/2 inch pieces will do perfectly.
  • In a medium pot, combine all the ingredients for the applesauce.
  • Cover and cook over medium-low heat for 30 - 40 minutes or until apples are tender. Stirring occasionally.
  • Preheat oven to 300°.
  • While the apples are cooking, combine the breadcrumbs, oregano, sage and pepper in a shallow bowl. One at a time, coat both sides of the pork chops with the Dijon. Press each side into the crumb mixture.
  • In a large, ovenproof skillet, cook the chops in the oil over medium-high heat for 4 - 5 minutes on each side.
  • Then place the skillet into the oven. Bake in the oven for about 20 minutes. This will finish cooking the chops through the center.
  • Your pork chops and your applesauce should be done right about the same time.
  • Remove the apples from the heat and use a potato masher to mash the apples until the sauce gets to desired consistency. You may want/need to use a blender of some sort (immersion, hand etc.) depending on the apples you chose.
  • Plate the pork chops with a dollop of applesauce on top. Serve with mashed potatoes and corn for a GREAT meal.

1 apple - peeled, cored, and sliced

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Melt butter in a large skillet over medium heat; cook and stir onion and apple slices in the melted butter until tender, about 5 minutes. Transfer onion and apple to a bowl.
  • Place pork chops in the same skillet; cook over medium heat until pork chops are browned on both sides, about 5 minutes per side.
