1 tablespoon salt
1/2 teaspoon salt
1 lb yellow wax bean, ends trimmed
2 tablespoons olive oil
2 tablespoons unsalted butter
3/4 cup whole blanched almond, coarsely chopped
1/4 teaspoon fresh ground black pepper

Steps:

  • Bring 4 quarts of water to a boil in a large pot. Add 1 tablespoon of the salt and the wax beans, return to a boil, and cook until just tender, about 3 minutes.
  • Drain and plunge into a bowl of ice water. Drain again and set aside.
  • Heat the oil and butter in a large skillet over medium heat. Add the almonds and cook, stirring often, until they begin to turn golden but not brown, about 2 minutes.
  • Transfer to a plate and sprinkle with the remaining salt and the pepper.
  • Place the beans in a large bowl, toss with the almonds, and serve.

The original recipe which I grew up with called for half yellow wax string beans (canned) and half regular green beans (regular cut) but since I haven't been able to find the yellow wax string beans canned for quite some time anymore, I just reluctantly made the green bean component all GREEN bans.

2 (10 1/2 ounce) cans cut green beans (drained)
2 (10 1/2 ounce) cans yellow wax beans (substitute green if can't find wax)
1 (10 1/2 ounce) can kidney beans (drained)
1 (10 1/2 ounce) can garbanzo beans, beans (chick peas, drained)
1 red onion (can substitute yellow, large)
1 bell pepper (large)
1 (1 ounce) jar pimiento (optional for color)
1 (4 ounce) can water chestnuts (optional for crunch)
1 1/2 cups sugar
1 3/4 cups vinegar (according to taste ( white, cider or wine vinegar)
2 cups salad oil (or adjust to taste if want less oil)
4 tablespoons water
3 teaspoons garlic granules or 2 fresh garlic cloves
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)
1 tablespoon parsley flakes

Steps:

  • Drain the canned beans and place in large bowl.
  • Cut the red onion (can use white but it is stronger) into slices, then separate into rings.
  • Cut the bell pepper into medium thin rings.
  • *Add optional pimentos if you are going to add them (for color).
  • *Add optional sliced water chestnuts if you are going to add them (for crunch).
  • Make dressing by combining dressing ingredients in the following manner.
  • With wire whisk or in food processor,.
  • Mix sugar and oil and process or beat in by hand until sugar is dissolved in oil. Then add vinegar as the processor is going and add add garlic, salt and pepper.
  • Pour dressing over salad.
  • Taste and adjust for balance of sweet/sour, add a little oil or water as needed if too strong.
  • Sprinkle dried parsley over the finished salad. It will soak into the dressing.
  • Let marinate and blend in refrigerator. It really gets good when it is refrigerated and sits overnight but can be eaten sooner.
  • This is a great dish to accompany picnic foods.

YELLOW WAX BEANS STRACOTTO IN SOFFRITTO WITH SALSA VERDE

2 tablespoons extra-virgin olive oil
1 pound yellow wax beans or yellow Romano beans, ends trimmed
1/2 teaspoon kosher salt
1/2 teaspoon double-concentrated tomato paste
1/2 cup Soffritto (page 28)
2 anchovy fillets (preferably salt-packed), rinsed, backbones removed if salt-packed, and minced
1/2 cup Salsa Verde (recipe follows)

6 anchovy fillets (preferably salt-packed), rinsed, backbones removed if salt-packed, and finely chopped
2 heaping tablespoons capers (preferably salt-packed), soaked for 15 minutes if salt-packed, rinsed and drained
3 garlic cloves
1/2 teaspoon kosher salt, plus more to taste
2/3 cup extra-virgin olive oil
3/4 cup packed fresh Italian parsley leaves
1/3 cup packed fresh mint leaves
1/4 cup packed fresh marjoram leaves
1 1/2 teaspoons fresh lemon juice, plus more to taste
(makes about 1 cup salsa)

Steps:

  • Heat the oil in a large sauté pan over medium-high heat until it is almost smoking and slides easily in the pan, 2 to 3 minutes. Add the beans, sprinkle with 1/4 teaspoon of the salt, and cook for about 2 minutes, until they are slightly browned. Move the beans to create a bare spot in the pan, add the tomato paste to that spot, and cook for 1 minute, stirring, to caramelize. Add the Soffritto and anchovies, and stir to combine the ingredients and to coat the beans with the Soffritto. Reduce the heat to low, season the beans with the remaining 1/4 teaspoon of salt, and cook for about 2 minutes. Add 1 cup of water to the pan, and simmer the beans until they are very tender, about 20 minutes for wax beans and 30 minutes for Romano beans. If there is still water in the pan, remove the lid, increase the heat to high, and cook until the water evaporates. Serve the beans warm or at room temperature. Transfer the beans to a serving dish, spoon 1/4 cup of salsa verde over them, and serve with the remaining salsa verde on the side.

  • Combine the anchovies, capers, garlic, salt, and half of the olive oil in the bowl of a food processor fitted with a metal blade or the jar of a blender. Add half of the parsley, mint, and marjoram leaves and pulse until the herbs are finely chopped. Turn off the machine and scrape down the sides of the bowl with a rubber spatula. Add the remaining herbs and the remaining olive oil and purée, stopping as soon as the ingredients form a homogenous paste, and adding more olive oil, if necessary, to obtain a loose, spoonable salsa. (You want to stop the machine as soon as you achieve the desired consistency, as the blade will heat the garlic and give it a bitter flavor. Also, over-processing the salsa verde will incorporate too much air, making it fluffy and also too smooth. I like to see some flecks of herbs in my salsa verde.) Turn the salsa verde out into a bowl and stir in the lemon juice. Taste for seasoning and add more salt or lemon juice if desired. Use the salsa or transfer it to an airtight container and refrigerate for up to two days-any longer and it will lose its pretty green color and vibrant flavor. Bring the salsa to room temperature, stir to recombine the ingredients, and taste again for seasoning before serving.

5 slice precooked bacon, chopped
1 Tbsp butter
1/2 c onion sliced thin
1 tsp each salt and pepper
1 Tbsp granulated sugar
2 tsp minced garlic
1/2 c white mushrooms, diced (about 4)
1 1/2 Tbsp white wine vinegar
2 can(s) 15 oz. each yellow wax beans, drained
SAUCE
1 Tbsp butter
1 Tbsp bacon grease
1/3 c french onion dip(ready to serve-not dry package)
1 1/2 tsp white wine vinegar
2 tsp granulated sugar

Steps:

  • 1. Place drained beans in a buttered casserole dish. Set aside.
  • 2. In a skillet add the chopped bacon, onion, mushrooms, salt, pepper and sugar. Slowly saute until onion start to shrink, about 20 minutes.
  • 3. Add garlic and saute another minute. Srizzle in the white wine vinegar. Stir to blend, season with more salt and pepper if needed.
  • 4. Pour mixture over beans in casserole and gently fold in. Set aside covered while making the sauce.
  • 5. Sauce: Combine the butter, bacon grease, onion dip, white wine vinegar and sugar in the slillet over medium heat . Stir to blend and combine well. Drizzle over bean mixture and fold in gently until well coated. Heat in warm oven or micro-wave until heated through. Note: You can place in the refrigerator until dinner and heat up until heated through about 25 minutes.
