Steps:
- Rinse clean plastic containers and lids with boiling water; dry thoroughly.
- Do not remake more than 8 cups of jam or jelly at one time. Spoon unset jam or jelly into large bowl; stir in pectin. Let stand 30 min., stirring every 5 min. Gradually add sugar, stirring after each addition until well blended. Stir additional 3 min. or until most of the sugar is dissolved and no longer grainy. (A few sugar crystals may remain.)
- Fill all containers immediately to within 1/2 inch of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours. Jam is now ready to use. Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year. If frozen, thaw in refrigerator before using.

KIWI JAM

Steps:
- Peel and chop kiwis, and place them in a deep saucepan with sugar and citrus juice. Jam bubbles during cooking, be sure you have enough headspace to avoid overflows.
- Cook the kiwi jam for about 10-15 minutes, until it reaches gel stage. Test for it on a plate placed in the freezer, or with a kitchen thermometer (220 degrees F).
- Ladle the finished kiwi jam into jars, leaving a small 1/4 inch headspace. De-bubble the jars, adjust headspace and then cap with 2 part lids.
- For a fridge or freezer jam, allow the jars to cool completely before storing in the refrigerator or freezer.
- If canning, process in a water bath canner for 5 minutes, then turn off the heat and leave the jars in the water for an additional 5 minutes before removing them to cool. Store any unsealed jars in the refrigerator, and place the sealed jars in the pantry. Sealed jars should last 12-18 months without losing quality.

- Mix sugar, rum, pineapple juice, lemon juice and coconut flavoring in a large bowl. stir until sugar is dissolved. You may want to warm this mixture slightly in microwave oven to help sugar dissolve.

- In a large saucepan, combine 3 cups mashed kiwi, pineapple juice, lemon juice and apples. Bring to a boil and then add the sugar; stir to dissolve, reduce heat and simmer for 30 minutes.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.

- Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
- Stem and crush strawberries thoroughly, one layer at a time. Measure exactly 5-3/4 cups prepared fruit into 6- or 8-qt. saucepot. Stir in lemon juice.
- Stir pectin into prepared fruit in saucepot. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in sugar. Return to full rolling boil and boil exactly 4 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
- Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.)
