This is a Rachel Ray 30 minute meal recipe. The flavors are amazing, even after warming it up the next day. I served this with Salsa Salad by Rachel Ray.

4 chicken breasts, boneless skinless
3 tablespoons splenda brown sugar
2 tablespoons chili powder
1/2 tablespoon ground cumin
1 tablespoon coriander
1 tablespoon grill seasoning
1 tablespoon extra virgin olive oil

Steps:

  • Place brown sugar, chili powder, cumin, coriander and grill seasoning in a gallon size food storage bag.
  • Drizzle chicken with EVOO. Use tongs to spread the EVOO over the chicken.
  • Place chicken in the bag with the seasonings and shake around until chicken is coated.
  • Heat a grill pan (or skillet) over medium high heat. Place chicken on pan and cook around 5 minutes. Turn to cook the other side. Check the chicken with a meat thermometer to ensure it reaches 165 degrees.
  • Enjoy.

This a weight watchers recipe that my sister-in-law gave me and my husband and I LOVE it. It's especially fast if you use precooked chicken.

1 Boboli whole wheat pizza crust
16 ounces chicken, cut into small pieces
6 tablespoons barbecue sauce (your favorite)
1/4 cup shredded lowfat mozzarella cheese
1/4 cup shredded fat-free cheddar cheese
1/2 cup regular shredded cheddar cheese
1/2 large red onion

Steps:

  • Preheat the oven to 450 degrees. Dice the onion and sauté the onion with 2 of the tablespoons of BBQ sauce. Add chicken and cook until chicken is cooked through.
  • Top your Boboli pizza with the remaining BBQ sauce, fat free cheddar, low fat mozzarella, onion chicken mixture, then the regular cheddar. Bake for approximately 10 minutes.

aluminum foil, Heavy Duty, 4 sheets (12x18 inches each)
4 chicken breast halves (1 to 1 1/4 lbs.)
1 cup barbecue sauce
1 (10 ounce) package frozen whole kernel corn or 1 (15 1/4 ounce) can whole kernel corn, drained
1/2 cup green bell pepper, chopped

Steps:

  • Preheat oven to 450*.
  • Center one chicken breast half on each sheet of Reynolds Wrap Everyday Heavy Duty Aluminum Foil. Spoon barbecue sauce over chicken. Top with vegetables.
  • Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.
  • Bake 18 to 22 minutes on a cookie sheet in oven.

1/2 cup ketchup
2 tablespoons finely chopped onions
2 tablespoons peach jam or 2 tablespoons apricot jam
2 tablespoons white vinegar
1 teaspoon Worcestershire sauce
1 1/2 teaspoons chili powder
1/8 teaspoon garlic powder
cooking spray
4 (6 ounce) skinless chicken breast halves (bone-in)

Steps:

  • Combine first 7 ingredients in a small saucepan; bring to a boil.
  • Reduce heat, and simmer, uncovered, 5 minutes.
  • Set aside 1/2 cup sauce; keep warm.
  • Coat grill rack with cooking spray; place on grill over medium-hot coals (350 to 400 degrees).
  • Place chicken, bone side up, on rack; grill, covered, 8 minutes on each side or until done, turning once and basting with remaining barbecue sauce.
  • Serve with reserved 1/2 cup barbecue sauce.
