Homemade Martini Olives image

Once you start making these Homemade Martini Olives, there's no stopping. Whether you're having a party with friends or making a party appetizer, these cocktail olives are a tasty treat. Plus, they make the perfect gift for any martini enthusiast.

2 (5.75 oz) jars Green Olives (see notes below)
8 ounces white wine vinegar
1 lemon (zested and juiced)
3 cloves garlic, finely minced
12 ounces Green Olives
4 ounces white wine vinegar
1 lemon (zested and juiced)
1 - 2 cloves garlic, finely minced

Steps:

  • Zest a lemon. Set aside.
  • Squeeze the juice from a lemon; remove seeds and discard.
  • Pour the olives (including juice) into a clean mason jar.
  • Add white wine vinegar, lemon zest, lemon juice and minced garlic. Stir.
  • Seal tightly and keep in the refrigerator. This keeps indefinitely.

BLUE CHEESE-STUFFED OLIVES MARTINI

2 large green olives, pitted
1 teaspoon good-quality blue cheese, such as Roquefort
1 teaspoon dry vermouth
3 ounces vodka (just over 1/3 cup)

Steps:

  • Stuff the olives with the blue cheese.
  • Add the vermouth to a martini glass and swirl to coat the glass. Freeze the glass until chilled, about 10 minutes.
  • When ready to serve, add the vodka to a cocktail shaker filled with ice and shake well. Strain the vodka into the prepared martini glass and garnish with the olives.

1 1/4 cups vodka
2 ounces dry vermouth
One 16-ounce jar onion-stuffed olives

Steps:

  • In a cocktail mixer, vigorously shake the vodka and vermouth. Drain the brine from the jar of olives and reserve 1/4 cup of the brine. Fill the jar with the reserved brine, vodka and vermouth until full. Marinate for at least 24 hours and up to 1 month, then serve.

I got the idea of Martini Olives (without the Martinis) from a colleague of mine from the New York Times, Denise Landis, from her lovely book, Dinner For Eight. I'm afraid mine are a slightly cut-back version, but I shouldn't apologise for that, as I don't feel ashamed. These aren't just great to have at a party, they're mighty fine to stash in jars and give as presents.

4 (8-ounce) jars pimento-stuffed green olives, this gives 4 cups
1/4 cup gin (or vodka if you prefer)
1 tablespoon vermouth
1 teaspoon chili oil

Steps:

  • Open the jars and drain the olives, putting them into a bowl. Pour in the gin, vermouth and chili oil and give them a stir. Leave to steep for half an hour or so while you get ready for your party. You can put any leftover olives in a jar with a lid for another couple of days, or indeed longer though it's doubtful that will arise.

4-6 green olives , pitted, plus 25ml of the brine
ice
150ml London dry gin
25ml dry vermouth , we used Noilly Prat

Steps:

  • Put two martini glasses in the fridge to chill. Thread the olives onto two cocktail sticks and set aside.
  • Fill a jug or mixing glass with the ice, then pour in the gin, vermouth and olive brine. Stir until the outside of the jug feels cold. Taste to make sure that it's icy cold and that you're happy with the dilution.
  • Strain the mix into the chilled glasses and garnish with the olive skewers.
