Apple Slice image

An easy Apple and Sour Cream Slice made from scratch.

140 grams (1 cup) plain flour or all purpose flour
65 grams (1/2 cup) icing sugar or powdered sugar
75 grams (3/4 cup) desiccated coconut
1/4 teaspoon salt
115 grams (1/2 cup or 1 stick) unsalted butter, melted
600 grams (2 and 1/2 cups) canned apple slices
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Zest of 1/2 lemon, optional
240 ml (1 cup) full fat sour cream
1 tablespoon caster sugar or granulated sugar
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch square pan with baking or parchment paper, ensuring two sides overhang (this will make it easier to remove the slice later).
  • In a large mixing bowl, add flour, sugar, coconut and salt. Stir together. Add melted butter and stir until combined. Mixture should resemble wet sand.
  • Place mixture into prepared baking pan. Press down using the back of a dessert spoon to form one even layer. Bake for 10-12 minutes or until crust is just golden on the edges. Remove from oven.
  • Apple fillingIn a large mixing bowl, add apples, cinnamon, nutmeg and lemon zest. Stir to combine. Pour apples over crust (it's ok if the crust is still hot) and spread out to form one even layer.
  • Dollop spoonfuls of sour cream over apples. Spread out to form one even layer. Combine sugar and cinnamon. Sprinkle cinnamon sugar all over the top.
  • Bake for 20-22 minutes or until slice no longer wobbles in the middle. Either enjoy warm straight from the pan OR let slice chill in the fridge for at least two hours. Then carefully slice into small squares to serve.

1 cup peach schnapps
1/2 cup cranberry juice
1 tablespoon lemon juice
3 large winesap apples, unpeeled,sliced

Steps:

  • Mix wine, peach schnapps, cranberry juice, and lemon juice.
  • Slice apples and place in juices.
  • Refrigerate and marinate overnight.
  • To serve, drain and place in a small bowl.
  • Serve with crackers and an assortment of small cheese wedges.

1 ½ cups brown sugar
½ cup kosher salt
⅓ cup ground black pepper
¼ cup ground paprika
¼ cup garlic powder
¼ cup Italian seasoning
2 tablespoons onion powder
2 tablespoons chili powder
2 tablespoons cayenne pepper
1 tablespoon ground cumin
1 teaspoon dried sage
½ cup apple cider
¼ cup apple juice concentrate
2 tablespoons honey
2 tablespoons Worcestershire sauce
3 drops liquid smoke flavoring
7 pounds bone-in pork butt
½ cup yellow mustard
1 tablespoon honey
1 cup whiskey barrel wood chips (such as Jack Daniel's®)
½ cup apple wood chips
½ cup apple juice concentrate
½ cup water

Steps:

  • Combine brown sugar, salt, pepper, paprika, garlic, Italian seasoning, onion powder, chili powder, cayenne pepper, cumin, and sage in a small container. Measure 1 tablespoon of the dry rub mixture into a large container that will fit the pork butt. Refrigerate remaining dry rub.
  • Mix apple cider, 1/4 cup apple juice concentrate, 2 tablespoons honey, Worcestershire sauce, and liquid smoke into the large container to make marinade.
  • Score top of pork butt in a checkerboard pattern. Inject some of the marinade into the bottom, sides, and top of the pork butt. Place pork in the container with the remaining marinade. Marinate in the refrigerator, 8 hours to overnight.
  • Combine whiskey barrel wood chips, apple wood chips, 1/2 cup apple juice concentrate, and water in a large resealable bag. Seal and let soak, about 20 minutes.
  • Preheat an electric smoker to 225 degrees F (110 degrees C). Fill smoker box with wood chips according to manufacturer's instructions.
  • Remove pork from marinade; rub mustard and 1 tablespoon honey evenly on top. Coat pork butt heavily with dry rub. Place fat-side up on a rack.
  • Place the rack in the smoker; cook until an instant-read thermometer inserted into the center reads 160 degrees F (71 degrees C) for medium or 170 degrees F (77 degrees C), 4 to 6 hours. Add additional soaked wood chips halfway through cooking time.
  • Place pork butt fat-side up on a large platter. Cover with aluminum foil and let rest for 20 minutes, turning over halfway through resting time.

2 1/2 cups flour
1 cup margarine
1 teaspoon salt
1 egg yolk
2/3 cup milk (to make 2/3 cup with egg yolk)
1 egg white, beaten
8 -10 tart apples, peeled, cored and sliced thin
2 cups corn flakes, crushed (2 handfuls)
1 cup sugar
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup powdered sugar
1/4 cup water

Steps:

  • Crust: Mix flour and salt. Cut margarine inches.
  • Whisk egg yolk and milk together; mix into flour.
  • Roll out 1/2 of dough large enough to fit into a jelly roll pan.
  • Filling: Sprinkle corn flakes over bottom crust. Spread apple slices evenly over crust. Mix sugar, cinnamon and salt; sprinkle over apples.
  • Roll out remaining dough and cover fruit. Brush top with beaten egg white. Bake at 350°F for about 1 hour, until crust is golden brown.
  • Glaze: Mix glaze ingredients together well.
  • Brush on top crust while still hot.

2 ½ tablespoons water
1 tablespoon cornstarch
1 ½ tablespoons white sugar
1 pinch ground cinnamon, or to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Spread the apple slices into the bottom of a small baking dish. Whisk the water and cornstarch together in a small bowl; pour over the apple slices and gently stir. Sprinkle the sugar and cinnamon over the apple slices.
  • Cook in the preheated oven until the apples are tender, about 15 minutes.

1 ⅓ cups shortening
2 egg yolks, beaten
½ cup milk
10 apples - peeled, cored and sliced

3 cups white sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 10x15 inch jellyroll pan or cookie sheet.
  • In a large bowl, stir together the salt and 4 cups flour. Cut in the shortening until the mixture resembles coarse crumbs. Use a fork to stir in the egg yolks and milk just until dough comes together. On a lightly floured surface, roll out half of the dough to 1/8 inch thickness or until big enough to cover the bottom of the jellyroll pan with a little hanging over the sides.
  • Arrange the slices of apple to evenly cover the bottom crust. In a small bowl, stir together the 2 tablespoons of flour with the sugar and cinnamon. Sprinkle the sugar mixture over the apple slices. Roll out the remaining dough to cover the apple layer and pinch to seal to the bottom crust. Trim off excess crust and brush with egg white.
  • Bake for 40 to 45 minutes in the preheated oven, until apples are tender and crust is brown. If the crust begins to brown too much before the apples are done, cover with foil and continue baking. Cool before cutting into squares.

This is a recipe that I did a couple of years ago. It takes some time, but it's worth it.

4 cups barbeque sauce
4 cups applesauce
4 pounds baby back pork ribs
salt and black pepper to taste
cayenne pepper to taste
garlic powder to taste

Steps:

  • Mix the barbeque sauce and applesauce in bowl. Place ribs on a large sheet of heavy duty aluminum foil, and rub on all sides with the salt, pepper, cayenne pepper, and garlic powder. Pour sauce over ribs to coat. Seal ribs in the foil. Marinate in the refrigerator 8 hours, or overnight.
  • Preheat grill for high heat.
  • Place ribs in foil on the grill grate, and cook 1 hour. Remove ribs from foil, and place directly on the grill grate. Continue cooking 30 minutes, basting frequently with the sauce, until ribs are done.
