BAKED SALMON WITH MAPLE MUSTARD GLAZE (5 INGREDIENT RECIPE)
This easy five ingredient baked salmon is going to be your weeknight go-to salmon recipe. The glaze is the perfect balance of spicy and sweet. Try it tonight!

- Preheat oven to 400ºF. If desired, line a baking sheet with parchment paper for easy clean up.
- Place salmon on prepared baking sheet. In a small bowl, combine mustard, maple syrup, olive oil, salt, paprika, and pepper. Spoon about half of this mixture over the salmon in an even layer.
- Bake for 15 minutes. Remove from oven and spoon on the rest of the maple mustard mixture.
- Return to oven and bake for an additional 5-10 minutes or until an instant read thermometer reads 145ºF and fish flakes easily with a fork. (An internal temperature of 145ºF is my personal preference for salmon, but feel free to cook it to whatever temperature you like!). Enjoy immediately!

SALMON WITH MAPLE-DIJON GLAZE

- Preheat the oven to 425 degrees F.
- Spray a parchment-lined casserole dish with nonstick spray and lay the salmon in it skin-side down.
- In a small bowl, whisk together the mustard, maple syrup, olive oil, thyme and cumin. Pour the mixture over the salmon, spreading to coat it evenly.
- Bake until just cooked through, 12 to 15 minutes. Transfer the salmon to a serving platter.

Steps:
- In a shallow glass dish, whisk maple syrup, mustard, thyme, garlic and pepper together.
- Place salmon fillets in dish and turn to coat.
- Cover and refrigerate for at least 30 minutes or up to 8 hours.
- Place salmon on parchment paper lined baking sheet and spoon some of remaining marinade over top.
- Roast in 425F oven for about 15 minutes or until fish flakes when tested with fork.
- In large bowl, toss spinach with oil, salt & pepper (if using), and divide among 4 plates.
- Top with salmon and serve.
MAPLE-BAKED SALMON
Salmon baked at a low temperature until medium-rare delivers a silky texture that tastes special enough to make it a festive centerpiece. This easy dish works any night of the week, since it comes together in less than half an hour. Maple syrup sweetens the glaze, which gets a savory pop from whole mustard seeds in Dijon. Even though salmon is naturally fatty, a dollop of mayonnaise adds extra richness while thickening the glaze to help it seal onto the fish. The herbaceous aroma of cilantro stems baked into the sauce brightens the dish, as do tender leaves scattered on top. Fill out your feast with any combination of steamed rice, roasted potatoes, green beans or salad.

Steps:
- Remove salmon from the refrigerator. Heat oven to 325 degrees.
- Bundle the cilantro sprigs by their stems and hold them tightly, then slice the stems crosswise until you get to the leaves. Reserve leaves for garnish. Transfer sliced stems to a small bowl and stir in the maple syrup, mustard and mayonnaise until well mixed.
- Season the salmon all over with salt and pepper and place in a baking dish, skin-side down if there is skin. Slather the maple sauce all over the top.
- Bake until a paring knife slides into the center with only a little resistance, 15 to 20 minutes. When you remove the knife and touch the blade to your upper lip, it should feel very warm but not hot. The salmon will continue to heat through out of the oven while in the baking dish. Top with the reserved cilantro leaves, and squeeze lemon wedges all over just before serving.

- Preheat oven to 350 degrees F.
- Whisk mustard, 3 TBS maple syrup, 3 1/2 TBS water, and horseradish in small bowl to blend.
- Arrange salmon on baking sheet.
- Whisk 1 1/2 TBS maple syrup, sugar and thyme in another small bowl to blend.
- Spread thyme mixture evenly over salmon.
- Bake until salmon is just opaque in center, about 14 minutes.
- Transfer salmon to plates.
- Spoon mustard-horseradish sauce over and serve.
- Serves 6.

- In a small saucepan over medium heat, combine the glaze ingredients. Bring to a boil and cook for 4 minutes, stirring frequently. Remove pot from heat and set aside.
- Brush both sides of the salmon with oil and season with salt and pepper. When BBQ or grill pan is hot, brush well with vegetable oil. Place salmon skin or bottom side down on to grill. Close lid and grill without touching until grill marks appear and skin or bottom is crisp, about 3 minutes. Brush some of the glaze on top of salmon, then turn salmon over. Brush the exposed side of the salmon with some glaze as well. Close lid and continue to cook until salmon is opaque in the center, about 3 minutes more.
- Transfer salmon to a plate and serve the remaining glaze on the side. A sprinkling of a finishing salt like Maldon is a great topping.
