Bacon addicts, unite! This cake tastes like pancakes and bacon together - yes it is a lot of butter... and an entire pound of bacon, but is it worth it? ABSOLUTELY!!! Now that I have made it once, everyone wants it for their birthday! Future plans: try making it pineapple upside down variety, with bacon of course!

1 lb maple bacon (not maplewood smoked)
CAKE INGREDIENTS
1 box butter yellow recipe cake mix
3 eggs
2/3 c water
1 1/2 stick butter
1/2 c brown sugar, firmly packed
1/2 c maple syrup
FROSTING
1 stick butter
1 1/2 c confectioners' sugar (or more for spreadable consistency)
1/8 c maple syrup (or 1/2 tsp. maple flavor)

Steps:

  • 1. Cut bacon into 1 inch pieces, cook over med-low heat in skillet - don't make it "crunchy" by cooking too much! Cool on paper towels to absorb excess grease. Set aside.
  • 2. PREHEAT OVER TO 350*, Butter and flour two 9" round cake pans. Make the cake according to directions on box, using the 3 eggs, 2/3 cup water, and one stick of softened butter.
  • 3. Coarsely mix in half a stick of softened butter with the brown sugar, and sprinkle evenly on the bottom of the cake pans keeping away from the edge about a half inch. Drizzle the syrup over the sugar. Divide the batter among the two pans, pouring over the syrup/sugar mix. Bake for 23-25 minutes, check for doneness with toothpick.
  • 4. Cool in pan for 10 minutes (no more!)and invert cakes out of pan carefully onto plates to cool completely.
  • 5. Take about 2/3 of the cooled bacon and dice VERY fine.
  • 6. FROSTING: Beat one stick butter til creamy, add confectioners sugar one half cup at a time. Add the syrup, being aware of the consistency. frost the gooey side of one cake, sprinkle with the finely diced bacon, top with other cake gooey side DOWN on the bacon. Frost the entire cake and top with remaining 1/3 of the bacon pieces.

1-1/2 cups buttermilk

Steps:

  • In a large bowl, combine the flour, brown sugar and salt. Cut in butter until crumbly. Set aside 1/2 cup for topping. Combine the baking powder, baking soda, cinnamon and nutmeg; stir into remaining flour mixture., In a small bowl, whisk the eggs, buttermilk, syrup and applesauce until well blended. Gradually stir into flour mixture until combined., Spread into a 13x9-in. baking pan coated with cooking spray. Sprinkle with reserved topping, then bacon and walnuts. Bake at 350° until a toothpick inserted in the center comes out clean, 35-40 minutes. Cool on a wire rack.

1/2 teaspoon almond extract

Steps:

  • Heat oven to 350°F. In 12-inch skillet, cook bacon until crisp; drain on paper towels. Tear bacon into pieces; set aside. Reserve 2 tablespoons drippings in skillet. Meanwhile, in 13x9-inch pan, melt butter in oven.
  • Cook pecans in reserved bacon drippings over medium heat, stirring occasionally, until light brown. Add brown sugar, maple syrup and vanilla to pecans, stirring until sugar is dissolved. Pour mixture over butter in pan.
  • In large bowl, beat cake mix, sour cream, milk, oil and eggs with electric mixer on low speed until moistened. Beat 2 minutes on medium speed; stir in almond extract. Pour batter over pecan mixture in pan.
  • Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; run knife around sides of pan to loosen cake. Place heatproof serving plate upside down on pan; turn plate and pan over. Let pan remain over cake 1 minute so pecan mixture can drizzle over cake. Remove pan; sprinkle cake with bacon. Serve warm.

3/4 pound thick-cut smoked bacon (16 slices)
1 to 2 tablespoons good maple syrup

Steps:

  • Preheat the oven to 400 degrees F.
  • Place a baking rack on a sheet pan and arrange the bacon in 1 layer on the baking rack. Bake for 15 to 20 minutes, until the bacon begins to brown. Remove the pan carefully from the oven; there will be hot grease in the pan! Brush the bacon slices with maple syrup and bake for another 3 to 5 minutes, until the bacon is a warm golden brown. Transfer the bacon to a plate lined with paper towels and serve warm.

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon coarse salt
2 cups low-fat buttermilk
1/2 cup pure maple syrup, plus more for serving
2 large eggs, lightly beaten
6 tablespoons unsalted butter, melted

Steps:

  • Cook bacon in two batches in a large skillet over medium-low heat, turning occasionally, until crisp, 6 to 7 minutes. Drain bacon on paper towels, then break into 3/4- to 1-inch pieces. Reserve drippings, and wipe out skillet.
  • Preheat oven to 200 degrees. Whisk together flour, baking powder, baking soda, and salt in a medium bowl. Whisk together buttermilk, syrup, eggs, and butter. Add to flour mixture, and whisk until just combined (batter will have lumps).
  • Heat 1 teaspoon drippings in skillet over medium-low heat. For each pancake, arrange some of the bacon pieces in a circle in skillet. Slowly pour 1/3 cup batter over bacon, starting in center and moving outward in a swirling motion to prevent bacon from shifting. Cook until small bubbles form on surface. Flip, and cook until golden brown. Transfer pancakes to a baking sheet, and keep warm in oven. Repeat with remaining bacon and batter. Serve with syrup.

1 (15.25 ounce) package banana cake mix
1 (3.5 ounce) package vanilla instant pudding mix
4 large eggs
1 cup water
¼ cup vegetable oil
1 medium ripe banana, mashed
3 slices thick-cut bacon, chopped into small pieces
2 cups confectioners' sugar
3 tablespoons milk, or more to taste
3 tablespoons maple syrup
2 teaspoons maple extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a fluted tube pan (such as Bundt®).
  • Whisk cake mix and pudding mix together in a large bowl. Make a well in the center; add eggs to the well. Then add water, vegetable oil, and mashed banana; beat with an electric mixer on low speed until blended. Scrape down the sides of the bowl and beat on low for 4 minutes. Let batter rest for 5 minutes, then pour into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center of the cake comes out mostly clean, 50 to 55 minutes. Remove from the oven and cool in the pan for 10 minutes, then turn out onto a wire rack and let cool completely.
  • While the cake is cooling, cook bacon in a skillet and over medium-high heat, until evenly browned and just about crispy, 5 to 7 minutes. Remove to a paper towel-lined plate.
  • Mix confectioners' sugar, 3 tablespoons milk, maple syrup, and maple extract for glaze in a small bowl until thoroughly combined. If glaze is too thick, add a bit more milk.
  • Drizzle glaze over the cooled cake, then sprinkle with bacon.

1 Granny Smith apple, peeled, thinly sliced
1/2 cup packed brown sugar
1 pkg. (2-layer size) white cake mix
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
3 egg whites
1 cup milk
1/4 cup oil
2 Tbsp. maple-flavored or pancake syrup
1 tsp. vanilla

Steps:

  • Heat oven to 350°F.
  • Cook bacon in large skillet on medium heat just until bacon is lightly browned, turning occasionally. (Do not cook until bacon is crisp.) Remove bacon from skillet; drain on paper towels. Discard all but 2 Tbsp. drippings from skillet.
  • Arrange bacon slices on bottom of 13x9-inch pan sprayed with cooking spray; top evenly with apple slices. Sprinkle with sugar.
  • Beat cake mix with reserved bacon drippings and remaining ingredients in large bowl with mixer until blended; pour over ingredients in baking pan.
  • Bake 35 to 40 min. or until toothpick inserted in center comes out clean. Cool cake 5 min. Run knife around edges of pan to loosen cake; invert cake (in pan) onto serving tray. Let stand 5 min. before carefully removing pan. Serve cake warm.
