SHRIMP IN CHARDONNAY SAUCE



Shrimp in Chardonnay Sauce image

Boil a couple of cups of wine with shallots and butter as quickly as your stove will allow. When the wine is almost completely gone, cook the shrimp in this sauce. The keys to finishing the dish are seasoning and body: it will take plenty of salt and a fair pinch of spice. Serve this with good bread to sop up the sauce.

2 cups chardonnay or other full-bodied white wine
2 shallots, minced
3 tablespoons butter
1/4 teaspoon cayenne, or to taste
1 1/2 to 2 pounds shrimp (deveined if you like)
1/2 cup heavy cream, optional
Salt to taste
Chopped parsley or chervil for garnish, optional

Steps:

  • In a 10-inch skillet with sloping sides, or a wok or saucepan, combine wine, shallots, 2 tablespoons butter, a large pinch of salt and cayenne. Bring to a boil over high heat and reduce, stirring occasionally, until nearly dry, about 10 minutes. While it reduces, peel shrimp.
  • Add shrimp to skillet and cook, stirring occasionally, until cooked through, 3 to 5 minutes. Stir in remaining butter and, if you like, cream. Taste and add more salt or cayenne if necessary. Garnish and serve immediately.

This is another recipe from my mother in law. I do love a recipe that has wine as an ingredient. You just have to have a glass after you open the bottle right? It's like that saying "I love cooking with wine. Sometimes I even put it in my food."

1/2 cup butter
2 garlic cloves, minced
1 cup Chardonnay wine
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon thyme
1/4 teaspoon crushed red pepper flakes
2 tablespoons fresh parsley
1 1/2 lbs large raw shrimp, peeled and deveined

Steps:

  • Melt butter in a skillet over medium heat.
  • Add garlic and cook for one minute.
  • Stir in wine, worcestershire sauce, and seasonings and bring to a boil.
  • Reduce to simmer and add the shrimp. Cook for about 3 to 4 minutes until shrimp becomes pink and tender.
  • Serve shrimp in wide shallow bowls with cooking juices. A crusty bread goes nicely to soak up the yummy juices.

Mild sauces do not cover up the taste of the shrimp. Not too rich. Scallops can be used instead of lobster.

1 ½ cups milk
3 eggs
1 ¼ cups all-purpose flour
¼ teaspoon salt
1 ½ cups water
¼ cup all-purpose flour
¼ teaspoon salt
2 tablespoons butter
4 cloves garlic, minced
2 pounds shrimp, peeled and deveined
8 ounces lobster meat
1 tablespoon lemon juice
1 pinch cayenne pepper
¼ cup grated Parmesan cheese
1 cup milk
2 tablespoons mayonnaise
1 tablespoon all-purpose flour

Steps:

  • Spray a 9x12-inch baking dish with cooking spray.
  • Beat 1 1/2 cups milk and eggs together in a large bowl using an electric mixer until frothy, about 2 minutes. Add 1 1/4 cups flour and 1/4 teaspoon salt to milk mixture; beat until incorporated, about 2 more minutes.
  • Heat a non-stick skillet over medium heat. Pour 1/4 cup batter into the skillet and immediately rotate the skillet until the batter evenly coats the bottom in a thin layer. Cook until the top of the crepe is no longer wet and the bottom has turned light brown, about 4 minutes. Run a spatula around the edge of the skillet to loosen; flip crepe and cook until the other side has turned light brown, about 2 more minutes.
  • Whisk water, 1/4 cup flour, 1/4 teaspoon salt together in a bowl.
  • Place butter and garlic in a non-stick skillet over low heat. Cover skillet and cook until garlic is golden brown, about 7 minutes. Add shrimp and lobster meat; stir, cover skillet, and cook until shrimp are bright pink and cooked through, about 5 minutes. Add lemon juice and cayenne pepper; stir, cover skillet, and cook for 5 more minutes.
  • Whisk water-flour mixture and stir into shrimp mixture. Sprinkle Parmesan cheese over shrimp mixture; cook and stir over medium heat until thickened, about 1 minute. Remove skillet from heat and spoon shrimp filling onto each crepe. Roll each crepe around filling and place in the prepared baking dish.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine 1 cup milk, mayonnaise, and 1 tablespoon flour in a small saucepan; cook and stir over medium heat until bubbling, 2 to 3 minutes. Drizzle sauce over filled crepes.
  • Bake in the preheated oven until crepes are cooked through and sauce is bubbling, 25 to 30 minutes.

¼ cup olive oil
3 scallions, white bulbs and green tops cut separately into thin slices
4 cloves garlic, minced
½ teaspoon dried oregano
24 large shrimp, peeled and deveined
2 ½ tablespoons lemon juice
2 tablespoons white wine
1 tablespoon water
½ teaspoon ground black pepper, or more to taste
¼ teaspoon salt
2 tablespoons butter
1 tablespoon olive oil
1 tablespoon minced fresh parsley

Steps:

  • Place 1/4 cup oil, scallion whites, garlic, and oregano in a large skillet or wok over medium heat. Cook, stirring often, until the oil starts to simmer, about 5 minutes. Add shrimp and increase heat to high. Cook, stirring and turning often, until opaque, 4 to 5 minutes.
  • Add lemon juice and wine to the skillet; simmer for about 1 1/2 minutes. Add water, pepper, and salt; cook for 30 seconds. Stir in butter, 1 tablespoon olive oil, scallion greens, and parsley until even distributed. Arrange the shrimp on warmed plates and spoon the sauce on top.

Marinating frozen shrimp in white wine before stirring in the other spread ingredients adds an elegant touch.

2 cups frozen cooked salad shrimp (about 7 oz), thawed, drained
1/2 cup Chardonnay wine or nonalcoholic white wine
1 package (8 oz) cream cheese, softened
3 tablespoons mayonnaise or salad dressing
3 medium green onions, finely chopped (3 tablespoons)
1 teaspoon Dijon mustard
Bibb lettuce, if desired
48 crackers

Steps:

  • Coarsely chop shrimp. Place shrimp in small glass bowl. Pour wine over shrimp; toss to coat. Cover; refrigerate at least 1 hour to blend flavors. Drain shrimp, reserving wine.
  • In another small bowl, mix cream cheese, mayonnaise, 2 tablespoons of the onions and the mustard with spoon. Fold in shrimp. If a thinner consistency is desired, stir in small amount of reserved wine.
  • Line small serving bowl with Bibb lettuce. Spoon shrimp spread into bowl. Sprinkle remaining 1 tablespoon onion over top. Serve with crackers.

Fancy name for an easy recipe. This is my adaptation of a Wolfgang Puck recipe I found in the Chicago Tribune.

1 lb medium shrimp, peeled and deveined
1/2 teaspoon salt
fresh ground pepper, to taste
2 tablespoons extra virgin olive oil
1/2 lb dried angel hair pasta or 1/2 lb spaghetti
1 cup Chardonnay wine or 1 cup other dry white wine
1/2 cup whipping cream
1 tablespoon Dijon mustard
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Heat a large saucepan of salted water to a boil over medium-high heat. Season the shrimp with the salt and pepper to taste.
  • Heat a large skillet over medium-high heat; add the oil. Heat about 30 seconds; add the shrimp, distributing evenly in the pan. Cook, turning once, until pink, about 2 minutes per side. Transfer the shrimp to a platter; cover with foil to keep them warm.
  • Add the pasta to the boiling water; cook until al dente, tender but still slightly chewy, following package directions for the time.
  • Meanwhile, heat the same skillet over high heat; add the wine. Stir with a wooden spoon to scrape and dissolve pan deposits; cook until liquid reduces by half, about 5 minutes. REduce the heat to medium-high; stir in the cream. Cook 1 minute; stir in the mustard. Cook until the sauce is thick enough to coat the back of a spoon, about 5 minutes. Stir in the shrimp; cook until heated through, about 1 minute.
  • Drain pasta; divide equally amongst 4 shallow bowls. Spoon the sauce over the pasta. Divide the shrimp evenly amongst the bowls. Garnish with parsley.
  • This goes really well with crusty bread!
