ALOHA BUNDT CAKE

This Aloha Bundt cake is loaded with the very best Hawaii has to offer - bananas, pineapple, coconut, and macadamia nuts!

3 cups all-purpose flour
1 tsp cinnamon (ground)
1 tsp baking soda
1/2 tsp salt
2 cups granulated sugar
1 cup vegetable oil
2 tsp vanilla
3 large eggs
2 cups mashed bananas (very ripe, approx. 5 medium*)
1 cup crushed pineapple (drained, reserve liquid)
1 cup macadamia nuts (chopped)
1 cup shredded coconut (unsweetened)
1 1/2 cups powdered sugar
4 tsp pineapple juice

Steps:

  • Preheat oven to 350F and grease a 10 or 12 cup Bundt pan with cooking spray.
  • In a medium bowl, whisk together flour, cinnamon, baking soda, and salt.
  • In the bowl of an electric mixer, beat sugar, oil, and vanilla until combined.
  • Add eggs one at a time, fully incorporating after each addition. Beat till pale and fluffy (approx. 3-4 mins).
  • Add banana, pineapple, coconut, and macadamia nuts and mix until combined.
  • Add flour mixture and beat until just combined.
  • Pour into prepared Bundt pan and smooth the top with a spatula.
  • Rap Bundt pan on counter a couple of times to release air bubbles and fill nooks and crannies.
  • Bake until a cake tester comes out mostly clean (approx. 60-70mins).
  • Cool on a wire rack for 10mins.
  • Rap pan against counter to loosen the cake and turn out onto wire rack.
  • Cool completely before glazing.
  • Combine sugar and pineapple juice in a small measuring cup. Whisk with a fork until combined and lumps are gone. Add more juice as needed until desired consistency is reached.
  • Pour over cooled Bundt Cake.

1-1/4 cups cake flour
1-1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, room temperature
3/4 cup sugar
1/2 cup canola oil
1 teaspoon coconut extract
1/2 cup coconut milk
1/2 teaspoon white vinegar
PINEAPPLE FROSTING:
1/2 cup shortening
1/2 cup butter
4 cups confectioners' sugar
1/2 cup finely chopped fresh pineapple
3 tablespoons unsweetened pineapple juice
TOPPING:
1/2 cup sweetened shredded coconut, toasted
1/2 cup coarsely chopped macadamia nuts, optional

Steps:

  • Preheat oven to 350°. Line 12 muffin cups with paper or foil liners. Whisk first 4 ingredients; set aside. Beat eggs and sugar on medium speed for 1 minute. Add oil and coconut extract; beat 1 minute more. Add half the flour mixture; beat on low speed. Combine coconut milk and vinegar. Add half to batter; beat just until combined. Beat in the remaining flour mixture, then the remaining coconut milk mixture just until smooth., Fill prepared cups two-thirds full. Bake until cupcakes are golden brown and spring back lightly when touched, 15-18 minutes (do not overbake). Cool on wire rack., For frosting, cream shortening and butter until light and fluffy. Beat in confectioners' sugar 1/2 cup at a time, adding finely chopped pineapple and pineapple juice after beating in 2 cups of sugar. Add additional confectioners' sugar and pineapple juice to reach desired consistency., Spoon frosting onto cupcakes. Top with toasted coconut and, if desired, chopped macadamia nuts.

1 package (3.4 ounces) instant vanilla pudding mix

2 cups sugar
3-1/2 cups sweetened shredded coconut (about 10 ounces)
1 cup sour cream
1 carton (8 ounces) frozen whipped topping, thawed
Additional coconut, toasted, optional

Steps:

  • In a large bowl, combine the first six ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes., Pour into three greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., In a large bowl, combine the pineapple, sugar, 3-1/2 cups coconut and sour cream. Set aside 1 cup for frosting. Place one cake on a serving plate; top with a third of the remaining pineapple mixture. Repeat layers twice. , Fold whipped topping into the reserved pineapple mixture. 1 box Yellow Cake Mix, 18 Ounce Box
3/4 cups Vegetable Oil
3 whole Eggs
11 ounces, weight Can, Mandarin Oranges, With Juice
1/2 teaspoons Vanilla
FROSTING:
1 box (4-serving Size) Instant Coconut Pudding Mix
20 ounces, weight Can Crushed Pineapple With Juice
8 ounces, weight Carton Cool Whip

Steps:

  • Mix cake mix, oil, eggs, mandarin oranges and vanilla together in mixer. Beat a couple of minutes until well-blended. The oranges will break up into tiny bits during this process. Pour into a greased 9×13 pan and bake 30-35 minutes at 350F. (You may also bake in a jellyroll pan, 15 minutes at 350F.) It will be golden brown across the top and a toothpick will come out clean when done. Let cool completely before frosting. FROSTING: Beat the coconut pudding and pineapple together a couple of minutes until thick. Fold in the Cool Whip. Spread over the cooled cake and refrigerate. Serve cold.

  • Cream butter or margarine, sugar, and eggs together; add salt, baking soda, crushed pineapple, and pineapple juice. Add coconut, walnuts, and vanilla. Mix in the graham cracker crumbs. Pour batter into the prepared pan.

This fabulous cake comes from the majestic Halekulani Hotel on Waikiki Beach in Honolulu, Hawaii, where it has been the hotel's signature cake for years. It's a light, creamy concoction that sings "spring." The cake is a light sponge cake, filled with pastry cream, and topped off with whipped cream. I saw this in the local Relish magazine that comes with our newspaper. I had to post it and share it with my zaar friends. ;)

3 cups heavy cream

Steps:

  • To prepare the cake, preheat the oven to 350°F Grease and flour a 9-inch springform pan.
  • To prepare the cake, sift together cake flour, 2/3 cup sugar, salt and baking powder in a small bowl. In separate bowl, combine oil, egg and water; add to flour mixture. Mix until smooth.
  • Whip egg whites and cream of tartar. Gradually add 1/2 cup sugar and whip until stiff peaks form. Fold egg whites into batter until just combined.
  • Pour into pan and bake about 30 minutes or until center is set. Remove from pan set aside to cool. Store in the refrigerator several hours before cutting.
  • To prepare the pastry cream, combine 1 3/4 cups milk, sugar, salt and vanilla in a medium saucepan. Cook over medium-high heat until tiny bubbles form.
  • Combine remaining milk with cornstarch; add eggs and beat several times. Add ½ cup hot milk mixture to egg mixture; mix well. Pour egg mixture back into milk mixture in saucepan. Cook over medium heat, stirring constantly until thick. Remove from heat and stir in butter. Scrape custard into a bowl. Cover with plastic wrap. Store in the refrigerator.
  • To prepare the whipped cream, combine heavy cream and sugar in a mixing bowl and whip until stiff peaks form.
  • Add 1 cup of whipped cream, amaretto and 1 1/4 cups coconut to pastry cream; stir well. Set remaining whipped cream and coconut aside.
  • When cake is completely cooled, cut into three layers using a serrated knife. Place one layer on a 9-inch cake board or a serving plate. Place half the pastry cream on top and spread to edge evenly. Place second layer of cake on top of pastry cream and spread remaining pastry cream on top. Place third layer of cake on top. Frost top and sides of cake with remaining whipped cream and sprinkle with 1/2 cup coconut.
