1 pound lean ground pork
1 tablespoon minced ginger
2 cups CAMPBELL'S® 30% Less Sodium Ready To Use Thai Chicken Broth
2 green onions, sliced
1 large carrot, diced
1 red bell pepper, diced
¼ cup hoisin sauce
16 leaves Boston lettuce

Steps:

  • In large non-stick skillet, cook pork with ginger until pork is no longer pink, 5 to 7 minutes. Pour in broth and cook until reduced by about half, about 10 minutes.
  • Stir in green onions, carrot, red pepper, and hoisin and cook just until vegetables are tender-crisp, about 5 minutes more.
  • Serve pork mixture in lettuce leaves.

THAI PORK TACOS

2 pounds pork shoulder
One 14-ounce can coconut milk
3 tablespoons Thai red chili paste
1 tablespoon grated ginger
2 teaspoons salt
8 kaffir lime leaves
6 cloves garlic, peeled
4 stalks lemongrass, cut into 1-inch pieces (light part only)
6 cups shredded cabbage
1 cup mayo
1 tablespoon agave syrup
1 tablespoon mirin
4 tomatoes, finely chopped
4 to 6 jalapenos, minced
1 onion, finely chopped
Corn tortillas, for serving
Fresh cilantro leaves, for serving

Steps:

  • For the pork: Preheat the oven to 300 degrees F. Place the pork, coconut milk, chili paste, ginger, salt, lime leaves, garlic and lemongrass in a large Dutch oven. Pour in 1 cup water and cover tightly. Bake until fork tender, about 4 hours. Shred the meat.
  • For the slaw: Mix the cabbage, mayo, agave and mirin together just prior to serving to ensure crispness.
  • For the pico de gallo: Mix the tomatoes, jalapenos and onions together.
  • Warm the corn tortillas on skillet and place approximately 3 tablespoons of shredded pork on top. Top with some slaw, pico de gallo and cilantro.

1 rotisserie chicken, skin removed, shredded
1 bottle (11-1/2 ounces) Thai peanut sauce, divided
1 medium cucumber, julienned
1 medium carrot, julienned
1/3 cup minced fresh cilantro

  • Heat taco shells according to package directions. Meanwhile, in a large skillet, combine chicken and 1/2 cup peanut sauce; heat through., In a small bowl, mix cucumber, carrot and cilantro. Serve chicken in taco shells with cucumber mixture and remaining peanut sauce.

This weeknight chicken dish takes advantage of super flavorful jarred curry paste and pairs it with silky coconut milk to create a meal that comes together in just 20 minutes. Each step in this deceptively simple dish coaxes maximum flavor out of relatively few ingredients: Toasting the curry paste in the pan concentrates its taste, searing the chicken in the mixture ensures it's properly coated, and simmering in creamy coconut milk tenderizes the meat. A splash of lime juice and a spoonful of pico de gallo brighten and lighten the rich curry. Fold the mixture into tacos or try the curry chicken as a topping for grain bowls, cauliflower rice, sautéed broccoli or leafy greens.

3 tablespoons canola oil
3 tablespoons Thai red curry paste
1 tablespoon minced garlic
1 pound boneless, skinless chicken thighs, sliced 1/4-inch thick
Salt and pepper
1/4 cup unsweetened full-fat coconut milk
1/4 cup fresh lime juice (from approximately 2 limes), plus wedges for serving
1 large tomato, finely chopped (about 2 cups)
1/2 cup finely chopped red onion
1/4 cup chopped fresh cilantro leaves and tender stems
8 (6-inch) corn tortillas
1 avocado, sliced (optional)

Steps:

  • Heat 2 tablespoons oil in a large nonstick skillet over low heat. Add the curry paste and garlic and cook, stirring occasionally, until the garlic is softened, about 3 minutes. Add the remaining 1 tablespoon oil and the chicken, season with salt and pepper, and cook over medium heat, stirring, until no longer pink, 2 or 3 minutes.
  • Stir in the coconut milk and simmer until the sauce is thickened and the chicken starts to caramelize, about 15 minutes. Stir in 2 tablespoons lime juice.
  • Meanwhile, in a medium bowl, make the pico de gallo: Toss the tomato, onion, cilantro and the remaining 2 tablespoons lime juice; season with salt and pepper.
  • Divide the chicken mixture among the tortillas. Top with the pico de gallo and avocado, if using. Serve with lime wedges.

1/2 cup peanut butter
1/2 cup hoisin sauce
1 tablespoon honey
2 teaspoons red wine vinegar
2 tablespoons minced ginger
3 minced garlic cloves
2 teaspoons soy sauce
1 teaspoon Thai sweet chili sauce
1 tablespoon oyster sauce
2 tablespoons water
1 tablespoon sesame seeds
1 tablespoon olive oil
1 lb pork or 1 lb chicken, cubed into 1/4-1/8-inch squares
30 -40 wonton wrappers (I use Nasoya brand)
1 cup frying oil
1/2 head cabbage, chopped
2 carrots, chopped
1 red onion, chopped
4 green onions, chopped
3 tablespoons fresh cilantro, chopped
2 tablespoons rice vinegar
salt

Steps:

  • FOR SLAW.
  • Add all vegetable ingredients together, toss with rice vinegar and salt, cover and set aside.
  • FOR SAUCE.
  • Heat up olive oil in frying pan.
  • Lightly toast sesame seeds.
  • Combine all ingredients in pan, bring to a boil. Turn heat to low and simmer.
  • FOR MEAT.
  • Cook cubed chicken or pork until almost done.
  • Add simmering sauce to meat. Cook through.
  • FOR WONTONS.
  • Heat oil to frying temperature.
  • Fry wontons in a "taco" shape (I find this is most easily done by letting the wontons cook for a second or two, then folding them in half. Make sure you leave enough space to put the meat filling in the taco and not seal them shut).
  • Assemble wontons by adding meat filling in center. Sprinkle with slaw that has been set aside.

  • Combine the sugar, ginger, fish sauce, garlic sauce, pepper and garlic in a large zip top bag. Add the steak to the marinade, then refrigerate for at least 20 minutes, up to overnight, turning occasionally.
  • To make the slaw, combine the lime juice, sugar, vinegar, ginger, fish sauce, chili garlic sauce and minced garlic to a medium bowl. Add in the cabbage, carrots, green onion and cilantro. Toss well to combine.
  • Preheat a grill pan over medium-high heat. Spray the grill pan with nonstick cooking spray. Remove the steak from the bag and discard the marinade. Cook the steak for 5 minutes per side, or until desired doneness. Let stand for 5 minutes before cutting diagonally against the grain into thin slices.
  • Divide the steak between the tortillas and top with about 1/2 cup of slaw per taco. Serve immediately.
