Steps:
- In large non-stick skillet, cook pork with ginger until pork is no longer pink, 5 to 7 minutes. Pour in broth and cook until reduced by about half, about 10 minutes.
- Stir in green onions, carrot, red pepper, and hoisin and cook just until vegetables are tender-crisp, about 5 minutes more.
- Serve pork mixture in lettuce leaves.
THAI PORK TACOS
Steps:
- For the pork: Preheat the oven to 300 degrees F. Place the pork, coconut milk, chili paste, ginger, salt, lime leaves, garlic and lemongrass in a large Dutch oven. Pour in 1 cup water and cover tightly. Bake until fork tender, about 4 hours. Shred the meat.
- For the slaw: Mix the cabbage, mayo, agave and mirin together just prior to serving to ensure crispness.
- For the pico de gallo: Mix the tomatoes, jalapenos and onions together.
- Warm the corn tortillas on skillet and place approximately 3 tablespoons of shredded pork on top. Top with some slaw, pico de gallo and cilantro.

Steps:
- Heat 2 tablespoons oil in a large nonstick skillet over low heat. Add the curry paste and garlic and cook, stirring occasionally, until the garlic is softened, about 3 minutes. Add the remaining 1 tablespoon oil and the chicken, season with salt and pepper, and cook over medium heat, stirring, until no longer pink, 2 or 3 minutes.
- Stir in the coconut milk and simmer until the sauce is thickened and the chicken starts to caramelize, about 15 minutes. Stir in 2 tablespoons lime juice.
- Meanwhile, in a medium bowl, make the pico de gallo: Toss the tomato, onion, cilantro and the remaining 2 tablespoons lime juice; season with salt and pepper.
- Divide the chicken mixture among the tortillas. Top with the pico de gallo and avocado, if using. Serve with lime wedges.

THAI WONTON TACOS

Steps:
- FOR SLAW.
- Add all vegetable ingredients together, toss with rice vinegar and salt, cover and set aside.
- FOR SAUCE.
- Heat up olive oil in frying pan.
- Lightly toast sesame seeds.
- Combine all ingredients in pan, bring to a boil. Turn heat to low and simmer.
- FOR MEAT.
- Cook cubed chicken or pork until almost done.
- Add simmering sauce to meat. Cook through.
- FOR WONTONS.
- Heat oil to frying temperature.
- Fry wontons in a "taco" shape (I find this is most easily done by letting the wontons cook for a second or two, then folding them in half. Make sure you leave enough space to put the meat filling in the taco and not seal them shut).
- Assemble wontons by adding meat filling in center. Sprinkle with slaw that has been set aside.

- Combine the sugar, ginger, fish sauce, garlic sauce, pepper and garlic in a large zip top bag. Add the steak to the marinade, then refrigerate for at least 20 minutes, up to overnight, turning occasionally.
- To make the slaw, combine the lime juice, sugar, vinegar, ginger, fish sauce, chili garlic sauce and minced garlic to a medium bowl. Add in the cabbage, carrots, green onion and cilantro. Toss well to combine.
- Preheat a grill pan over medium-high heat. Spray the grill pan with nonstick cooking spray. Remove the steak from the bag and discard the marinade. Cook the steak for 5 minutes per side, or until desired doneness. Let stand for 5 minutes before cutting diagonally against the grain into thin slices.
- Divide the steak between the tortillas and top with about 1/2 cup of slaw per taco. Serve immediately.
