1/2 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breasts (about 1 1/4 lb)
2 tablespoons vegetable oil
3 medium peaches, peeled, chopped (1 1/2 cups)
1 ripe large mango, seed removed, peeled and chopped (1 1/2 cups)
1 large tomato, seeded, chopped (1 cup)
1/4 cup chopped fresh cilantro
3 tablespoons vegetable oil
2 tablespoons white vinegar
1/4 teaspoon salt

Steps:

  • In shallow dish, mix cornmeal, 1/2 teaspoon salt and the pepper. Coat chicken with cornmeal mixture.
  • In 10-inch skillet, heat 2 tablespoons oil over medium-high heat. Cook chicken in oil 15 to 20 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (at least 165°F).
  • Meanwhile, in large bowl, mix all salsa ingredients. Serve chicken with salsa.

1 large peach, peeled and chopped
1/2 cup chopped sweet onion
1/4 cup salsa
1 small jalapeno pepper, seeded and minced
2 tablespoons finely chopped fresh cilantro
2 tablespoons lime juice
1 cup chicken broth
1/2 cup uncooked long grain rice
2 boneless skinless chicken breast halves (5 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil

Steps:

  • Mix first six ingredients. In a small saucepan, bring broth and 1/4 cup peach mixture to a boil. Stir in rice; return to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, 15-18 minutes., Meanwhile, sprinkle chicken with salt and pepper. In a skillet, heat oil over medium heat; brown chicken on both sides. Add remaining peach mixture; bring to a boil. Reduce heat; simmer, covered, until a thermometer inserted in chicken reads 165°, 7-9 minutes. Serve with rice.

1 large Fresh tomato(es) finely chopped
0.25 cup(s) Basil fresh, chopped
2 tsp Balsamic vinegar

2 Tbsp Yellow cornmeal
20 oz Uncooked boneless skinless chicken breast(s) 4 (5-ounce) halves
2 tsp Canola oil

Steps:

  • Combine the peach, tomato, basil, vinegar, 1⁄4 teaspoon of the salt, and 1⁄4 teaspoon of pepper in a small bowl; set aside.
  • Mix the cornmeal and the remaining 1⁄2 teaspoon salt and 1⁄4 teaspoon pepper on a sheet of wax paper. Press the chicken in the mixture to coat. 6 cups prepared peaches (about 12 medium or 3 lb)
1 1/4 cups chopped red onions
4 jalapeno peppers
1 red pepper, chopped
1/2 cup loosely packed finely chopped fresh cilantro
1/2 cup white vinegar
2 tablespoons honey
1 clove garlic, finely chopped
1 1/2 teaspoons ground cumin
1/2 teaspoon cayenne pepper

Steps:

  • Blanch, peel, pit and chop peaches.
  • Measure 6 cups.
  • Combine peaches, onion, peppers, cilantro, vinegar, honey, garlic, cumin and cayenne pepper in a large stainless steel or enamel saucepan.
  • Bring to a boil, stirring constantly to prevent scorching.
  • Boil gently, stirring frequently, 5 minutes.
  • If bottling, process in usual way, processing for a further 10 minutes.
  • This will make approximately 4 pints of Salsa.

We had an overabundance of peaches this year so I tried a couple of different salsa recipes and came up with my own version....posting for safe keeping. My peaches were sweet and very ripe, so depending on your ingredients, taste this as you go and modify it for heat and sweetness. I started out adding 1/4 cup sugar at a time until it was what I liked. Same with jalapenos. Adjust to your personal taste. After figuring out that we liked salsa sweet and hot, we have four batches and worried how we are going to make it this winter!

6 cups peeled pitted and chopped peaches
1 1/2 cups chopped sweet onions
5 medium jalapenos, finely chopped
1/2 cup finely chopped cilantro
1/2 cup white vinegar

2 garlic cloves, minced
1 1/2 teaspoons cumin
1/2 teaspoon cayenne pepper
1/2 tablespoon salt

Steps:

  • In a large stainless steel or enamel pot combine all ingredients and bring to a boil.
  • Stir constantly to prevent scorching.
  • Boil gently for 5 minutes. This is where I add the sugar and taste for preference.
  • Ladle into clean hot jars leaving 1/4 inch head space.

1 (5 ounce) skinless, boneless chicken breast half
1 teaspoon olive oil
1 teaspoon balsamic vinegar
1 tablespoon brown sugar
1 cup diced fresh peaches
1 cup diced tomato
½ cup sliced, seedless grapes
½ cup diced red onion
1 tablespoon lemon juice
1 tablespoon honey

Steps:

  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Rub chicken breast with olive oil and vinegar, then rub brown sugar onto the chicken until you've got a nice glaze coat.
  • Grill chicken on the preheated grill until no longer pink in the center and the juices run clear, about 5 minutes per side; be careful not to let the brown sugar stick to the grill. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • While the chicken is cooking, combine peaches, tomato, grapes, onion, lemon juice, and honey in a bowl; mix thoroughly.

Steps:

  • In a large bowl, combine the peaches, 1/2 cup red onion, the jalapeno, cilantro, 1/2 cup lime juice and 1/4 cup olive oil. Cover and refrigerate.
