These orange spice cookies are perfect for the holidays. They look plain but once you bite into them the amazing flavors just keep developing over and over. You'll not want to eat anything after these just so you can keep that taste in your mouth. That's how good they are. Try it for yourself and see.

1 ¼ cups dark brown sugar
½ cup white sugar
½ cup unsalted butter, softened
2 tablespoons unsalted butter, softened
2 tablespoons cream cheese
1 large egg
1 tablespoon molasses
1 teaspoon vanilla extract
1 teaspoon orange extract
½ teaspoon maple extract
2 ½ cups all-purpose flour
6 medium oranges, zested
2 tablespoons ground cinnamon
1 ½ teaspoons baking soda
1 ½ teaspoons salt
½ teaspoon ground cloves
½ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Beat both sugars, 1/2 cup plus 2 tablespoons butter, and cream cheese together until creamy, at least 5 minutes. Add egg and mix well. Mix in molasses. Mix in vanilla, orange, and maple extracts.
  • Stir flour, orange zest, cinnamon, baking soda, salt, cloves, and nutmeg together in another bowl until well combined and no clumps of zest remain. Add the dry ingredients to the wet ingredients and stir together just until incorporated; don't overmix.
  • Drop spoonfuls of dough 2 inches apart onto the prepared baking sheets.
  • Bake in the preheated oven until edges are golden, about 12 minutes. Cool on the baking sheet briefly before removing to a wire rack to cool completely.

For rolling sugar:
1/2 c granulated sugar
1 T freshly grated orange zest
For cookie dough:
1 1/2 c rolled oats
5 T unsalted butter, softened
1/3 c granulated sugar
1/3 c packed dark brown sugar
2 T freshly grated orange zest
1/2 c light or dark molasses
7 T unsweetened applesauce
1 large egg yolk
1 t vanilla extract
1 t baking soda
1 1/2 t ground cinnamon
1 1/2 t ground ginger
1/2 t ground cloves
1/4 t ground allspice
1/4 t freshly ground pepper
1/4 t salt
2 1/4 c whole-wheat flour

Steps:

  • 1. Preheat oven to 375°F. 2. Coat a large baking sheet with cooking spray or line with parchment paper. 3. To prepare the rolling sugar: Pulse 1/2 cup granulated sugar and 1 tablespoon orange zest in a food processor until well combined. Place in a shallow dish and set aside. 4. To prepare cookie dough: Grind oats in a blender until they look like a fine powder, 1 to 2 minutes, scraping the sides as needed. 5. Beat butter and 1/3 cup granulated sugar in a large bowl with an electric mixer on medium-high speed for 5 minutes. Add brown sugar and 2 tablespoons orange zest and beat another 2 minutes. Add molasses, applesauce, egg yolk, vanilla, baking soda, cinnamon, ginger, cloves, allspice, pepper, and salt; beat on medium-high until incorporated, about 30 seconds, scraping down the bowl and beaters as needed. Turn the mixer to medium and slowly add the ground oats. Scrape down the bowl; with the mixer on medium, slowly add whole-wheat flour. (The dough will be moderately sticky.) 6. Using a slightly rounded tablespoon of dough, roll into balls, then roll in the rolling sugar to coat. (If necessary, wet your fingers to help roll without sticking.) The zest will make the mixture slightly wet and it will clump; lightly brush off the excess so that just a thin coat is on the cookie. 7. Place cookies about 1 inch apart on the prepared baking sheet. 8. Bake the cookies in batches until the edges are set and the tops are cracked, but the centers are still soft and puffy, about 10 minutes. 9. Let the cookies cool on the baking sheet for 8 minutes. Serve warm or cool on a wire rack.
