LOW-FAT CORN MUFFINS

"These quick corn muffins use applesauce in place of oil," explains Gary Raymond of Seattle, Washington. "My friends say they're the best."

Number Of Ingredients 10

1-1/3 cups all-purpose flour
1-1/3 cups cornmeal
1/3 cup nonfat dry milk powder
1/4 cup sugar
4 teaspoons baking powder
1/4 teaspoon salt
1 can (8-1/4 ounces) cream-style corn
3/4 cup water
1/2 cup egg substitute
1/2 cup unsweetened applesauce

Steps:

  • In a bowl, combine the first six ingredients. In another bowl, combine corn, water, egg substitute and applesauce; mix well. Stir in dry ingredients just until moistened. Fill muffin cups coated with cooking spray two-thirds full. Bake at 350° for 17-20 minutes or until muffins test done. Cool for 5 minutes before removing from pans to wire racks.

1 cup all-purpose flour
1 cup cornmeal
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 egg whites
1 cup fat-free milk
1/4 cup unsweetened applesauce

Steps:

  • In a large bowl, combine the flour, cornmeal, sugar, baking powder and salt. In a small bowl, combine the egg whites, milk and applesauce. Stir into dry ingredients just until moistened. , Pour into a 9-in. square baking pan coated with cooking spray. Bake at 400° for 15-20 minutes or until a toothpick inserted in the center comes out clean. Remove from pan to wire rack. Serve warm.

1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1/4 cup sugar
2 eggs
1 cup low-fat buttermilk
1/4 cup yogurt
1 tablespoon olive oil

Steps:

  • Preheat oven to 400°F Grease a 12 cup muffin tin.
  • Whisk together cornmeal, flour, baking soda, baking powder, salt and sugar in a large bowl. Whisk together eggs, buttermilk, yogurt and oil. Pour buttermilk mixture into cornmeal mixture and stir until just combined. Fill each muffin cup 2/3 full with batter.
  • Bake for 15-18 minutes, until tester just comes out clean. Do not overbake!
  • Turn out to cool on a wire rack.
  • Eat with chili or butter and honey. Or both.

We love cornbread, but a lot of recipes are either too dry or too high in fat for my liking. I played around with one of our favorite recipes to try and come up with a balance between the two. I was pleased with the results. The family loves the cornbread, and I can eat it guilt free!

1 cup cornmeal
1/4 cup sugar (more or less to taste)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup plain nonfat yogurt
2 eggs, beaten (or 1/2 cup egg substitute)
1/2 cup whole kernel corn, drained (optional)
1/2 cup jalapeno pepper, chopped (optional)

Steps:

  • Preheat oven to 400 degrees F.
  • In a medium mixing bowl, combine dry ingredients.
  • Stir in yogurt and eggs. If using stir in corn and jalapeno peppers.
  • Pour into 8 inch square pan sprayed with cooking spray (or use a cast iron skillet).
  • Bake for approximately 20 minutes.
  • Best served warm.

Low Fat, Sugar Free Cornbread image

This is a low cal modification of my mom's cornbread recipe. Using Splenda instead of sugar and "I Can't Believe It's Not Butter Lite" instead of butter or oil, makes a big difference in calories but not in taste. I just made some to serve with chili and it was great!
