Sweet Italian sausage and white beans work double duty here to keep the number of ingredients low. The sausage is filled with spices and aromatics that punch up the flavor of the soup, so you don't have to add any extra seasonings. The white beans not only infuse the dish with tons of satisfying protein--they become super creamy when they are pureed at the end, so no cream is necessary.

1 pound sweet Italian pork sausage, casings removed
1 medium yellow onion, chopped
One 32-ounce carton chicken broth
Three 15.5-ounce cans white beans, drained and rinsed
Kosher salt

Steps:

  • Heat a large Dutch oven or pot over medium-high heat. Add the sausage and break it up into small pieces with a wooden spoon, making sure the pieces sit in a single layer (if they don't, remove some and work in batches). Cook, stirring several times, until no longer pink on the outside and golden brown in places, about 10 minutes. Transfer to a plate with a slotted spoon.
  • Add the onions to the pot. If there are lots of browned bits on the bottom that look like they might burn, add 2 tablespoons of broth and scrape the bottom with a wooden spoon. Cook the onions, stirring frequently and adding more broth to the bottom of the pot as needed, until completely tender, about 10 minutes. Add the white beans and remaining broth and bring to a boil. Reduce to a simmer and cook over medium heat until the beans split open, about 10 minutes.
  • Use an immersion blender to puree the soup in the pot until completely smooth or carefully transfer the hot liquid to a blender to puree. Season the soup with salt. Serve the soup topped with the sausage.

1/2 strip bacon, diced
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
2 shallots, chopped
2 15 -ounce cans cannellini or other white beans, drained and rinsed
6 leaves fresh sage, chopped
4 cloves garlic, chopped
3 cups low-sodium chicken broth
1/2 cup heavy cream
1/4 teaspoon cayenne pepper
Kosher salt
3 slices crusty bread, toasted
2 ounces goat cheese, at room temperature
Freshly ground black pepper

Steps:

  • Fry the bacon in a medium saucepan over medium heat until halfway done, 3 minutes. Add the olive oil, butter and shallots and saute until soft, 6 minutes. Add the beans, sage, garlic and broth, bring to a simmer and cook 15 more minutes.
  • Transfer the mixture to a blender or food processor in three batches and puree until smooth. (Be careful-hot liquids are prone to explode when whipped!) Return the pureed soup to the pan and add the cream, cayenne, and salt to taste. Keep warm.
  • Smear the toasted bread generously with goat cheese and cut into 3/4-inch croutons. To serve, ladle the soup into shot glasses, top with goat cheese croutons and sprinkle with black pepper.

1 large onion, diced
3 stalks celery, diced
Kosher salt
2 15.5-ounce cans cannellini beans, drained and rinsed
4 cups low-sodium chicken broth
1 12-ounce jar roasted red peppers, drained and coarsely chopped
5 cloves garlic (4 minced; 1 whole)
1/4 cup chopped fresh cilantro
1 bunch Swiss chard, leaves roughly chopped
Freshly ground pepper
4 thick slices sourdough bread
Lemon wedges, for serving (optional)

Steps:

  • Heat 1 tablespoon olive oil in a medium pot over medium-high heat. Add the onion, celery and 1 1/2 teaspoons salt and cook until the vegetables are golden brown, about 5 minutes. Add the beans and broth, bring to a simmer and cook 15 minutes.
  • Meanwhile, heat the remaining 3 tablespoons olive oil in a large skillet over medium heat. Add the roasted peppers, minced garlic and cilantro and cook until the garlic is soft, about 2 minutes. Stir in the chard, cover and cook until wilted, 1 to 2 minutes. Scrape the contents of the skillet into the pot and simmer until heated through, about 5 minutes. Season with salt and pepper.
  • Toast the bread, then rub with the whole garlic clove. Serve the soup with the bread and lemon wedges, if desired.

1/2 cup dry white wine
2 sprigs fresh rosemary, each about 6 inches long
2 sprigs fresh thyme
2 1/2 cups low-sodium chicken or vegetable broth
Two 15-ounce cans of cannellini or other white beans, strained and rinsed
1 small shallot, peeled, trimmed and halved
1 small garlic clove, peeled, trimmed and halved
1 tablespoon olive oil
1 tablespoon unsalted butter
Kosher salt and freshly ground black pepper
4 slices crusty sourdough bread (each about 1-inch thick; 8 ounces total),
3/4 cup shredded part-skim mozzarella cheese
2 plum tomatoes, seeded and chopped (about 1 cup)
1/4 cup grated Parmesan

Steps:

  • Position a rack about 4 inches from the broiler heat source, and preheat. Bring the wine, rosemary, thyme and 2 cups of the chicken broth to a boil in a covered medium saucepan over high heat. Reduce to a bare simmer.
  • Puree the beans, shallots, garlic, oil, butter, remaining 1/2 cup chicken broth, 1/2 teaspoon salt, a few grinds of pepper and 1/2 cup of the simmering broth in a blender until completely smooth and emulsified, about 2 minutes.
  • Meanwhile, lay the bread slices on a rimmed baking sheet, and top evenly with the mozzarella. Broil until the tops are browned and bubbling, 1 to 2 minutes; remove from the oven. Divide the tomatoes evenly among the toasts, and top with the Parmesan.
  • Remove the herb sprigs from the simmering broth; set aside. Whisk the bean puree into the broth, and return it to a gentle boil. Ladle the soup into bowls, and garnish with the reserved herb sprigs and a few grinds of black pepper. Serve with the cheese toasts.

2 tablespoons olive oil
1 onion, finely chopped
2 carrots, finely chopped
1 clove garlic, minced
4 cups chicken broth
2 (16-ounce) cans white cannellini beans, drained
4 fresh sage leaves, cut into chiffonade
8 ounces escarole or romaine lettuce, cut into chiffonade
1/4 cup chopped Italian parsley
salt and pepper

Steps:

  • Heat olive oil in a 4 quart saucepan. Add onion and carrots, cover and simmer 5 minutes or until tender. If vegetables stick to saucepan, add some water, cover and continue to simmer.
  • Add the garlic and saute for a moment. Add 1 of the cans of beans and mash with a potato masher. Add the other can of beans along with the broth and bring to a simmer with the sage. Simmer 10 minutes or until as thick as you like it. If too thick, add more water; if too thin, boil down until some of the liquid has evaporated.
  • Stir the escarole or romaine lettuce into the pot, cover and simmer 5 minutes or until lettuce is tender. Uncover, add parsley and adjust seasoning. Serve with bread and salad for a complete meal.

1 bunch swiss chard, stems removed chopped into bite sized strips
2 (15 1/2 ounce) cans cannellini beans, drained and rinsed
1 fennel bulb, stems and core discarded, bulb chopped
1 medium onion, diced
4 garlic cloves, minced
5 slices prosciutto, diced
1 (49 ounce) can low sodium chicken broth
1 (15 ounce) can low sodium chicken broth
3 tablespoons sun-dried tomatoes, minced
1 (12 ounce) jar roasted red peppers, drained and coarsely chopped
1/4 teaspoon nutmeg
1/4 teaspoon crushed red pepper flakes
1/2 cup gluten free pasta shells (I use quinoa)
1/2 chicken bouillon cube, dissolved in
1 cup water
1/2 lemon, juice of
5 fresh sage leaves, minced
5 fresh basil leaves, chopped
salt and pepper, to taste
1 tablespoon olive oil
parmesan cheese, rind (optional)

Steps:

  • Over medium heat, sautee the onions and fennel until tender, approximately 10 minutes.
  • Add garlic, prociutto and red pepper flakes and sautee for approximately 5 minutes.
  • Add beans, chicken stock and bouillon dissolved in water to the pan and bring to a low boil.
  • Add pasta and cook al dente according to package (approximately 6 minutes).
  • When pasta has about 2 minutes to go, add roasted red peppers, sun dried tomatoes, swiss chard, sage, basil and nutmeg. Cook until chard is wilted but still a nice bright green.
  • Add the juice of 1/2 lemon and salt and pepper to taste.
  • Serve piping hot with grated parmesan.

1 tablespoon olive oil
1 large onion, chopped
3 large carrots, chopped medium
3 stalks celery, chopped
1 sprig fresh rosemary
4 sprigs fresh thyme
16 ounces dried white beans
8 cups chicken stock
pepper
1 teaspoon fresh rosemary, chopped
2 cups butternut squash, diced
4 garlic cloves, sliced
salt & pepper
4 cups swiss chard leaves, chopped
1 -2 cup chicken stock for thinning soup
1/2 cup sour cream
1 cup crouton

Steps:

  • In 1T. olive oil, saute onion, celery and carrot until softened try not to let brown. Add in
  • white beans, rosemary sprig, thyme sprig, chicken stock and pepper. Bring pressure to 15lbs and cook for 35 minutes. Beans should be almost soft but still have a small bite to them.
  • Using the quick-release, cold water method, open lid, add in butternut squash, garlic, fresh rosemary minced, garlic and salt & pepper to taste. Place lid back on and pressure cook for 10 more minutes with a natural release method. Stir in chard greens just before serving and use remaining chicken stock to thin soup if too thick.
  • Test to make sure beans are completely soft. Pull out stems of rosemary and thyme. Add salt to correct seasonings. Serve with a dollop of sour cream and croutons.

1/2 pound (225 g) Swiss chard or kale, trimmed
1 teaspoon coarse salt, plus additional to taste
2 flat anchovy fillets
1/4 teaspoon fresh rosemary leaves or dried
1/3 cup (80 ml) olive oil
2 medium garlic cloves, smashed and peeled
1 cup (225 g) cooked small white beans or drained and rinsed canned beans
4 cups (1 liter) chicken stock [or Garlic Broth for a meatless soup]
freshly ground black pepper, to taste
1/2 cup (60 g) small shell macaroni
freshly grated Parmesan cheese, for serving

Steps:

  • In a medium saucepan, cook the chard with 1/2 cup (125 ml) water and the salt over medium heat until tender. Drain the chard, reserving any liquid that remains. Coarsely chop the chard.
  • Very finely chop anchovies together with the rosemary.
  • In a medium saucepan, stir together the oil and garlic over medium-high heat. Cook, stirring frequently, until the garlic is pale gold, about 10 minutes. Stir in the anchovies and rosemary. Cook, stirring for 1 minute. Discard the garlic. Stir in the chard and cook for 2 to 3 minutes, stirring to thoroughly coat it with the oil. Stir in the beans. Cook for 3 minutes.
  • Stir in the reserved cooking liquid and the stock. Season with salt and pepper. Bring to a boil and stir in the macaroni. Boil for 6 minutes, or until the pasta is tender. Adjust the seasoning, if necessary.
  • Pass Parmesan cheese at the table.

White Bean Soup With Swiss Chard image

This is a nice, healthy, pleasantly spicy and warming stew like soup. This can also be done in a crock pot but will take all day. The cooking time does not reflect the overnight soaking of the beans. This recipe can also be made with spinach but I don't think it would be as good.

8 ounces great northern beans
3 tablespoons olive oil
2 large onions, chopped (red & white)
2 -3 carrots, peeled and finely chopped
1/2 lb red swiss chard, ribs and leaves coarsely chopped
5 cups vegetable broth
3 garlic cloves, minced
1 bay leaf
1 teaspoon fresh coarse ground black pepper
3 tablespoons fresh parsley, chopped

Steps:

  • Place the beans in a large pot and cover with water. Let them soak overnight.
  • The next day, drain the beans, reserving 2 cups of liquid.
  • In a large pot, heat the oil. Add the onions and saute until tender, about 5 minutes. Add the carrots and saute for an additional 3 minutes. Add the chard and cook until wilted, about 3 minutes. Add the broth, reserved bean liquid, beans, garlic and bay leaf. Partially cover and simmer for 1-2 hours, until beans are tender.
  • Remove bay leaf. Puree half of the soup in a blender. Return to pot with remaining soup. Add salt, pepper and parsley.

2 slices smoked bacon, diced fine
1 medium onion, diced
1 clove garlic, minced
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon red pepper flakes

1 (15 ounce) can small white beans, rinsed and drained
1 bunch red swiss chard or 1 bunch white swiss chard
1/4 cup dried tiny pasta, such as pastina
5 -6 large fresh sage leaves, minced
2 teaspoons olive oil

Steps:

  • Combine bacon, onion, garlic, nutmeg and red pepper flakes in a 4-qt saucepan; cook over medium heat, stirring frequently, until onion is softened, 4 to 5 minutes.
  • Add chicken broth and white beans, increase heat to high; cook until mixture comes to a boil.
  • Cut chard stems into 3/4-inch slices.
  • Cut leaves in half lengthwise, stack, and cut crosswise into 1-inch ribbons.
  • Add chard stems and pasta when soup boils.
  • Reduce heat to medium-low; simmer 7 minutes.
  • Add chard leaves; simmer until wilted, 3 to 4 minutes.
  • Add sage; remove from heat.
