¾ cup fat free sour cream
4 egg whites
¼ cup chopped walnuts
⅓ cup raisins
2 teaspoons baking powder
2 teaspoons baking soda
6 very ripe bananas, mashed
2 tablespoons reduced fat margarine
1 tablespoon vanilla extract
1 teaspoon salt
⅔ cup packed light brown sugar
4 cups unbleached all-purpose flour

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly spray two 8x4x2 inch loaf pans with a non-stick cooking spray.
  • Combine the fat free sour cream, egg whites, vanilla, bananas and margarine and mix on medium speed of electric mixer until smooth, creamy and well blended.
  • Sift the flour, baking powder, baking soda, salt and light brown sugar into the banana mixture. Stir with a spoon until combined. Add more flour if necessary until a thick and rather resistant dough is formed. Fold in the optional nuts and raisins. Mix for 1 minute on the low speed of an electric mixer. Divide dough evenly between the two loaf pans.
  • Bake at 375 degrees F (190 degrees C) until golden and the center tests done. Remove breads from pans immediately and allow to cool on a rack before slicing.

1 ½ cups all-purpose flour
1 cup white sugar
1 teaspoon baking soda
1 teaspoon salt
1 egg
½ cup light mayonnaise
3 ripe bananas, mashed
1 teaspoon vanilla extract

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan. Whisk the flour, sugar, baking soda, and salt together in a bowl.
  • Beat the egg in a mixing bowl. Whisk in the mayonnaise, bananas, and vanilla extract until evenly mixed. Stir in the flour mixture until no dry lumps remain. Pour the batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

125 g whole wheat flour (1 cup)
1 teaspoon baking powder
1 teaspoon cinnamon
1 tablespoon sugar (or splenda)
2 large bananas, mashed
2 tablespoons applesauce
1 egg, beaten
50 g cashew nuts, chopped (or any other nut for that matter)

Steps:

  • In a big bowl combine flour, baking powder, sugar and cinnamon.
  • In a second bowl puree the banana and mix with the applesauce and egg.
  • Add wet ingredients to the dry and stir until just combined.
  • Fold in the nuts.
  • Fill dough into a prepared mini loaf pan and bake in the preheated oven at 180°C/350°F for 30-45 minutes or until skewer inserted in the centre comes out clean. You might need to cover the bread in order to prevent overbrowning. Check for this after 25 minutes.

¼ cup applesauce
⅓ cup nonfat milk
1 tablespoon vegetable oil
1 tablespoon vanilla extract
1 ¾ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
⅓ cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Spray a bread pan with non-stick cooking spray, and lightly dust with flour.
  • In a large bowl, beat eggs and sugar in a large bowl until light and fluffy, about 5 minutes. Beat in bananas, applesauce, milk, oil and vanilla.
  • In a separate bowl, sift together flour, baking powder, baking soda and salt. Stir flour mixture into banana mixture, mixing just until blended. Fold in walnuts. Pour batter into prepared pan.
  • Bake in preheated pan until golden and a toothpick inserted into center of the loaf comes out clean, about 1 hour. Turn bread out onto a wire rack and let cool.

1/2 cup chopped pecans (walnuts for substitute)
2 eggs
2 mashed bananas
1 small chopped banana
1/2 cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8x4 inch loaf pans. Set aside.
  • Sift together flour, baking powder, baking soda, salt, and Splenda. Stir in nuts, eggs, mashed bananas, oil, and vanilla extract. Before you pour into pans, chop your last banana into mini chunks, and lightly fold into mixture. Pour into prepared pans. Bake for 45 to 55 minutes. I have made a wonderful Hawaiian Banana Nut Bread for years and it's always moist and delicious, but it's full of fat. We found that my husband really needed to change his diet to lower his fat intake, but he loves good food. So I have set out to try and change some of his favorite recipes to fit his new diet requirements. This is one of the first and it was a success.

3 cups whole wheat flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 1/2 cups Splenda granular
3/4 cup egg substitute
2 tablespoons canola oil
1/2 cup applesauce
2 cups mashed bananas
20 ounces crushed pineapple in juice
2 teaspoons vanilla extract
1/2 cup nuts

Steps:

  • 1. Combine flour, salt, soda and cinnamon; set aside.
  • 2. Combine remaining ingredients (except nuts) and add to dry ingredients.
  • 3. Fold nuts into batter and spoon into 2 loaf pans that have been prepped with cooking spray.
  • 4. Cook for 65 minute in preheather 350 degree oven.
  • 5. Let cool for 10 minutes prior to removing from pans.

I could not find a banana bread recipe that I like, so I ran to my kitchen and came up with this. It uses no butter, and less sugar than typical banana breads making it more healthy, and tastier if you ask me! I ended up with 1 9X5 loaf pan and 6 regular sized muffins.

3 1/2 cups mashed bananas
3/4 cup brown sugar
2 eggs, seperated
1 cup walnut pieces
2 2/3 cups flour
1 1/2 teaspoons baking soda
1 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • Preheat your oven to 350 F
  • Seperate your eggs into two bowls. Add your salt to the egg whites and beat until you get stiff peaks, set aside.
  • Add your sugar, and banana mush into the bowl with your egg yolks, mix well until sugar is dissolved. Put in your vanilla extract, mix slightly. Shift in your flour and baking soda. Mix well until the flour is no longer visible.
  • Fold in your whipped egg whites gently, it does not have to be completely mixed. Do not over mix!
  • Lastly quickly fold in your chopped walnuts (or any other nut you like).
  • Grease you pans and pour in your mix. A 9X5 loaf pan or 24 muffin tins filled half full work best.
  • Bake @ 350. Muffins take 45-55 minutes, loaf pan takes 60-75 minutes. Your banana bread is done when a toothpick can be inserted and comes out relatively clean, a little stickyness is okay!
