This fast and easy baked salmon with lemon mustard dill sauce recipe makes a great healthy weeknight meal - or a delicious dish to impress guests!

4 tablespoons fresh lemon juice
1 1/2 tablespoons extra virgin olive oil
4 tablespoons chopped fresh dill
4 salmon fillets, patted dry with paper towels
3 tablespoons Dijon mustard
1/4 cup plain whole milk yogurt
3 tablespoons finely chopped fresh dill
2 tablespoons fresh lemon juice

Steps:

  • Combine all of the marinade ingredients in a baking dish and mix well. Add the salmon, turning to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 6 hours.
  • Combine all of the sauce ingredients in a small bowl and mix well. Cover and refrigerate.
  • Preheat oven to 400 degrees F.
  • Place salmon (skin side down) in a foil-lined baking dish with sides. Bake 10 to 15 minutes, or until cooked through.
  • Top cooked salmon with sauce and salt and pepper to taste; serve with brown rice and the vegetable of your choice.

A creamy, whole grain mustard sauce adds a tangy taste to this simple, baked salmon with mustard sauce.

1 tablespoons olive oil
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 tablespoons butter
2 tablespoons finely chopped shallot
1/4 cup champagne vinegar
1/2 cup dry white wine
1/3 cup heavy cream
1/4 teaspoon salt
1/8 teaspoon white pepper
2 tablespoons whole grain mustard
Chopped parsley for garnish

Steps:

  • Preheat the oven to 425°F and line a small baking sheet with foil.
  • Pat salmon dry with paper towels, brush with olive oil and season with salt and pepper.
  • Place salmon on baking sheet, skin side down and transfer to the oven.
  • Bake 4-6 minutes per 1/2-inch thickness or until the internal temperature of the salmon reaches 140°F on an instant-read thermometer, or to your personal taste preference. (we like salmon medium-rare and I baked ours until it reached 130°F, about 4 minutes per half inch of thickness).
  • Move salmon to a platter and tent with foil and let rest for 5-10 minutes.
  • In a small skillet set over medium heat, add the butter to the pan and when melted, sauté the shallot until translucent. Add the vinegar, white winer and cream. Simmer until reduced and thickened, about 10-12 minutes. Stir in the salt and pepper.
  • Remove from heat and whisk in the mustard.
  • To serve, Plate the salmon and spoon sauce over each serving.

This salmon with cream sauce recipe has a simple, quick lemon cream sauce that comes together as the fish is frying. Dinner is on the table in 20 minutes!

3 Tbsp lemon juice
1/4 cup chicken broth, fish stock, clam juice, white wine, or water
2/3 cup heavy cream
1 tablespoon extra virgin olive oil
Salt
Freshly ground black pepper
1 1/2 pounds salmon fillets
Parsley for garnish

Steps:

  • Cook the sauce: Pour the lemon juice, broth, and cream into a small pot and bring to a simmer. Immediately lower the heat to low, cover the pot, and simmer gently for 10 minutes. Add salt and pepper to taste. The last minute or two, uncover the pot and increase the heat to high to reduce the sauce a bit.
  • Prep the salmon: While the sauce is cooking, check the salmon for any stray scales (if skin-on). Use needle nose pliers to remove any pin bones.
  • Cook the salmon fillets: Add the oil to a sauté pan large enough to fit the fillets in one layer. Heat the pan on high and let the pan heat up for 90 seconds. Lay the fillets in the hot pan and lower the heat to medium. Let the fillets sizzle steadily for 3 to 5 minutes, depending on how thick the fish is. A 1-inch-thick fillet will take about 5 minutes. With a metal spatula, gently turn the fillets over. Cook for another 1 to 5 minutes, depending on how well-done you like your fish. We like our salmon a little rare in the center, so we cook the second side of a 1-inch fillet about 3 minutes.
  • Pour lemon cream sauce over the salmon: Place the salmon fillets on plates and pour lemon cream sauce over them and sprinkle with chopped parsley to serve. If you've crisped up the skin, serve the fillets skin-side up so they stay crispy. Otherwise, serve the fillets skin-side down.

1 teaspoon butter
4 salmon fillets
1 cup pouring cream
1/2 cup milk
4 teaspoons cornstarch
1/4 cup water
1/2 lemon, juice of and finely grated zest
1 tablespoon Dijon mustard (ensure gluten-free if required)
salt and white pepper, to taste
2 teaspoons parsley, finely chopped

Steps:

  • Heat the oil and butter in a large frypan or skillet over a medium heat.
  • Add the salmon and cook 3-4 minutes on each side, or until barely cooked through.
  • Meanwhile, Mix the cornstarch and water to a paste, set aside.
  • Using a small saucepan, bring the cream and the milk to the boil. Thicken with some or all of the cornstarch paste, whisking constantly. Stir in the lemon juice, finely grated zest, mustard and season with salt and pepper.
  • Serve the salmon drizzled with the lemon mustard sauce. Sprinkle with parsley to garnish.

2 (6- to 8-ounce) skin-on salmon fillets, each about 1-inch thick
1/2 teaspoon kosher salt (such as Diamond Crystal), plus more to taste
Freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 tablespoon Dijon mustard
Lemon wedges, for serving

Steps:

  • Position one oven rack 6 inches from the broiler heat source then heat the broiler. Season the salmon fillets all over with ½ teaspoon salt and a couple of grinds of pepper and place them on an aluminum foil-lined sheet pan, skin side down.
  • In a small bowl, whisk the oil and mustard until well mixed. Brush the tops and sides of the salmon with this mustard mixture.
  • Broil until the salmon is opaque with a deep brown crust, about 6 to 8 minutes for medium-rare. (The center of the fillets will be dark pink, if you pierce one with a paring knife and take a look.) If your fillets are thinner, reduce cooking time by 1 to 2 minutes. If you prefer more well-done fish, add 1 or 2 minutes to the cooking time.
  • Squeeze a lemon wedge all over the cooked salmon fillets, then serve salmon with more lemon wedges on the side.

1 teaspoon onion salt

DILL SAUCE:
1/3 cup sour cream
1/3 cup mayonnaise
1 tablespoon finely chopped onion
1 teaspoon lemon juice
1 teaspoon prepared horseradish
