Low-Carb Bacon Spinach Egg Cups image

Low-carb egg, and cheese veggie muffins perfect for on the go. You can make them ahead and reheat in the microwave a few seconds. A great change from the usual low-carb bacon and eggs!

cooking spray
4 slices thick-cut bacon, diced
½ (12 ounce) package frozen chopped spinach, thawed and drained
4 mushrooms, chopped
¼ green bell pepper, chopped
2 slices onion, chopped
1 pinch salt and ground black pepper to taste
6 eggs
1 tablespoon heavy whipping cream
1 ¼ cups shredded Colby-Jack cheese, divided
½ teaspoon salt
¼ teaspoon ground black pepper
1 pinch onion powder
1 pinch garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray 12 muffin cups with cooking spray.
  • Cook and stir bacon in a skillet over medium-high heat until crisp, about 10 minutes. Transfer bacon to a bowl, reserving bacon grease in the skillet.
  • Combine spinach, mushrooms, green bell pepper, onion, salt, and ground black pepper to taste in the skillet with bacon grease; cook and stir until softened, about 5 minutes. Transfer vegetable mixture to a bowl and place in the freezer to cool, about 5 minutes.
  • Whisk eggs and cream together in a bowl; stir in 1 cup Colby-Jack cheese, 1/2 teaspoon salt, 1/4 teaspoon ground black pepper, onion powder, and garlic powder. Add cooled vegetables and bacon to egg mixture and mix gently.
  • Scoop 1/4 cup egg mixture into each muffin cup; top each with remaining Colby-Jack cheese.
  • Bake in the preheated oven until egg cups are set, about 20 minutes.

These Low Carb Bacon Egg Cups are keto and Whole30 Friendly! Plus they taste delicious! Grab our make ahead of time recipe and enjoy all week!

Number Of Ingredients 8

4 slices bacon, chopped
1/4 cup onion, chopped
1 cup fresh button mushrooms, chopped
2 cups baby spinach, chopped
10 large eggs
1/4 cup 2% milk
1/3 cup cheddar cheese, shredded (mild or sharp depending on your taste)
salt and pepper to taste

Steps:

  • In a skillet, place bacon and cook on medium heat until it browns. Then, drain the fat and remove the bacon.
  • Chop the bacon, onions, mushrooms and spinach.
  • Then add onions to the skillet for 1-2 minutes until soft.
  • Add in your mushrooms and let them cook 1-3 minutes until their tender. Then add in spinach for about a minute. Then add your bacon and remove from heat.
  • Spray a muffin pan with non-stick spray.
  • Evenly distribute the bacon & vegetables in the skillet into the muffin cup. It should be about 1/2 full.
  • Then, in a separate bowl whisk your eggs, cheese, and milk together. Season with salt & pepper.
  • Pour that mixture into each muffin cup until each is about full - leaving just enough room for them to rise.
  • Bake at 375 for about 20-25 minutes or until the egg cups have risen and are slightly brown.
  • Then remove from the pan and enjoy warm!

2 Eggs
2/3 Cup Egg Whites (I use the All Whites Liquid Eggs)
2 Cups Fresh Spinach ,packed somewhat firm
3 Slices Swiss Cheese
5 Slices Bacon
1/4 Cup Mushrooms, sliced
2 Green Onion Stems, diced
2 Tablespoons Parmesan Cheese, Shredded
1/2 Teaspoon Mrs Dash
Fresh Ground Black Pepper

Steps:

  • 1. Preheat oven to 375 degrees 2. Cook Bacon in a frying pan, then remove from pan. Reserve 1 Tablespoon of Bacon fat in pan 3. Add Spinach and Green Onions to the frying pan and cook just until the Spinach has wilted 4. Spray a 1 Quart Baking Dish with Non Stick Cooking Spray and layer the Spinach and Onion on the bottom of the pan 5. Next layer the Sliced Mushrooms on top of the Spinach layer 6. The Swiss Cheese comes next. Layer it right on top of the Mushrooms. You may have to cut the slices to fit in a single layer depending on the shape of your Baking Dish 7. In a small mixing bowl, combine the Eggs, Egg Whites, Mrs Dash and Black Pepper, then pour over the Cheese layer in your Baking Dish 8. Now cut your Bacon into bite size pieces and layer on top of the Egg mixture 9. Finally, sprinkle the Parmesan Cheese on top and add another dash of Freshly Ground Black Pepper 10. Bake for 25 -35 minutes, until fluffy and just starting to turn a slight golden brown on the edges Serve this dish with a side of Sour Cream. This Recipe serves two. Recipe by: Hot Dish Homemaker

  • Preheat oven to 400 degrees F. Add bacon slices to muffin pan (we’re only using 10 of the muffin cups) and wrap bacon in a circle around the edges of the tin. The bacon will likely overlap a bit, but that’s okay. Bake for 15 minutes.
  • While the bacon is cooking, you can saute your veggies: In a large skillet, add in olive oil, garlic and mushrooms; saute for 5 minutes or until mushrooms cook down and begin to turn a slight golden brown. Once that happens, add in spinach and cook for another 2 minutes or until spinach wilts. Set aside.
  • When bacon is done cooking, remove from oven and rearrange the slices. You can drain some of the grease if you’d like but it I like to keep it in because it helps the muffins not stick to the pan. Most likely they will have shrunk up during baking; simply pull the slices back with a fork towards the edges so that’s there’s enough room to add in the veggies and egg mixture.
