LONDON BROIL WITH CRISPY POTATOES AND PEPPERS
This tender steak, rubbed with a pinch of paprika, is matched with spuds that are crisp outside and tender inside.

- Heat broiler, with rack set 4 inches from heat. Line a broiler pan with aluminum foil; set aside.
- In a large skillet, heat cup oil over medium. Add potatoes and cook, turning frequently with a thin metal spatula, until golden and crisp-tender, 15 to 20 minutes. Add peppers; season with salt and pepper. Continue to cook, tossing occasionally, until vegetables are tender, about 10 minutes more.
- Meanwhile, rub beef with remaining teaspoon oil; season with paprika, salt, and pepper. Broil, turning once, until medium-rare (an instant-read thermometer inserted in thickest part should register 130 degrees), 10 to 15 minutes. Transfer to a plate, cover loosely with aluminum foil, and set aside to rest, 5 to 10 minutes. Thinly slice beef against the grain, and serve with vegetables.

- Place the roast in a roasting pan, pour stewed tomatoes over it, and season with garlic salt.

Steps:
- Preheat broiler.
- Cut cheese into 1/2-inch-thick slices and divide evenly among 4 small flameproof baking dishes (or arrange in 1 layer in a large one). Sprinkle oregano and pepper over cheese.
- Stir together roasted peppers, olives, and oil in a small bowl, then spoon mixture over and around cheese.
- Broil 2 to 4 inches from heat until edges of cheese are golden, about 5 minutes.

Steps:
- In a small bowl combine: red wine (Shiraz), water, olive oil, chopped garlic, Salt, Whole pepper corns, Orange rind, and Bay leaves.
- Season meat with 1 tsp salt, 1tsp pepper and 1 tsp garlic powder.
- Place in shallow pan, cover with marinade and marinate for 1-3 hours.
- For medium rare, grill on a medium heat grill for 5 minutes on each side. For medium doneness, grill over medium heat for 7 minutes on each side.
- While meat is grilling, heat a small sauté pan to medium heat, and melt butter. Sauté mushrooms and onions 2-3 minutes.
- Add Roasted Peppers and continue to sauté for another minute or so, then cover and remove from heat.
- When meat comes off of the grill, allow it to rest for 5-10 minutes before slicing.
- When ready to serve, add feta cheese to the sauté topping mixture, toss and serve over meat slices.
