LOADED ITALIAN BREAD
Another one of those recipes that you can change up to fit your likes -- including using a different bread. It's almost a meal in itself but goes well with pasta and beef and it's definitely NOT low calorie. I found the recipe in a community cookbook a few years ago.

Steps:
- In a medium bowl, mix all the ingredients together EXCEPT the bread.
- Slice the bread in half horizontally and spread the mixture evenly over both sides.
- Put the bread spread side up on a cookie sheet and broil until edges are browned and cheese is melted being careful not to burn it.

- In a large bowl, dissolve yeast in warm water. Add the sugar, salt and 3 cups flour. Beat on medium speed for 3 minutes. Stir in remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a floured surface; divide in half. Shape each portion into a loaf. Place each loaf seam side down on a greased baking sheet. Cover and let rise until doubled, about 30 minutes. , Meanwhile, preheat oven to 400°. With a sharp knife, make 4 shallow slashes across top of each loaf. Bake 20-25 minutes or until golden brown. Remove from pans to wire racks to cool.

- In a large mixing bowl, combine all ingredients (except for the bread) using a spatula or wooden spoon.
- When everything is mixed together really well, spread the mixture evenly over the bread and bake at 325-degrees for about 20-25 minutes or until cheese is melted and bread is slightly crispy. Cut up into individual slices and serve.
- When we made this we froze half of it before baking and saved it for later. It heats up GREAT after it has been frozen!

- In a large bowl or bowl of a stand mixer, combine yeast, sugar and warm water. Let stand 5 to 10 minutes or until yeast is foamy.
- Add 2 cups flour, olive oil and salt. Stir with a wooden spoon or with a dough hook on low speed until a shaggy dough forms. - Shape dough into a ball; place in an oiled bowl and turn to coat. Cover bowl with plastic wrap and let dough rise 1 hour until doubled.
- Heat oven to 400°F. Line a baking sheet with parchment paper, a silicone mat or lightly grease the surface with oil or cooking spray. On a lightly floured surface, punch down dough, then carefully shape into a batard/torpedo about 12 inches long. Transfer to prepared baking sheet. Cover with a tea towel and let rise another 20 to 30 minutes until puffy.
